PREPARING VARIOUS
DELICACIES FROM
Navane- Foxtail
MILLETS
Oodalu - Barnyard
Araka - Kodo
Saame - Little Millet
Korale - Brown top
Sajje - Pearl
Ragi - Finger millet
Baragu - Proso Millet
Despite high nutritional value found in Foxtail Millet, Little Millet,
Pearl Millet, Brown top millet, Kodo Millet, people who consume it on
a regular basis opine that the dishes made out of these millets are
tasteless. To an extent it is true that consuming the same kind of dishes
prepared from these grains result in boredom and the tongue would
eke for some tasty dishes, when compared to dishes made from such
grains. It is an accepted fact that we yearn for dishes that are tasty.

ARE MILLETS UNTRUE ?

However, the fact that millets are tasteless is untrue. Our ancestors
prepared a variety of dishes using Millets. They used to prepare various
sweets and other dishes using Millets. We can also prepare a variety of
dishes through millets in our Kitchen which are healthy at the same
6 2018 | April
time tasty. The cause of modern diseases is due the imbalances in our
diet and food practices. We should now wage a war against deadly
diseases such as Diabetes and Cancer. The first measure is to ensure
we take a balanced diet and rigorous changes in our diet. We should
adopt the dietary practices followed by our ancestors. A Millet rich diet
will ensure you get all the nutrients and ensure a disease free life. We
are now accustomed to unhealthy food style; we are of the assumption
that food we consume is healthy, which is completely wrong. Whenever
we feel sick or afflicted by some ailment, we wonder how did we fall
sick, despite consuming home-cooked food? The reason is the food we
eat lacks sufficient nutrients required for the body, resulting in gradual
weakening of the body and resulting in various ailments. We rarely
consume spinach, vegetable and fruits in our daily diet, which give us
all the nutrients needed by the body and keep us fit and free from
diseases.

Mother Nature has given us various types of healthy supplements

through fruits, vegetables, pulses and other healthy food which gives
us the necessary proteins, vitamins, minerals, carbohydrates, fats and
other nutrients needed by the body. If we do not consume healthy food
comprising of Millets and eat rice 3 times a day we are certain to get
diseases over a period of time.

A noted Food and Nutrient expert explained an incident which happened

at his clinic in Mysuru. “Sometimes Diabetes patients come to me for
treatment; i have given treatment to thousands of such patients, whose
blood-sugar levels are under control now. After the treatment these
patients come to me and ask me if we can consume “Normal Food”, i ask
them that if the Millet rich diet i had prescribed them was “Abnormal”?.
I counsel and advise them that the previous diet was “Abnormal” and
that the Millets you are consuming now is healthier than the diet you

April | 2018 7
were having it earlier.

They often ask me what you eat. I tell them that i have a piece of dry
land in the outskirts of Mysuru near Heggadadevanakote, Bidarahalli
village. I grow Ragi, Foxtail Millet, Little Millet, Kodo Millet, Pearl Millet
and use the same in my Kitchen. Consuming Millets has improved my
health and kept me fit even at this age. It is a wrong notion that we
cannot prepare various delicacies using different kinds of Millets. I will
explain the various dishes, delicacies that can be prepared using Millets.

Siridhanya or Millets have to be to be soaked in water mandatorily.

Since Millets are rich in Fiber. We can use or replace the existing energy
drinks; food with the following dishes using Millets.

GANJI FROM MILLETS

Porridge (Ganji): Coffee, Tea and Milk have become our morning drink.
However, these have very less
history of less than a few hundred
years. Our ancestors would begin
their day by consuming Ganji
(Porridge). Ganji was considered
to be meal of the poor. Ganji has
a special place in the food system,
as it is nutritious. It is known as
Porridge in western countries. It
is also known by the name ‘Ambli’.
Drinking Ganji will prevent frequent
‘cravings’ and will not make you hungry for a long period of time. It also
keeps you fit. We need to substitute Ganji over Tea/Coffee taken in the
morning. In addition, preparing Ganji is very simple and less tedious.

