RESUMEN
Objetivo: Preparación de un jarabe al 1% a partir de Quercetina por obtención de hidrólisis ácida del
extracto etanolico de Ruttina de la Flor de Overo “Cordia Lutea”. Material y Métodos: La extracción
etanolica de los pétalos de la Flor de Overo “Cordia Lutea” se obtiene por reflujo a varias concentraciones de
de etanol a 30°, 50° y 70° y se determinaron características físico-químicas como la densidad relativa con un
picnómetro y su determinación cualitativa con el reactivo shinoda; luego se obtuvo por hidrolisis acida a
reflujo el flavonoide en su forma aglicona llamada Quercetina llevándolo a refrigeración para una mejor
precipitación para después filtrar y lavar con agua fría y llevar a secado para determinar el rendimiento de
quercetina en cada concentración de etanol y por último se preparó un jarabe al 1% del cual se determinó
sus características organolépticas. Resultados: Se determino que su densidad relativa fue 0.9575 g/mL y su
coloración rojiza con el reactivo shinoda indica la presencia de flavonoides; la extracción tuvo como
rendimiento de Quercetina a concentración de etanol a 30° fue 0.5170 g, a 50° fue 0.8602 g, a 70° fue
0.6464 g; y se obtuvo una preparación de jarabe al 1% el cual presento un olor sui generis, color marrón
rojizo, sabor ligeramente amargo y textura lisa. Conclusión: Se obtuvo un jarabe al 1% de Quercetina
obtenida por Hidrólisis ácida de Ruttina del extracto etanolico de la Flor de Overo “Cordia Lutea”.
ABSTRACT
Objective: Preparation of a 1% syrup from Quercetin by obtaining acid hydrolysis of the Ruttina ethanol
extract from Flor de Overo “Cordia Lutea”. Material and Methods: The ethanol extraction of the petals of the
Flor de Overo "Cordia Lutea" is obtained by refluxing at various concentrations of ethanol at 30 °, 50 ° and 70
° and physicochemical characteristics were determined as the relative density with a pycnometer and its
qualitative determination with the shinoda reagent; Then the flavonoid acid in the aglycone form called
Quercetin was refluxed by hydrolysis, bringing it to refrigeration for better precipitation and then filtered and
washed with cold water and dried to determine the yield of quercetin in each concentration of ethanol and
finally prepared a 1% syrup from which its organoleptic characteristics were determined. Results: Its relative
density was determined to be 0.9575 g / mL and its reddish color with the shinoda reagent indicates the
presence of flavonoids; the extraction had Quercetin yield at ethanol concentration at 30 ° was 0.5170 g, at
50 ° it was 0.8602 g, at 70 ° it was 0.6464 g; and a 1% syrup preparation was obtained which presented a sui
generis smell, reddish brown color, slightly bitter taste and smooth texture. Conclusion: A 1% Quercetin
syrup obtained by Ruttina acid hydrolysis of the ethanol extract of the Flor de Overo "Cordia Lutea" was
obtained.
