Tofu Burger Patty

Ingredients:

1 carrot

1 medium sized onion

3 medium sized tofu

1 green bell pepper

1 clove of garlic

2 cups all purpose flour

1 tsp. pepper

1 tsp. salt

1 egg

Procedure:

1. Drain the tofu using cloth in order to ensure that it is not watery and then, mash the 3

medium sized tofu. Set aside for 3 minutes.

2. Slice the medium sized onion, green bell pepper and 1 clove of garlic in thin slices.

3. Mix all the dry ingredients.

4. Mix all the ingredients into a mixing bowl. Refrigerate for 10 minutes.

5. Take two spoonful of the batter mixture and fry the mixture for 8 minutes.
Veggie Okoy Patty

Ingredients:

1 Carrots

1 medium sized onion

1 red bell pepper

250 g Squash

250 g Sweet potato

2 cups all purpose flour

1 tsp. pepper

1 tsp. salt

1 cup malunggay leaves

1 egg

Procedure:

1. Combine together batter ingredients. Mix until smooth.

2. Heat oil in a frying pan over medium high heat. Scoop two large spoonful of mixture in

hot oil; flatten with the back of the spoon. Fry until golden brown and crispy on both sides,

about 5 minutes. Drain.

3. Repeat process until all mixture has been used.


Banana Blossom Patty

Ingredients:

1 medium banana heart

oil

1 small onion, peeled and chopped

1 tablespoon oyster sauce

salt and pepper to taste

1/2 cup flour

2 eggs, beaten

1 tsp. pepper

1 tsp. salt

Procedure:

1. Peel and discard the outer, fibrous skin layers of banana heart until you reach the lighter,

softer core. Trim off the stem and discard. Cut banana core into half and slice thinly.

2. In a bowl of cold salted water, place shredded banana heart and soak for about 15 to 20

minutes. Using hands, squeeze to release bitter sap. Rinse with cold water and with hands,

squeeze well to dispel liquid.

3. In a pan over medium heat, heat about 1 tablespoon oil. Add onions and cook until limp.

Add banana heart and cook, stirring occasionally, until cooked through.
4. Add oyster sauce and stir to combine. Season with salt and pepper to taste. Continue to

simmer until liquid is mostly absorbed. Remove from pan and allow to cool.

5. In a bowl, combine sautéed banana heart, flour, and eggs. Mix well. Form into 4 uniform-

sized patties.

6. In a pan over medium heat, heat about 2 tablespoons oil. Gently Add banana patties in a

single layer and cook for about 2 to 3 minutes on each side or until golden and firm.

Remove from pan and drain on paper towels.

7. Assemble burgers with desired condiments, veggie patty, cheese, lettuce, and tomatoes.
Mushroom Vegetable Patty

Ingredients:

2 cups finely chopped fresh mushrooms

2 large eggs, lightly beaten

1/2 cup dry bread crumbs

1/2 cup shredded cheddar cheese

1/2 cup finely chopped onion

1/4 cup all-purpose flour

1/2 teaspoon salt

Procedure:

1. In a large bowl, combine the ingredients. Shape into four 3/4-in.-thick patties.

2. In a large cast-iron or other heavy skillet, heat oil over medium heat. Add burgers; cook

until crisp and lightly browned, 3-4 minutes on each side. Serve on buns with lettuce.
Broccoli Vegetable Patty

Ingredients:

16 ounces broccoli

1/2 onion (finely chopped)

2 cloves garlic (minced)

3/4 cup bread crumbs

2 eggs (lightly beaten)

1/2 cup Cheddar cheese (grated)

1 tsp. pepper

1 tsp. salt

Procedure:

1. Finely chop onion and mince garlic. In a small skillet, heat vegetable oil and saute onion

and garlic until soft (about 7 minutes). Set aside to cool.

2. If you use defrosted broccoli, remove excess moisture with paper towels (for fresh broccoli,

blanch it for 2 minutes). Chop into bite size pieces. Transfer to a large bowl.
3. Add breadcrumbs, lightly beaten eggs, Cheddar cheese, onion and garlic to the bowl.

Season with salt and pepper to taste (not too much since cheese already has salt). Mix until

combined.

4. In a large cast-iron or other heavy skillet, heat oil over medium heat. Add burgers; cook

until crisp and lightly browned, 3-4 minutes on each side. Serve on buns with lettuce.

CUCAPO (Cucumber, Carrots, and Potato) Burger Patty

Ingredients:

2 cucumber

1 carrot

1 potato

1 onion

1 garlic clove

2 cups of flour

1 Egg

1 tsp. Pepper

1 tsp. Salt

Procedure:

1. Grate the cucumber, carrot, and potato then mix.

2. Mix all the dry ingredients (flour, salt, and pepper) with egg.
3. Combine the grated cucumber, carrots, and potato and batter. Add garlic and onion. Then

refrigerate for 10 minutes.

4. Form vegetable mixture into flat patties.

5. Cook patties on both sides over medium heat for about 8 minutes.

Cheesy Potato Burger Patty

Ingredients:

Recipe:

2 cups mashed potatoes

1 cup all-purpose flour

1 onion, diced

1 egg

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1/2 cup vegetable oil, or as needed

Procedure:

1. Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until

batter consistency.
2. Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil.

Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on

paper towels. Repeat with remaining batter.
