Today both team leaders were following the keg line flash pasteurization & laboratory in the

morning session and utility section in the afternoon session.

Flash Pasteurization (FP)


FP is a method of pasteurizing beer to filling in to containers for the purpose of kill spoilage
micro – organism’s .In this process the product is handled in controlled, continues flow and
subjected to a temperature , normally in the range of (71.5ºc -74ºc) , for a time period of 15 – 30
seconds.
The operating outline first look filtered beers at 0 - 1ºc is pushed from the cellar tank by counter
pressure, then the beer enters the first stage regeneration section of plate heat exchanger and then
go to heating zone after that it is compressed at 11 bar at temperature of 75ºc then it goes to
regeneration zoon and finally passes through cooling zoon.
The major system control requirement for a beer FP system as follows
1. Temperature control (it is essential to control both the pasteurization temperature of in
the holding tube and the temperature of the leaving )
2. Pressure control (11 bar)
3. Flow control (constant flow control valve provided)
4. Sterile beer tank level control
Cleaning and hot water sterilizing priors to a production run is accomplished with normal 2% hot
caustic cleaning and sterilizing by circulating hot water at 85ºc for at least 30 min to sterilize the
system and lines .
FP is will accomplished an economical and microbiologically stable fill without impacting the
beer or colours and flavour profiles.

There are two boiler machines to heat water andgenerates steam energy by the help of furnace
oil. Before steam generation the boiler generates heat energy in the boiler chamber by burning
furnace oil. The oil heated before entering to burner to make easy for pump by reducing the
viscosity of oil. The main inputs to generate this heat energy are furnace oil, cleaned air and
ignition gas.The burner first ignited by gas ignition then furnace oil and filtered air are supplied
to the burner to generate heat energy in the closed boiler chamber. This heat energy heats the
filtered water and generates steam energy for different industrial purpose. It is supplied to brew
house and other sections for heating, sterilizing, cleaning and other purpose.

There are two screw type air compressors in dashen brewery utility section which produces
compressed air.The main inputs of compression are filtered air and oil. This compressed air uses
for instruments and cleaning purpose at the brew house and packaging line.

Cooling plant
Cooling is used for brewing industry in both external and internal brewing process. For internal
process used for brewing section, keg and filler where as in external they are used for
fermentation vessel. In Gonderdashen brewery or in other brewing industry they are used
ammonia and glycol as cooling media. Because of ammonia and glycol not converted to ice at
temperature -300c and -160c respectively.

Water treatment Plant


The Brewery use two types of treated water, service water and process water. The raw water
comes from Borehole.

To treat the water, first it passes through sand filter to remove float things then after the water
chlorinated to kill microorganisms and enter to pressure tank, this pressure tank create high
pressure with air to pump in high speed. At this stage the water goes in to two ways, service
water and process water.

Service water treat with Ion exchanger resin so the hardness of water is 0.0 mg/l. During
exhaustion of Ion exchanger (resin) it regenerate with HCl.
Process water which passes through CO2degaser treat with Cation exchanger resin to decrease
the hardness and alkalinity of water then it goes to carbon filter to trap chlorine residue, during
exhaustion of Cation exchanger resin it generate with NaCl .

Waste water treatment plant


Waste water is the water discharged from process effluents after used as a process fluid and
carries pollutants during processes. The pollutants may vary according to the processes the water
is used. Waste water treatment is the process of taking waste waterand making it suitable for
discharge back in to the environment without environmental impact.
Over all process of waste water plant

The waste treatment plant is working under the biological treatment principle. Biological
treatment is the decomposition of organic waste with the activity of micro organisms. Micro
organisms have their own life cycle of living and die. The way to treat the waste is that micro
organism feeding the the waste to develop and replicate their mass.

On our visit the waste treatment plant has the following components;
