½ Kg Potatoes
½ T Chicken Powder (optional)
1/3 C Cornstarch
½ T Salt
6-8 T Water
1 t Oil
COFFEE BUNS
110 g Water
Mix all ingredients;
7 g Yeast
Proof for 15 minutes;
100 g Milk Add 20 g butter then knead until smooth
35 g Sugar or until the butter is absorbed;
Knead for 7 minutes;
7 g Salt
Proof for 1 hour;
350 g APF Shape into equal parts then add 1
20 g Butter Tablespoon of butter each part;
Turn into balls;
Proof for 1 hour; and,
3 T Coffee Powder Pour the coffee mixture.
2 T Water
60 g Butter
60 g Sugar
1 Egg
70 g APF
170ºC
12-14 minutes
