Observation: (CORRECTED DURING INSPECTION): Employee observed handling pita bread with bare
hands.
Corrective Action(s): Employees shall use single-use gloves, utensils, bakery papers or other approved means
when handling ready to eats foods. Action Taken: Discussed with person in charge.
Code citation: (B) Except when washing fruits and vegetables as specified under § 3-302.15 or as specified in ¶
(D) of this section, FOOD EMPLOYEES may not contact exposed, READY-TO-EAT FOOD with their bare
hands and shall use suitable UTENSILS such as deli tissue, spatulas, tongs, single-use gloves, or dispensing
EQUIPMENT.

Observation: (CORRECTED DURING INSPECTION): Both kitchen area handsinks blocked by equipment or
have dishes stored inside them.
Corrective Action(s): Train food employees that handwashing sinks shall not be used for any other purpose than
handwashing. Action Taken: Items removed and discussed with person in charge.
Code citation: (A) A handsink shall be maintained so that it is accessible at all times for food employee use.
(B) A handsink may not be used for purposes other than handwashing.
(C) An automatic handwashing facility shall be used in accordance with manufacturer’s instructions.
