INGREDIENTS:
120 g butter, softened

120 g brown sugar
120 g plain flour
2 teaspoon baking powder
A pinch of salt
2 medium eggs
1 teaspoon vanilla extract
METHODS:
1. Preheat the oven to 170C/ 350F. Line a muffin tin with paper cases.
2. Put the butter and sugar in a bowl and beat until pale and fluffy.
3. Sift the flour, baking powder and salt into the bowl.
4. Beat the eggs and vanilla.
5. Add to the bowl.
6. Spoon the mixture into the paper cups.
7. Bake for 20 to 25 minutes until golden and firm to the touch.
8. Cool in the container for 8 to 10 minutes, then transfer into a jar.