8 2018 | April
HOW TO PREPARE GANJI THROUGH MILLETS

Preparing Ganji is easier. On any single scale of Millets, mix 4 cups of

water and boil it for 20 minutes. Later, add a little salt, spicy powder
and sour ingredients, Ganji will be ready. You can also add buttermilk
with the Ganji and consume it. If you add a flavour (oggarane) to Ganji
you will get a different flavour. Roast Rave (Siridhanya rave) later soak
it in water for one hour. For 1 measure of rave add 5 measures of water,
boil the water and leave it. Once it is boiling, add Siridhanya Rave and
leave it for some time. Add salt and once it is done add some flavour
(oggarane). A flavour of jeera, dried chillies, pudina or even flavour of
Dill Leaves (Sabbaske Soppu) you will get a solid Ganji.

As suggested earlier to use Siridhanya (Millets) as a substitute for Coffee-

Tea, we can also use Siridhanya as an alternative to Rice and Wheat.
Present day children are averse to Rotti and Ragi Ball. We can prepare
Pongal and Khichdi from Siridhanya or even Upma using Siridhanya.

PONGAL AND KHICHDI THROUGH MILLETS

Take 1 measure of Siridhanya rice roast it for some time and after it
gets cooled, soak it in water for an hour. Later fry ¾ paavu (a measure in
Kannada), it is advisable to use Moong Dal (Hesaru Bele) with the skin
as it gives good health and tastier. When you add flavour (Oggarane) to
it your Pongal is ready. For the Oggarane (Flavour) you can use mustard,
finely grounded pepper powder, cumin, green chillies.

Similarly, using the same ingredients Khichdi can also be prepared. Fry
Moong Dal and Siridhanya rice separately; use beans, carrot, Chayote
(Seeme badanekayi) cut in small pieces and fried. Then add flavour.
Along with boiled pulses and rice, vegetables boil it again and consume
it with ghee.

Drive away the Painful Piles
In Ayurveda, hemorrhoids are called as Arsha Shoola, which literally
means ‘pain from pricking like needles’. This is indeed how the pain
from the hemorrhoids is felt! It is caused due to vitiation of any of the
three doshas. It is classified as a digestive disorder; accumulation of
waste materials in the rectal area can give rise to piles. The chances
of piles are increased by other factors such as sitting on hard seats,
chronic constipation and pregnancy……

What are Haemorriods?

Haemorrhoids consist of two
words: Haem= Blood, Rhoes=Flow
which is commonly known as
Piles. Piles word originates from
Latin term ‘Pila’ which means a
ball or a pillar. Arshas (piles) or
hemorrhoids are the varicosity of
the veins around the anus.
The perfect definition of
haemorrhoids does not exist, but
they can be narrated as clumps
or masses, which are nothing
but cushions of tissue within
the anal canal containing blood
vessels. Their supporting tissues
and surroundings are made up of
elastic fibers and muscles.
It is defined as: अरिवत

14 2018 | April
A disease which tortures patient’s vital force (prana) as enemy is called
as Arshas in Ayurvedic parlance. Arshas is described as one of the eight
Maha gada (most dreadful diseases).

In modern day-to-day life of urgency and stress, people neglect proper

diet and lifestyle habits. It ends in reduced digestive fire (Agni) or making
it abnormal (mandagni).
Mandagni is a condition where a person is not able to digest food
materials at a proper time. It results in accumulation or stagnation of
half-digested food material (Ama) in the form of stool inside or expelling
it before time in watery or semisolid form which disturbs doshas at
ano-rectal region.

The varicosity may be in the external area of the sphincter of the anus
or in the internal area of the anus i.e. inside the anal sphincter covered
with mucus membrane. In Ayurvedic text these sphincters are called as
“vali’(bahya vali and abhyantara vali)
Ayurveda has classified it under two types:
1. Sahaja (Congenital)
2. Manifested after birth (janmottara kalaja)
This kalaja has been again classified as shuska (dry or blind) and sravi
(bleeding).

Causes of Piles
• Common cause is straining during defecation when constipated
for a prolonged period.
• Family history of piles.
• In pregnancy, due to increased blood flow.
• People having varicose veins.
• Any growth or cancer in the bowel or pelvis.
• People having chronic diarrhea.
The varicosity may resemble so many shapes such as mustard like, pea-

April | 2018 15
like, barley like, plum, fig, and like so many ankuras (buds). These shapes
and size are indicative of the doshas involved in the manifestation of
these various types of growth or varicosities.

