BRIEFING MORNING AT RESTAURANT DEPARTMENT

Manager : Good Morning Everybody!


All staff : Good Morning,Sir.
Manager : Let me check and see your grooming,Have to use a black shock,black
pantofel,Your nail is short right?Good,Miss tidy your tie,please.Ok.
Manager : How about yesterday?
Staff 1 : Sir,I Think food and beverages sales in hotels have increased to achieve profits
in accordance with our current hotel target.
Staff 2 : Yes Sir,just by increasing the food supply in the Hotel Restaurant,the profits for
the Hotel will increase and the image of this Hotel will also increase.
Manager : Hmm…Can you show the sales file to me?
Staff 3 : Certainly Sir,Here it is.I also think that the number of visitors in this section is
more than expected,they are not local residents.Do you know where they are
from?You know?
Staff 2 : I have already received information from Front Office Department,specifically
this month,we will be visiting guests from various countries.For example
Spain,China and England.
Staff 1 : Sir,maybe this month is the right month for them to hold a big event with many
invited guests participating in the event and our Hotel Automatically receive
many guests in a short time.That’s news good right?
Manager : Great!What about our costumers?Don’t you get some complaints?
Staff 3 : Oh Sorry,I don’t get any complaints,Sir
Staff 1 : I have sir.Last day,when costumers ate lunch,He complained with
the menu that was served.I still remember he ordered steak with mozzarella
cheese.According to his order I delivered the menu,not a few steps,suddenly he
called me and asked me to eat the menu or throw it away.I tried to apologize
and asked what the lack of the Menu was.He explained in detailed and finally I
understood the point.
Manager : So,How is the solution you got?
Staff 1 : I will say,allright sir.Your order menu will be immediately served by the Hotel
Chef.
Staff 2 : There are many people like that,Sir.
Manager : If guest complains again,ask clearly what the problem and to make sure you
can leave the matter to the Hotel Chef by telling them and asking one of them to
come immediately to the guest table.And remember we put forward the value of
hospitality in solving every problem.
Staff 2 : Oh,allright Sir.
Staff 3 : Sir,what about the day to day restaurant activities.We,especially Me,Feel the
work this time is quite tiring.Because of the unbalanced working hours.
Staff 3 : It is true on this team,We show close teamwork,mutual tolerance and are aware
of each other’s responsibilities.
Manager : So,Are you uncomfortable about working hours?
Staff 2 : I think everyone’s immune system is different.And I thank you very much if you
understand what we mean,Sir
Manager : Well,I will return your working hours.When you work enough,8 hours
perday.That is a rule that you must obey.Ok,Everybody.Are you ready for
today?
All staff : YES WE ARE READY,SIR
Manager : Ok,work as well as possible,think smart and give the best service to them.
