Introduction

INTRODUCTION
Dear technician,

This service manual contains all the information you need to service and maintain a
Visual Cooking combi oven from HOUNÖ.

The service manual consists of two parts. This is part 1, and part 2 of the HOUNÖ service
manual contains the appendix of error codes, service and repair info as well as infor-
mation regarding warranty.

We recommend that you read both the manuals and familiarize yourself with the service
settings and functions of the oven. This will ensure optimal cooking and baking results
and safety.

Please make the manual available to all who service and maintain the oven and retain it
for future reference.

The latest version of the manual can be downloaded from www.houno.com.

Standards and Codes

STANDARDS AND CODES


U.S. and Canadian installations
The installation must conform with local codes, or in the absence of local codes, with
the National Fuel Gas Code, ANSI Z223.1/NFPA 54, or the Natural Gas and Propane
Installation/service Code, CSA B149.1, as applicable.
Installation/service must conform with local codes, or in the absence of local codes, with
the National Electrical Code, ANSI/NFPA 70-Latest Edition and/or Canadian National
Electric Code C22.1 as applicable.
Appliance is to be installed with back flow prevention in accordance with applicable
federal, province and local codes.

Australia and general export installations


Installation must conform with Local and National installation standards. Local
installation codes and/or requirements may vary. If you have any questions regarding
the proper installation, service, repair and/or operation of your HOUNÖ oven, please
contact your local distributor. If you do not have a local distributor, please call the
HOUNÖ Oven Company at +45 87 11 47 11.

Only use cleaning detergent that matches the specifications from the factory.

Safety Instructions

SAFETY INSTRUCTIONS
Ready for use
When the oven has been correctly installed, please read this manual carefully before
the oven comes into service.

Please make the manual available to all who service and maintain the oven and retain it
for future reference.

Always place trays filled with hot liquid in the bottom runners of the oven chamber to
avoid spilling the hot liquid on yourself when you take the tray out of the oven chamber.

Some areas on the outside of the oven may get as hot as 60°C or more. Therefore, you
should only touch the front of the oven.

Do not open the oven during the automatic cleaning process.

Do not store flammable materials around or under the unit.

When using the roll-in or trolley system, be aware of hot racks sliding out of the oven.
Use the parking brakes on the wheels to prevent trolleys from rolling away on uneven
floors.

Gas units only


All gas units must be installed under an extraction hood, that is switched on when the
oven is working.

Do not block the exhaust pipes or the area around the oven.

Failure to comply with the above instructions may increase the risk of
fire!

Locating the Serial Number of the Oven

LOCATING THE SERIAL


NUMBER OF THE OVEN
When you order parts or request service for your Visual Cooking oven, you need the
oven’s Serial Number.

You can find the Serial Number and Type information on the lower right-hand corner of
the oven’s side as shown in the illustration below.

The serial number plate contains vital information about the oven. It is described in the
HOUNÖ Installation manual.

Using the SmartTouch® Display

USING THE
SMARTTOUCH® DISPLAY
The SmartTouch® display provides a user friendly and easy way for you to operate and
interact with the Visual Cooking oven. You simply use your fingertips to perform the
operations.

Basic Operations
• To select an item, touch the button.

• To scroll through a list, drag your finger up or down.

• To return to the previous display push the arrow button in the upper left
corner.

• To change cooking function while the oven is operating, push the down arrow
button in the upper right corner.

• To save current settings and move on to the next step, push the right arrow
button in the upper right corner.

Settings Menu

SETTINGS MENU
Before you can start the maintenance process or change settings, you have to open the
Settings Menu.

• On the Main Menu, touch the gear wheel icon to enter the Settings Menu.

The settings you have access to depend on the role you have been assigned.
SuperUser Code
If start-up permission is set to User, you have to enter the SuperUser code to gain
access to the SuperUser menu.

1. In the Main Menu, touch the key icon in upper left corner.
2. In the Choose menu, touch the key icon, and then enter the code.
The code is 876412.

Technician Code
If start-up permission is set to User or SuperUser, you have to enter the Technician code
to gain access to the Technician menu.

1. In the Main Menu, touch the key icon.


2. In the Choose menu, touch the key icon, and then enter the code.
The code is 576021.
Note: The computer has been thoroughly tested by the manufacturer prior to delivery,
and the settings have been carefully reviewed. You should therefore only allow qualified
personnel to make changes to the settings. Contact your supplier for more information.

User Menu

USER MENU
You change the basic settings from the User Menu.

• On the Settings Menu, touch the User button.

