Keltrol® F XANTHAN GUM

Description Keltrol F is a 200-mesh food-grade xanthan gum suitable for use in food preparations
where rapid hydration is required.

Features Keltrol F xanthan gum:


• imparts high solution viscosity at low gum concentrations
• has pseudoplastic rheology profile (e.g., is shear thinning)
• exhibits little solution viscosity change over a wide temperature range
• compatible with and stable in solutions containing high salt concentrations
• soluble and stable in both acid and alkaline conditions
• hydrates faster than standard 80-mesh grades when well dispersed

Standard Packaging Keltrol F xanthan gum is packed in 25 kg double walled corrugated boxes with
polyethylene liners (21 CFR 177.1520). All packaging materials comply with
relevant UK, EU and US food contact legislation.

Viscosity 1% solution in 1% KCl 1200-1600 mPa·s (cP) w/ Brookfield LV @ 60 rpm


0.25% solution in tap water 600-1100 mPa·s (cP) w/ Brookfield LV @ 3 rpm

Dispersion/ Keltrol F xanthan gum will rapidly hydrate in most water-based systems because it is
Hydration completely soluble in both hot and cold water. Direct addition of Keltrol F to water is not
recommended, as its fast hydration characteristics can result in the formation of lumps.
Solutions are usually made by dispersing Keltrol F in either an oil or water miscible solvent,
such as a glycol or a low molecular weight alcohol, and then adding to the water phase.
Alternatively, Keltrol F xanthan gum can be dry mixed with a powder such as sugar before
dispersion in the aqueous phase.

Typical Use Level Keltrol F xanthan gum is typically used at a level of 0.05 - 0.5 wt%.