Preventive Measures
• Drink plenty of water and other fluids, at least 10 glasses a day.
Eat foods, which are good sources of fibre, such as whole grain or bran,
cereals breads, fresh vegetables and fruits, and, if necessary, add bran
to your foods (about 3-4 tablespoonful per day). This will make the
passing of stools easy.
• Pass the bowel as soon as you feel the urge. Do not strain yourself
to have a bowel movement.
• Try to lose weight if you are overweight.
• Keep the anal canal clean.
• Take warm baths.
• Do not sit on hard surfaces; it can restrict blood flow around the
anal area.

Get rid of Piles without Surgery at I-AIM

We at I-AIM Healthcare understand that Piles may not be a problem
you feel comfortable talking about, but there is “No need to suffer in
silence”.

At I-AIM, we make use of ‘Kshara Sutra Therapy’, an Ayurvedic Parasurgical

Technique, which is used to cure ano-rectal diseases like Piles, Fissures,
Fistula and Pilonidal Sinus. This is the most comfortable, non-surgical
and convenient technique and in most of the cases, it can be carried out
on the same day as of the examination.

Low Level Laser Therapy for
Chronic Conditions
(Part 2 of a multi part presentation)
Early detection is key to managing chronic
problems
Chronic conditions characterized by pain have far reaching impact
for the individual and beyond in a manner that is not easily
understood. As a society it is safe to say in general, we do not
experience or exhibit enough sensitivity to people in pain. It is
probably partly true that as individuals in pain, most of us do not
want others to be disturbed by our problems either.
Be that as it may, while an absolute amount of pain is experienced
in a localized area, the pain has capability to affect, focal tissues
and organs in the neighbourhood.

A typical example would be fall and lets a say bruise on the knee.
The injury site shows redness, swelling and signs of inflammation.
The local muscles generally go a little stiff to prevent unnecessary
movements and force some rest. Additionally the whole leg may
hurt or the person feels a little feverish due to this episode on
injury.
As repair takes place, the feverish feeling reduces, the joint can be
moved pain free and the local injury shows signs of wound healing.
As the wound heals, the pain etc disappears and life goes on as if
nothing ever happened. This is the natural sequence of events in
terms.
Imagine now a pain that somehow seems to not go away completely
but keeps hurting from time to time. Such pains are common in the

18 2018 | April
event of what is medically referred to as repetitive injury or stress.
An illustration probably would be easier to understand.
Imagine a teacher whose job involved standing for about 30-45
minutes in class and using the right had to write on the blackboard
or a housekeeping staff who has to sweep and mop or say any one
doing a desk job involving using a desk top system for seven to
eight hours in a day. In all these cases, the common denominator
is excessive use of a certain group pf muscles in comparison to the
other muscle groups and general body fitness.

While muscles and joints are essentially designed for work, they
can be stressed by severe overuse or underuse. Both conditions can
trigger pain sensation in and from the local tissue. While nothing
seems to be wrong like a point of injury or similar, the pain seems
to disappear with some rest and reappear every time the muscle
groups were exercised or loaded in a certain manner.

85% of working professionals in Bangalore suffer from Backache

The remaining 15% neither ride a motorcycle over potholes nor a
have desktop

That’s just an example of chronic pain. The most common cause

April | 2018 19
of chronic pain is due to degenerative conditions. Imagine a tire which
never tires, meaning never needs a change. Now how can that be
possible one might ask? Well it is possible only if the tire regenerates
the rubber itself on an ongoing basis. Now that’s how the joints in the
body work. Joints in general especially the high mobility joints such as
knees, shoulders, back, hips, elbows, wrists, ankles (not in any particular
order) need to maintain themselves in terms articular surfaces, joint
cavity, muscles, tendons, cartilage etc.

At a tissue level, it may impact the tensile strength, load bearing capacity,
elasticity or resilience. If and when any of these fail to maintain their form
or function the joint experiences greater wear and tear in comparison
to the required regeneration and maintenance. Consequently, a small
residual effect is left behind which keeps increasing with time. Hence
the chronic conditions tend to become sever with time.

It is important to understand this dynamic balance between wear and

tear on the one hand and tissue regeneration on the other hand. If ever
the balance tilts negatively towards more wear and tear and a relatively
lesser repair, it marks the beginning of a degenerative condition of that
local tissue.

