Still
Angel’s Envy uses a Vendome made continuous column still
which stands 35 feet tall and about 28-inches in diameter, as
well as a pot still.
Finishing
To finish, Angel’s Envy is blended in eight to twelve barrel
batches and then bottled at 86.6 proof (43.3% alcohol). No
Chill Filtration is used. Despite the aging period, the bottle
bears no aging statement.
Up Next
Angel’s Envy is still in development. Given that they will
start integrating house-made bourbon as well as refining
what they do, what you get now is not where it will remain.
Furthermore, the Rye finished in rum barrels will eventually
make its way to the Hawaii Market.

Founding Story
Richard Niner’s roots date back to his days growing up on
a 10-acre farm in West Virginia. After leaving for college, he
spent his career building small businesses across a wide variety
of industries. One of his business ventures brought him to Paso
Robles, California in the early 1990s, and he was immediately
drawn to the potential of creating a vineyard there by the quali-
ty of its soil and its people.
After a long search, Richard and his wife Pam purchased their
first vineyard, Bootjack Ranch, in 2001. Together they spent the
next decade building a tasting room and winery, finding and
planting two additional vineyards, and assembling their current
team. When Richard and Pam retired in 2013, their son Andy

Sustainable Practices
The winery at Hartland Hill is Leadership in Energy

certified for both the winery and vineyard. The differen-
ce between these certifications is, LEED Certification is
about how a structure is built, where as SIP Certification
is about how the building is operated.
Fermentation
The fermentation “tank” varies depending on the Barrel Selection

the wine and fill in certain areas. We use oak primarily
to add spice notes, and we use it to add texture and
body. We don't do it to have a heavy kind of cedary

Barrel Management
Barrels are generally used for eight years, or until they
leak. According to Andy, “Whites we generally keep dis-
tinct. On reds, we'll change it up. Generally with oak,
the first two years you get an oak impression and then
after that, it's completely neutral. Then when you clean
it out, it has no [flavor] impact on the wine that's stored
in it.”