Setting the Oven Light


1. To set oven light, touch Oven light.
2. Drag your finger up or down to select Continuous or 5 min., and then touch OK.

Setting the Screen Saver


1. To set the screen saver, touch Screen saver.
2. Drag your finger up or down to select the desired setting. Select how much time
elapses before the screen saver becomes active. Select Off if you do not want
the screen saver on.
3. Touch OK.

Setting the Language


1. To set the language, touch Language.
2. Drag your finger up or down to select the desired language, and then touch OK.

Setting the Setup Clock


1. To set the clock, touch Setup clock.
2. In the hour and min. lists drag your finger up or down to select the desired time.
3. In the day, month and year lists drag your finger up or down to select the desired
date.

4. Touch OK.

SUPERUSER MENU
You can access the following areas on the SuperUser display.

• Sounds

• Settings

• Adjustments

Setting Alarm Sounds


You can have the Visual Cooking oven play a sound (alarm) when certain events occur.
You have a number of options when you assign a sound to an event. It is possible to
adjust, among other things, the volume and the time elapsed between each reminder.

1. On the SuperUser display, touch Sounds.


2. To change a sound, touch the event that you want to assign a sound for. The
following events are available:
• Finished

• Recipe notification

• Racktimer finish

• Door open

• Probe missing

• Insert product

• Error

• Timer start

• Preheat done

• Set defaults (This will set all sound to factory settings).

Set the desired sound properties. For each event, you can specify the following
properties.

Sound File Used to select the specific sound from the set. You can then
test the sound by touching the Test Sound button.

Repeat To Set/determine how many times the sound sequence


should be repeated

Volume % Set the volume of the sound for that specific alarm/notifi-
cation

Repeat delay Used to specify the interval between the first and second
sounding of the alarm.

playback rate Used to specify the playback frequency at the final sounding
of the alarm.

Test sound Used to test the sound specified in Sound File.

Follow the steps above for all events to which you want to assign a sound.

Changing Settings
The following describes the settings you can change via the SuperUser Menu.

HACCP Logging
You can choose if you want the oven to automatically store and save HACCP (Hazard
Analysis and Critical Control Points) data about the preparation process, or not. If you
enable this option, you can access information about production time and duration as
well as production temperature and core temperature. The default setting is YES
1. On the SuperUser display, touch Settings, and then touch HACCP logging.
2. Drag your finger up or down to select Yes or No, and then touch OK.

Menu Start
You can choose witch start up menu is displayed when you turn on the oven. If choosen
No, the display will start up in Main Menu. Select Favorites or Recipies to start the oven
in choosen menu and then touch OK. This Menu er only applicable with enabled QSR

Start Picture
You use Start Picture to specify which display is the first display the user sees. The
default setting is Yes, which means that the first display is the Main Menu display. If the
setting is no, the first display is Manual.
Show only bake off icons
Choose between Yes or No, to disable all applications not related to bake off. Only for
BPE models.

Let’s Cook
Let you enable or disable Let’s Cook. Choose Yes or No and then OK. This menu is only
applicable with enabled Let’s Cook License.

Let’s Cook settings


Configuration of settings for Let’s Cook. This menu is only applicable with enabled Let’s
Cook Licens.

Custom Shortcut
Makes a custom shortcut in the Manual menu. Hold buttom for 2 seconds and select
between Preheat, Cool down, Proving, USB, Timer start, HACCP, Let’s Cook.

Core probe warning


Gives an alarm if core probe is missing

Incorrect Time Warning


In case the date is set as before 1/1 2018, a warning will be given when booting. Please
adjust the date and time in the User menu. Choose Yes or No to enable or disable the
warning.

Temp. unit
Choose between Celsius or Fahrenheit.

Volume system
This parameter sets up the application to Metric or US.

Hardness Unit
This parameter sets up the aplication to [0dH] or [PPM]Cook To Perfection, CTP
tolerance and CTP threshold

Sets up a function that will correct the time for each timer in Advanced Racktimer and
add time, if there is a temperature drop in the oven cavity (if the door is left open for a
short period). This is to optimize the functionality of the Advanced Racktimer.

Start Up Permission
You use Start Up Permission to specify whether the oven starts up in User or SuperUser
mode. The default setting is SuperUser.

3. On the SuperUser display, touch Settings, and then touch Start Up Permission.
4. Drag your finger up or down to select User or SuperUser, and then touch OK.

Core Temp
You use the Core Temp. setting to specify whether the oven comes with a core tempe-
rature probe. The default setting is Yes.

