Matric, computer literacy, HACCP training, good understanding of pre-requisite programs, GMP Accredited, HACCP
For Supervisors, OHSA, FSSC 22000,

AUTHORITIES

Rejection of non-conforming raw materials.


Refusal of the release of non-conforming finished goods.
Authority to prevent unauthorized visitors’ access.

KEY PERFORMANCE INDICATORS

 Management of food safety management system


 Timeous reporting and close out of corrective actions and non-conformances
 Recording internal and external audit findings and ensuring timeous close out and follow up of audit findings
 Managing the completion of all inspection forms relevant to the system and procedures

DUTIES/RESPONSIBILITIES

 To manage a food safety team and organize its work


 To ensure relevant training and education of the food safety team members
 To ensure that the food safety management system is established, implemented, maintained and updated
 To report to the organization’s top management on the effectiveness and suitability of the food safety
management system
 To liaise with external parties on matters relating to food safety
 To ensure that top management‘s commitment is visible : Food safety team roles and responsibilities of
team members
 Ensure that the PRP’s are established, implemented, maintained and continually improved
 Report on the effectiveness and suitability of the PRP’s to management
 Documenting and investigating of customer complaints
 Implementation and maintenance of the glass/hard plastics register
 Verify inspection records on glass and hard plastics
 Ensure that the allergen management program is effectively implemented
 Obtain information on potential adulteration or substitution of raw materials from trade association or
government sources e.g. websites, centers, etc. or consultants or private resource centers and reporting to
top management
 Reject the use of potentially adulterated or substituted raw materials until all investigation has been
conducted and the products have been cleared
 Conduct the vulnerability risk assessment on potential fraudulent or adulterated raw materials
 Planning of internal audits

 Close out of internal/external audit findings


 Arranging audits and accompanying auditor during audit
 Ordering and liaison with suppliers, suppliers assessments
 Micro – monitoring as per micro monitoring plan
 Trending micro results
 Following up on non-conformances raised with regard to cleaning and sanitation programme
 Ensuring effectiveness of the cleaning and sanitation programme
 Ensuring that all certificates relating to chemical suppliers are up to date, have adequate information and
are filed correctly
 Management and control of all processing staff to ensure adherence to hygiene code of conduct
 Packaging: drawing up of specifications
 Controlling of all specifications
 Protective clothing: identifying needs where applicable to food safety
 Pest control and hygiene services: Implementation and maintenance of the pest control programme and
communication with the pest control contractor, Internal pest control officer
 Identifying the training needs
 Arranging and conducting training
 Implementation and maintenance of the training programme and conduct performance assessment
 Arranging medical checks
 Verification of loading inspection forms and monitoring the results to ensure completion and adequacy
 Coordinating the product recall and testing the efficiency of the recall procedure by means of annual mock
recall exercise
 Recall team member
 Ensure that the process control records are implemented
 Verify that the records are completed as per the related procedures
 Conduct a mock traceability study annually
 Food defense team member
 Routine administration of the FSMS database
 Filing all records
 Issuing of all new revisions to documents
 Controlling and implementing of document and record control procedure
 Reviewing proposed changes, approving and or rejecting them and making the amendments to the
appropriate documents
 Distributing new versions to related departments, removing copies of all obsolete documents and updating
appropriate distribution lists and associated paperwork
 Ensure that all corrective and preventive actions are recorded on the CAR Register and CAR’s are closed out
within the due date.
 Reporting of CAR summary analysis at management reviews
 Ensure that clear communication channels are established (up, down and sideways)
 To ensure that non-conformances are recorded and managed appropriately through the CAR system
 Ensure that all changes impacting food safety or quality are managed through the plant process change
control procedure
 Internal auditor
 Emergency team member
 Compile, update, maintain FSMS and procedures
 Compile agenda and minutes of management reviews
 Receiving and analyzing micro and pesticide residue results from relevant laboratories
 Maintaining the corrective action system and reporting trends to management at reviews
 Communication with Tempo
 Verification of raw material authenticity – to prevent food fraud
