SUMMARY.
.
The preservation of milk by fermentation are the oldest methods of preserving
milk and the partition of special organoleptic properties there are many
different methods of carrying out fermentation in many parts of the world and
there are different types of milk fermented products texture of According to
the nature of the organisms that fermentation type of milk and the
manufacturing process used.
The word yogurt comes from the Turkish word "JUGURT" and in different parts
of the world it has different names. Yogurt is a traditional food known from the
Balkans and the Middle East was used there in Europe and other countries.
Processing and manufacturing
traditionally The acidic yogurt manufactured from boiled milk which acid
concentrated in two thirds of its volume the traditional process leads to the
following specific steps roughly as inoculation of the culture in which
thermophilic staphylococci and bulgaricus lactobacilli are used at a temperature
of incubation of 40 45 degrees the result is a slow Acidification of milk But
without control So it was undesirable effects on the quality of yogurt, the
control of science is important to prevent overfermentation are generated It is
also important to control aseptic conditions of the process to avoid unwanted
contamination, due to the effect on the casein protein bonds the milk system is
destabilized generating the texture the yogurt will decrease the viscosity

I. INTRODUCCION
Practica 1.