20 2018 | April
This diagram represents the various stages in cell cycle. If for any
reason there is either a delay or dysfunction in the process, the repair of
the tissue is impacted. If the number of healthy cells available cannot
support the required demand, then in a sequentially increasing manner
the problem will intensify.

Simple thumb rule to identify chronicity is if a problem remains even

after three months after it was first detected, it is very important to have
it thoroughly investigated and root cause isolated. It is the beginning
of the solution.

Any solution must compulsorily involve immediate, short term, medium

term, long term and preventive measures including monitoring and
control

VEGANISM AND ITS IMPACT
TO THE ENVIRONMENT

Animals have equal rights to live a life of dignity like that of a man.
Humans have no right to unleash cruelty on animals to get better
yield out of them. This argument was initially presented at England
and England Vegan Society was thus born. In order to commemorate
the 50th anniversary on November 1st the World Vegan Day is being
observed. The word ‘Vegan’ was introduced by Donald Watson to the
world in the year 1944.

The concept of Veganism was introduced on the basis of not

exploiting animals for human gains. Some of them have turned to
Vegetarianism after seeing the cruelty meted out to Animals. By
22 2018 | April
doing so we are protecting the animals.

Milk from the cow is consumed by most of us. We have assumed

that the calcium in the milk is very high and by consuming milk the
health of Children and those who are weak will improve gradually.
However, this is not true. Calcium is not just found in Cow’s milk but
also in abundance in other food items such as Soya Milk, Sesame
seeds, Palak, Kabul, Soya chunks and others which have more
calcium than Cow’s Milk.
Humans are causing immense pain to the Cow, by injecting certain
drugs which increase Milk yield to make more money. This is highly
condemnable and inhumane.

Only Man consumes milk and none other animals consume milk
after attaining adolescence. Thus the need of milk to adults itself
is questionable. When there are other sources of food for Humans,
why do we need Milk and exploit the cow to such an extent.

We have stooped to such a low; that we now practice artificial

insemination, causing forced pregnancy to the cow through injection.
Normally in humans after a delivery of child, enough time is given
to recuperate for the Girl for the next delivery. However, in case of
cows being pregnant after 283 days it gives delivery to a calf and
produces milk for 305 days. After 60 days the cow is again subject
to artificial insemination which is illegal and inhumane. Meting out
such inhumane treatment to Cows is highly condemnable.

We are so selfish that if the Cow gives birth to a male calf (bull),
they are either killed and their skin used to manufacture leather
shoes, purse and belts. The same cow when it gives birth to a calf
is separated from the cow as it consumes all the Milk and the same
treatment is meted out to the young calf.

April | 2018 23
Animal Husbandry and Dairy Farming is a lucrative business.
Apart from Agricultural revolution, we have also seen Milk
revolution in the country. Some are of the assumption that if the
demand for Animal based products increase, then the economy
of the country will increase. They should also understand the
counter effects of uncontrolled animal slaughter for economic
benefits. In India alone: 0.114 Million Tonnes of Methane is let
out due to Animal Husbandry. We all know that Methane is lethal
to the environment.

The amount of water needed for Animal Husbandry is 10-15

times more than the water needed for Agriculture. To produce
one litre of Milk from a cow more than 1,900 to 4,600 litres of
water is consumed. More than 3.5 million tonnes of water is
polluted during production of meat. The only alternative to such
rampant waste of water is change in the lifestyle of humans. We
should discontinue having Non-Vegetarian food. Thus, we can
not only save water but also eliminate Animal cruelty completely.

To transform the society into a ‘Vegan’ society is in itself a

herculean task. It is not easy to change the society which has
been accustomed to consuming meat and milk. If we transform
the society into a ‘Vegan Society’ there will be huge losses for
those pursuing Dairy business. They might lose their livelihood
completely. As a result of discontinuing this economy may be hit
badly. However, such setbacks are inevitable in front of humanity.
We Indians have a nature of respecting everyone. Atleast now, we
have to understand that Animal cruelty is an impediment to the
society; the society has the obligation to prevent it and practice
the philosophy of ‘Live and Let Live’. Let us accept ‘Veganism’ to
lead a happy and respectable life.
