Chapter 1

INTRODUCTION

Food basically is a top among human needs. Over the past few decades, there are

so many foods or snacks that have only small value to nutritional health benefits to our

body. Some people was careless of snacking or eating foods, because they do not know or

looking what is the nutritional benefits of eating like candies, junk foods and others that

can lead to the following health risks like diabetes, high blood, urinary tract infection,

cancer and other illnesses. Nutritional foods may help our health to become more active,

strong and to prevent any disease or illnesses that may harm to our body. Based also the

study of Zahra Bahadoran, Parvin Mimiran, and Fereidoun Azizi (Tabriz University of

Medical Science) 2016 Fast food consumption and out-of- home eating behavior is a main

risk factor for lower diet quality, higher calorie and fat intake and lower micronutrients

density of diet. Frequent consumption of fast foods is one of the main reasons for rising

trends of overweight and obesity, cardio vascular disease, type 2 diabetes and other

metabolic abnormalities. Higher availability of fast food services is associated with higher

mortality and hospital admission rates for acute coronary heart disease as well as higher

risk of overweight and obesity.

Empanada is made by folding a dough or bread patty around stuffing. The stuffing

may either meats, vegetables, or even fruits. Empanada is very popular as a snack item,

especially on any occasion like fiestas, anniversaries, birthdays, and many more. It is very

low budget cost snack and easy to prepare.


The Jackfruit (Artocarpusheteropylla) commonly called “Langka or Nangka” is a

species tree in the Artocarpus genus of the mulberry family (Moreceae). It is the one of the

popular fruit species in the Philippines. This is manifested by its wide distribution and

cultivation. In Eastern Visayas production has steadily increased through the years which

enable it to ship to other regions and major cities like Cebu and Manila some 100 to 300

fruits approximately two (2) to three (3) tons per week.

Every part of the jackfruit tree has its respective uses. The immature fruit is used as

vegetable and feeds while the mature fruit is used for desserts and it is processed into

beverages and sweets like jams, candies, wine and ice candy. Its trunk is used as a lumber

for houses and building materials. The leaves of this fruit are used as a medicine, fodder,

and as a compost material. Its latex is in the list of ingredients for glue and paste. Its roots

are used for handle for farm implements. The seed is used for food, also used in feeds, used

for planting materials and for making candies. In the province of Nueva Vizcaya, jackfruit

is found abundant in the rural areas. Some farmers plant them near their house or backyard.

Based in my observation at province of Solano Nueva Vizcaya, the fruit of langka was used

as filling in “turon” partner with banana. It is very delicious and also the aroma of it, is

very pleasant to smell.

Coconut meat is the rich white lining that is contained within the shell of the

coconut. Coconut meat can juicy and tender, or slightly thick and crunchy, to tough and

fibrous depending on how long the kernel has been stored. Though coconut only grows in

tropical regions of the world, it is now widely available in the American consumer market.

And this is a fortunate thing as eating food products derived from coconut like coconut oil

and coconut meat on a regular basis has profound positive effects to your overall health.
Coconut and the products derived from it like coconut meat have been years wrongly

deemed as an unhealthy types of food because of its long known high saturated fat content.

However, a growing body of recent studies have shown that the type of fats present in

coconut meat are in fact medium-chain triglycerides (MCT’s). When you eat coconut meat,

the MCT’s it contains are transported from the intestinal tract to the liver and immediately

transformed into fuel. This then means there is very little MCT’s left to circulate and

deposit in fat tissues in the body. The MCT’s in coconut are converted into ketone bodies

as well which show potential as a replacement energy substrate for the brain. It is

noteworthy that the brain makes use of glucose as energy source. In individuals with

degenerative neurological disorders like Alzheimer’s disease, the brain’s capacity to utilize

glucose is severely impaired, further contributing to the progress of the disease. MCT’s

from coconut products like coconut meat may then help increase the body’s ketone levels,

potentially offering a dietary therapy approach to alleviating the symptoms and possibly

even preventing the onset of neurological diseases. Eating coconut meat appears to protect

against heart disease and stoke as well. As it turns out, coconut meat’s measurable vitamins

A and E, and polyphenols and phytosterols, all work together to decrease the levels of LDL

cholesterols, which are fats that stay in the blood and in skin tissues and high levels of

which been found a risk factor for cardiovascular diseases. This protective properties of

coconut meat is perhaps the reason the Kitavans of Papua New Guinea or the Tokelaus of

New Zealand, whose staple food is coconut, have no incidence whatsoever of stroke and

heart disease in their respective populations.


General Objectives of the Study

This study aims to develop an Empanada with Coconut Meat (Cocosnucifera) and

Jackfruit (Artocarpusheteropylla) as Fillings.

Specific Objective of the Study

Specifically, the study aims to determine the following objectives:

1. To determine the level of awareness of respondents to empanada as meal snack.


2. To standardize the recipe of Empanada with Coconut Meat (Cocosnucifera) and
Jackfruit (Artocarpusheteropylla) as Fillings.
3. To determine the acceptability level of the finished product in terms of:
a. Texture
b. Taste
c. Aroma
d. Appearance
e. General acceptability
4. To determine the acceptability level of the empanada bread patty design.
Significance of the Study

The importance of the study is to develop a snack which is Buko Langka Empanada

where in it has many health benefits that the people needs to their body health. This study

helps and benefit to all the people including the children, teens, older people and

consumers. This study also shows that there are lots of nutrients value in this snack that are

essential to our health.

Students- The result of the study will be a great help for the students in order for them to

gain knowledge about how to put this kind of business and to give them satisfaction from

the product.

The Researchers- This study may contribute formerly unknown information to the

researchers, thus, increasing their knowledge.

Future Researchers- this study will help future researchers for the reason that they may

use this as their guide in their future researches.

Scope and Delimitation of the Study


This study includes the development of Buko Langka Empanada. The study is

focus on determining which treatment, it’s either only Buko filling, only Langka Filling,

or both Buko and Langka Filling is the best and acceptable to the consumers.

Coconut meat – it is a part of coconut fruit which is contains with nutritional value

and benefits for the health.

Jackfruit - is a kinds of fruit which is full of nutrients such as vitamin A, vitamin

C, thiamin, riboflavin, calcium, potassium, phosphorus, iron, sodium, zinc and niacin that

are our body needs.

Empanada – it is a snack that may eat by children, teens, and older people. It can

also be prepared for any celebration or occasions.
