Edible insects

Eating insects is also known as entomophagy which is a common culture in most parts of
world including North, Central and South America. Over 2000 species are found to be eatable
globally rich in protein content and other necessary minerals. Anthopods and other species of
insects are good source of nutrition.

By Product

Beetles - Beetles are a group of insects that form the order Coleoptera, in the superorder
Endopterygota. The most commonly eaten beetles are the long-horned, june, dung, and
rhinoceros varieties. They are efficient at turning cellulose from trees (indigestible to humans)
into digestible fat. Beetles supply calcium and iron, as well as a good dose of zinc. Beetles

per 3.5-ounce. Beetles can be eaten once cooked (since the shell becomes tender), and taste
similar to smoked bacon.

Caterpillars - Caterpillars are the larval stage members of the order Lepidoptera. They are
an excellent source of protein, iron and other minerals. Caterpillars of most species are
herbivorous, some are insectivorous, even cannibalistic. The mopane caterpillar is one of the
most consumed and economically valuable edible insects in southern Africa and could go some
way to improving iron deficiency in the diet. Their iron content ranges from 30 to 70 mg per
100g serving.

Grasshoppers, locusts & crickets – Grasshoppers contain over six times iron content
compared to beef. A 3.5-ounce serving of raw grasshoppers contains between 14 and 28
grams of protein, which is quite high for such a small amount of food. Grasshoppers and
crickets are a good source of unsaturated fats, according to the Food and Agriculture
Organization of the United Nations, which can help lower the risk of heart disease. These
insects also supply small amounts of iron, though the exact amount depends on the size of
the bug. Cricket protein is a highly nutritious food source containing protein, fiber, vitamins,
minerals and healthy fats, which is bio-available, implying that cricket powder is easily
digestible.

Bees, wasps and ants –Ants are full of proteins, vitamins and minerals essential to the
proper functioning of the body. Honey bee larvae and pupae can be compared to beef in terms
of their protein quality and quantity. Wasp is any insect of the order Hymenoptera and
suborder Apocrita. Wasps as a group do not form a clade, but are paraphyletic with respect
to bees and ants.

Scale insects & true bugs - Depending on the species, scale insects may be found on plant
stems, twigs, trunks, foliage, or fruit. Most scale insects are small and inconspicuous. The
size of scale insects ranges from 1/8 to 1/2 inch. Color, shape, texture and other features
vary with the species. They are divided into two categories, soft scales and armored scales.
Scale insects feed by sucking sap from trees and shrubs through piercing-sucking mouth
parts.

By Application

Flour- Insects are dried, roasted and powdered to form insect flour. Most commonly
consumer insect flour includes cricket flour, locust and beetle. These powders are rice in

3 . 5 . 1 E u r o p e a n F o od S a f e t y A g e nc y ( E F S A )

The European Food Safety Agency (EFSA) ensure consumer protection and maintain food
safety. The EFSA started to collect information about edible insects and include insects in
normal diet for both animal and human feed.

There are several legislative requirements that impact the use of insects as food and feed.
Currently, the feed ban provisions of Regulation (EC) No 999/20011 (TSE Regulation) do not
allow insect Processed Animal Protein (PAP) to be fed to farmed animals due to lack of a safety
profile. With respect to feed/substrate for insects, Annex III to Regulation (EC) No 767/20092
prohibits the feeding of faeces and separated digestive tract content even though these
materials are used in other parts of the world as substrates in insect production. The
legislative framework specifically related to insects used as food and feed, however, is still
under development. The processing and storage of insects and their products should follow
the same health and sanitation regulations as for any other traditional food or feed items in
order to ensure food safety. Issues to be considered include microbial, chemical and allergic
hazards. In addition, general animal (vertebrate) health and welfare rules should also apply
for insects.
