CHAPTER 1

THE PROBLEM AND ITS BACKGROUND

INTRODUCTION

This study was all about testing the acceptability of Banggies Dumplings. This product

is a combination of the words Bangus, veggies, and dumplings. Bangus or Milkfish is a

medium active silvery freshwater fish, veggies or vegetable are plant or part of a plant that we

consume to give us a source of vitamins and minerals, and to complete the formula are the

dumplings, which is a dish that consists of pieces of dough wrapped around a filling.

We chose milkfish to be the highlight of our product because of its accessibility and

the nutrition that we can obtain by eating them. Our country is brimming over with different

kinds of seafoods because of our geographic setting and freshwater fishes like milkfish is one

of them. Bangus is one of the most popular seafood dishes among Filipinos due to its

inexpensive price and it is abundant not only because of its availability but also because of its

good effects on the human body.

Milkfish are an excellent source of Protein which is a vital part in our diet because it

provides us energy to our body. They are also a good source of nutrients like phosphorus,

selenium and magnesium that aids in micronutrient deficiency and vitamins like Vitamin B3,

Vitamin B6 and Vitamin B12 that serves as building blocks of a healthy body It is also

relatively high in Omega-3 fatty acids that help dilate the blood vessels of the heart and brain.

Dumplings would not be perfect if it does not have a vegetable that would complement

its taste and savory texture, and cabbage is one of the best candidates. Cabbage is a cultivated

plant eaten as vegetable, having thick green or purple leaves and has an ample supply in our

country because our climate is perfect when cultivating cabbage, it is inexpensive, and it has a

delightful taste. The nutrition that is also inside this small green vegetable is impeccable.

This leafy vegetable is a complete package because it is pack with nutrients and

vitamins that is integral for our health. It is rich with Vitamin C, Vitamin K, Manganese and

Fiber that is a major part in bodies composition. It is also a mainstay for prevention of type 2

diabetes, and it is rich in antioxidant that decreased the risk of having cardiovascular diseases.

We had come up with this idea because we had noticed that people are really into

foods that are easy to access and simple to prepare, and our product is exactly developed for

this purpose. We Filipinos also tend to stick with the influence of our neighboring countries.

The different kinds of foods and snacks from different South-East and East Asian countries

that are bordering us are becoming prevalent in our society.

The main reason that we had stick into the creation of dumplings are health and

satisfaction. We had created a product that fills the food pyramid, from the wrapper, the fish,

and the vegetable. We also want to change the bad enigma about nutritious foods having a bad

taste. We want to prove to everyone that if we want to be healthy there is always a way, all we

need is to think creatively and have dedication to create something that will feed our body and

fill our minds with the right nutrition and the perfect amount of satisfaction

BACKGROUND OF THE STUDY

Bangus is also a perfect epitome for us Filipinos because of its versatility, since there

are many ways by which it is prepared and cooked like we can provide many different

functions if we needed to. In addition to this, it also represents our ability to adapt with our

surroundings to fit and to survive. We would not call it our National Fish for no reason.

There are hundreds of varieties of cabbage, from the vibrant red cabbage to the

common white cabbage. They grow over the world and are highly versatile. Cabbage is a

leafy green, red (purple), or white (pale green) biennial plant grown as an annual vegetable

crop for its dense-leaved heads. It belongs to a plant species called Brassica oleracea, which

includes many common foods as cultivars that we all are familiar with like cauliflower,

broccoli, kale, brussels sprouts and many more. Cabbage, which is often lumped into the same

category as lettuce because of their similar appearance, is part of the cruciferous vegetable

family. The family takes its alternative name (Cruciferae, New Latin for “cross-bearing”)

from the shape of their flowers, whose four petals resemble a cross. Cruciferous vegetables

like cabbage, kale, and broccoli are notorious foe being chock-full of beneficial nutrients.

Today, China is the largest producer of cabbage, followed by India and Russia, which is the

biggest consumer of cabbage.

We don’t know for certain where cabbage appeared for the first time because many

plants belong to the family of “brassicas”, they grow around the world and today’s cabbage

descends from them. The most common theory is that The West cabbage is domesticated in

Europe some 3,000 years ago from its wild predecessors that had thick leaves that retained

water which allowed them to survive in colder places with less water. In the East, cabbage

was cultivated in North China and used since the 4,000 BC. These variants were non-heading

cabbages and were domesticated by Celts of central and west Europe. Mesopotamia also

knew about cabbages, while at the times of the Ptolemaic dynasty only then the ancient

Egyptians cultivated cabbages. Cabbage become a common food in the Egypt along with

other vegetables by the time of the early Rome. Theophrastus, which is considered “father of

botany”, mentions cabbage in his texts, so at lease as early as 4th century BC the Greeks knew

about them. The headed cabbage Greeks called “krambe” while the Romans called it

“brassica” or “olus”. Tales say that Diogenes ate nothing but cabbage and drank nothing but

water. Cabbage was considered a luxury, and many regarded it as better that all other

vegetables in Rome.