1. On the Super User display, touch Settings, and then touch Core Temp.
2. Drag your finger up or down to select Yes or No, and then touch OK.

Time Format
You use the Time Format setting to specify whether you want the oven to use a 24-hour
time format or a 12-hour time format. The default setting is 24.

1. On the SuperUser display, touch Settings, and then touch Time format.
2. Drag your finger up or down to select 24 or 12, and then touch OK.

Date Format
You use the Date Format setting to specify how you want the date displayed. The default
setting is DD-MM-YYYY.

1. On the SuperUser display, touch Settings, and then touch Date format.
2. Drag your finger up or down to select DD-MM-YYYY or MM-DD-YYYY, and then
touch OK.

Cooking time format


Choose between HH:MM and HH:MM:SS and touch OK.

Restart key
Sets up a function that allows the user to continue the last step of a just finished
program. None: No restart key. Display: Restart key in the front display. Both: Restart
key in the front display and on the back side (PassThrough units).Restart Time

Sets up a function that allows the user to restart time and continue the last step of the
just finished program. Time is set from 1-9 minutes.

Restart after power failure


This function sets up the oven to continue the program in case of a power failure. If the
time limit is exceeded, the oven will not resume the program.

3. No restart.
4. 10 Minutes.
5. 20 Minutes.
6. 30 Minutes.
Note: CombiWash programs and deliming programs will resume undependet the time of
power failure.

Adjustments
Cook and Hold Offset
You use the Cook and hold offset setting to specify the difference between the core
temperature and the oven chamber temperature when Cook & Hold cooking mode is
used. The default setting is 5.

1. On the SuperUser display, touch Adjustments, and then touch Cook and Hold offset.
2. Drag your finger up or down to select 3, 5 or 10 and then touch OK.
Delta-T Offset
You use the Delta-T offset setting to specify the difference between the core temper-
ature and the oven chamber temperature when Delta-T cooking mode is used. The
default setting is 20.

1. On the SuperUser display, touch Adjustments, and then touch Delta-T offset.
2. Drag your finger up or down to select a setting between 10 and 70 and then touch
OK.

Cook And Regen pulse interval


You use the Reheat pulse interval setting to specify the interval in seconds between
injections of water during the regeneration process. The injection itself lasts 1/10 of a
second. The default setting is 4 seconds.

1. On the SuperUser display, touch Adjustments, and then touch Reheat pulse interval.
2. Drag your finger up or down to select from 3s to 24s, and then touch OK.
Proving Pulse Interval
You use the Proving pulse interval setting to specify the interval in seconds between
injections of water during the proving process. The injection itself lasts 1/10 of a second.
The default setting is 20 seconds.

1. On the SuperUser display, touch Adjustments, and then touch Proving pulse
interval.
2. Drag your finger up or down to select from 12s to 44s in intervals of 4, and then
touch OK.

External Vent timeout


External vent timeout, is used for adjusting the external ventilation after operation.
1. On the SuperUser display, touch Adjustments, and then touch External vent timeout.
2. Drag your finger up or down to select the preferred time between 0 minutes and 60
minutes, in five minutes interval.

Calibrating the Oven Door Sensor


You use the Calibrate setting to calibrate the oven door sensor. The oven door sensor
has been calibrated prior to delivery, but we recommend that you calibrate the oven
after the oven has been installed in its proper location and/or when the CPU has been
replaced.

If you have a PassThrough oven with both a front and a back door, you have to calibrate
both sensors.

The measurement is an internal value that expresses the distance between the magnet
and the sensor.

Starting the Oven Door Calibration Process


1. On the SuperUser display, touch Calibrate front door, and follow the instructions.
2. On the Calibrate front door display, you can see the status of the door.
3. Close the door so that the door status is Closed, and then touch Press when door
closed.
4. Open the door so that the door is in the first step open position and then touch Press
when door open.
Note: The actual values must be minumum 10 and maximum 100. The value must be >20
between closed door and open in 1st step, to save the calibration.

Calibrating ClimaOptima Auto Humidity

Warning: Before you begin the calibration process, take the following
precautions: The oven have to be dry and at ambient temperature.

Starting the ClimaOptima Calibration Process


1. On the Super User display, touch Calibrate auto humidity. Calibrate ClimaOptima is
displayed.
2. Touch Start to begin the calibration process.

You use the Calibrate auto humidity setting to calibrate the ClimaOptima humidity
sensor. The oven has been calibrated prior to delivery, but we recommend that you
calibrate the oven after the oven has been installed in its proper location.

