Yogurt, is a food produced by fermented milk bacteria.The bacteria used to make yogurt are
known as yogurt cultures. Lactose fermentation by these bacteria produces lactic acid, which
works on milk protein to give yogurt a distinctive texture and sour taste. Yogurt is produced
using the culture of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus
bacteria. In addition, lactobacilli and other bifidobacteria are sometimes added during or after
yogurt is cultured. That is the function of fermentation that is producing yogurt.

Nata de coco is coconut water fermented foods by the bacteria Acetobacter xylinum. In general,

used immobilized Acetobacter xylinum to produce nata on coconut water medium.