Pliny the Elder wrote about seven known variants of cabbage at that time which

include Pompeii, Cumae, and Sabellian cabbage. Except for nourishment, Ancient Egyptians

and Romans ate larger amounts of cabbage before the night of drinking which allowed them

to drink more. Cabbages were directed to be cultivated in the “Capitulare de villis”, a text that

gave rules and regulations on how to manage the lands and laws in the country during the

time of Charlemagne. The first round-headed cabbages appeared in 14th-century England.

Proof for this we find in manuscripts of that time where they appeared in illuminations and in

other texts where they were mentioned as the “food of both wealthy and poor”. Cultivated

variants of cabbage spread to Asia and Americans from Europe. It was brought to India by

colonizing traders from Portugal and it was unknown in Japan until the 18th century and the

first cabbage in America was brought by a French explorer Jacques Cartier on his third

voyage.

Around the world, cabbage is prepared in different ways. While it can be eaten raw, as

a salad, cabbage can be steamed, pickled, stewed, sautéed or braised. Bean curd and cabbage

is a staple of Chinese cooking, while the British dish bubble and squeak is made primarily

with leftover potato and boiled cabbage and eaten with cold meat. In Poland, cabbage is one

of the main food crops, and it features prominently in Polish cuisine. It is frequently eaten,

either cooked or as sauerkraut, as a side dish or as an ingredient in such dishes as bigos

(cabbage, sauerkraut, meat, and wild mushrooms, among other ingredients) golabki (stuffed

cabbage) and pierogi (filled dumplings). Other eastern European countries, such as Hungary

and Romania, also have traditional dishes that feature cabbage as a main ingredient. In India

and Ethiopia, cabbage is often included in spicy salads and braises. In the U.S, cabbage is

used primarily foe the sauerkraut and kimchi are the most popular pickled variants while the

coleslaw is one of the most popular salads.

Statement of the Problem

This study was all about testing the acceptability of Banggies Dumplings, 2019-2020.

Specifically, it ought to find the answers to the following:

1. How were the teacher/students – respondents described:

1.1 gender;

1.2 age; and

1.3 civil status?

2. What was the evaluation the respondents to the product preferences based on?

2.1 appearance and texture;

2.2 odor; and

2.3 taste?

OBJECTIVES OF THE STUDY

This study has contained objectives and they were:

1. To give a new and exciting twist to dumpling products.

2. To test the feasibility of Banggies Dumplings and if it’s going to be profitable

3. To give consumers a balanced and healthy product that they can be satisfied

4. To know the preferences of younger consumer

5. To know the full extent of the capabilities of our product

SCOPE AND DELIMINATION

SIGNIFICANCE OF THE STUDY

Students – This research study was about the importance of our product to the students. The

students themselves can be inspired to create their own product that is nutritious, tasty and

edible and serve it as snacks, it will improve them in the field of cooking, this research can

also give them an idea to build a small business that is related in making a unique product and

cooking a healthy foods that can give them a profit.

Teachers – The study that we conducted is about the significance of our Banggies Dumpling

to a teacher. We all know that dumplings that be eaten as a snack or you can pair it with rice.

Just like when you’re a teacher you have loads of works to do. And after your work, you are

going home, but there is no food in your home, so you will come up with an idea to cook

food. So, the dumplings can be your choice because it is easy to cook. It is also good for our

health because it is filled with the lettuce, mushrooms and more importantly fishes. It can also

be a good example or learning aid to the students, if they will encounter a thesis. You can also

use our dumplings as a source of income.

Future researchers –We conducted a study of our product which is Banggies Dumplings

about what is the significance to each future researcher. The future researchers can be

motivated to make great product in the future, it will help them to enhance their innovative

minds and ability to think creatively on what product they would like to defend and produce.

This research can also expand their knowledge in terms of paper works and how they deliver

the research paper when time comes. Lastly, this can serve as their pattern and guide to create

a better food to feed our society and excellent version of what we did.

Industry –the industry can use the study of our dumplings as an idea on how to make

different kinds of dumplings. Some of the companies can adapt the idea or concept and make

it an improved version, they can use our study as a guide to promote healthy food lifestyle and

improve their dumplings at the same time. Introducing this product to the industry will also

help their sales to boost higher because of a new arrival in the dumpling products. With the

increase of new dumpling arrivals and the boost of sales, our product can also help the import

an export of our country, thus improving our economy and the stock market.
