Esrog Liqueur – Recipe #1 [Very Sweet]

Ingredients: {Yield: 1 Quart}


3 Esrogim / 3 Cups Vodka
1 1/2 cups Superfine Sugar (bakers) or Liquid Sugar

Prep Time: 30 mins.


NOTE 1: Cheap vodka works OK. But, mid-level vodka gives a much smoother
finished product. High-end vodka is not significantly better than mid-price vodka.
NOTE 2: If you cannot find the extra-fine sugar, take regular sugar and process
in your blender to make extra-fine. The only reason is because it dissolves
better.
1.  Peel [ ] 3 Esrogim - avoid the bitter white
"pith".
2.  Put the peel in a 1-quart bottle with [ ] 2 cups
vodka and close up for a week or longer. (Keeping
it longer may (or may not) get more flavor into the
peels, you can try so if you wish. (Remove
_________________)
3.  Discard the peels / Drain water.
4.  Add [ ] 1 1/2 cups extra-fine (bakers) sugar
and shake or stir vigorously until dissolved.
5.  Add [ ] 1 more cup vodka. Shake until clear.
6.  Close jar and store in a cool, dark place at least
6 weeks. Aging it longer makes for a smoother,
more agreeable L'chaim. (Remove…not earlier
than _________________)
