Introduction

Small and medium enterprise in Bogor reach 4500 enterprises in 2017 (Syarif 2017). Most of them
are enterprises in the food and beverage sector where one of those enterprises is potato stick
enterprise. Increase of consumer’s need to food also make an increase in potato stick production.
The large number of food and beverage small enterprises must be balanced with good
environmental management. One of many concepts to increase productivity of industry is cleaner
production. Cleaner production is a concept to minimize waste from production process. Cleaner
production is an effective and efficient way to utilize material, energy, and process technology that
are used.

Production process of potato stick needs large number of water and cooking oil which lead to
production of waste such as residual water, used cooking oil, and potato skin as solid waste. Good
environmental management should be implemented to minimize pollution caused by waste that
produced. Implementation of cleaner production still not maximally done in most of small and
medium enterprise. Problem that usually faced by small and medium enterprise are production and
storage layout and waste management that are still not sufficient. That is why implementation of
cleaner production should be studied to improve the production management.

Objectives

The purpose of direct observation in the production place of potato stick are to understand the
production process of potato stick, make the mass and energy balance that converted along the
production process, and to know opportunity of cleaner production implementation that done by
potato stick industry.
PROCESS DESCRIPTION

Potato stick is snack that is made from potato, flour, egg, and other materials that mixed together
and fried. Steps of potato stick production are wash the potato, steam the potato, peel the potato
skin, mash the potato, make the dough, grind the dough, cut the dough, fry the dough, and package
the potato stick. CV Kaycall Sukses Makmur can produce at least 400 pack of potato stick per day.

First step to produce potato stick is washing the potato. This process is done to remove the dirt that
stick to the potato. It is needed 3 liter to wash 5 kg potato. Potato is put inside the container, then 3
liter of water is added to the container. The washing process is done in the container. Residue water
that contains dirt are generated from potato washing process.

The next step is steaming the potato. This process is done to make potato softer and easy for its skin
to be peeled. Steaming process of 5 kg potato in one steaming pan is done for 50 minutes. Steaming
use gas as the heat source. It is needed 3,75 liter to steam 5 kg of potato. This process of steaming
increase mass of the potato because the water swell into the potato. Beside that, this process is
generated steam that has volume of 124,6 ml in water form.

After steaming process, skin of steamed potato is peeled. Skin of the potato is peeled to get the
potato flesh for the next process. Potato skin is peeled using hand, fork, or knife right after potato
has been steamed. Then skin of potato is put into the container and become waste.

Peeled potato then mashed so it is easy to be mixed with flour become dough and can create
homogenous dough. Potato mashed inside plastic container using spoon until it become soft.

The next step is make the dough from mashed potato, flour, tapioca, flavor, and salt. All the powder
material is firstly mixed altogether in the plastic container before mixed with the mashed potato. It is
needed 5 kg wheat flour, 1,5 kg of tapioca starch, 135 gram of flavor enhancer, and 50 gram salt.

Dough that already made by hand then grinded using grinding machine. The dough is put in the
input port in the upper part of the machine. Flour sometimes added to the dough to avoid the
stickyness and to create the wanted texture. The dough that comes out from the machine then
added by tapioca and put again into the machine. This step are repeated until the dough have the
wanted texture.