Calibration is Required After the Following Events:


• The CPU board has been replaced.

• The differential sensor has been replaced.

• The fan wheel has been removed and mounted.

• The fan wheel has been replaced.

• The filter housing has been replaced.

• After service.

• The oven must be dry

• The ovens start temperature must not exceed 40°C/104°F.

Do not interrupt the calibration process, and do not open the oven door. If the
calibration process is started by mistake, turn off the oven.

Logs and Statistics


You can use the logs and statistics to see which processes failed and when they failed.

Fault Log
The Fault log displays the latest active errors in a list with the most recent error on top.

1. On the SuperUser display, touch Logs and statistics, and then touch Fault log. The
fault log is displayed.
Fault Statistics
The Fault statistics list displays a list of all error codes, the number of times each error
code has been displayed, and the date the error code was last displayed.

1. On the SuperUser display, touch Logs and statistics, and then touch Fault statistics.
The fault statistics list is displayed.

2. To clear the fault statistics list and the fault log list, touch Reset, and then touch Yes.

Service Counters

The Service Counters list displays how often a component has been activated and for
how long.
1. On the Super User display, touch Logs and statistics, and then touch Service
counters. The service counter list is displayed.

Energy meters
Displays information of the total and trip power consumption. Trip counters can be reset.

Water meter
The water meter function is used to display and set up the amount of water consumed
and set up the Hydro Shield water filters.

1. Total counter displays the amount of litres consumed.


2. Trip counter displays the amount of litres consumed since last reset.

Filter
1. Hardness setting of the inlet water, so the CPU can calculate the capacity of the
Hydro Shield water filter.
2. Filter alert is a function that will alert the user at 80% used capacity of the filter,
reminding the user that the filter needs to be replaced in the near future. New
filters can be purchaged at www.hounoshop.com
3. Filter changed resets the counter when the Hydro Shield filter has been replaced.
Note: Remember to press Filter changed, when the water filter has been replaced.

Chemicals
LEVEL WARNING: This function will monitor the amount of detergent and rinse aid used
and calculate the amount left in the canister after every washing cycle. This is to prevent
the CPU from running the pumps without fluids, which will damage the pumps.

If a user starts a washing cycle that demands more rinse aid or detergent than there
is left in the canister, the user will be notified and encouraged to replace the canister
before starting the requested washing cycle.

3. Reset the level monitor, when canister has been replaced.

USB System report


This function will store a datalog of events onto a USB-stick.

Read more about the functionalities in the user manual.

The oven ID and the serial number must be sent to HOUNÖ with the request to enable
any of the four special functions.

The test functions are useful for fault finding. You can test the following functions:

Technician Menu

Oven test
1. On the Technician display, touch Test functions, and then touch Oven test.
2. Touch the Main contactor and then each button in turn to test the functions. The
button turns green if the component is active.
3. At the bottom of the display, the status of the input functions is displayed.

Value Description

Door 1 Displays whether the door is open or closed. Door 2 is only


displayed if the oven is a PassThrough oven.

Oven temperature Displays the current temperature in the oven chamber.

Drain temperature Displays the current temperature in the drain.

Exhaust Displays whether the exhaust is open or closed.

Testing the Fan


1. On the Technician display, touch Test functions, and then touch Fan test.
2. Activate the Main contact and touch each button in turn to test the fan. The status
of each function is shown at the bottom of the display. The button turns green if
the component is active.

Value Description

RPM Displays fan revolutions per minute.

ACC. Displays the acceleration time.

Press sens. Displays the voltage of the ClimaOptima sensor

Output for frequency Controls fan speed.

Technician Menu

Steam test
1. On the Technician display, touch Test functions, and then touch Steam.
2. Touch Empty to empty the steam generator, and then ensure that the displayed
Level value is Low.
3. Touch Fill to fill the steam generator, and then ensure that the displayed Level is
High.
4. Slide the water level bar to the left or right to set the level, which should be between
the Low and High level values. The default value is 75.

Value Description

Generator temperature Displays the current temperature of the steam


generator.

Level Displays the water level as High or Low.

Sensor input Reads the value from the sensor. The value changes
depending on whether the level has been set to high
or low.

Set level (50-80) Sets the water level. The default value is 75. A low
value is normally around 80. The value depends on the
quality of the water.

CombiWash
1. On the Technician display, touch Test functions, and then touch Wash.
2. Touch each button in turn, to determine whether the detergent and rinse aid pumps
are working properly. The Water button tests whether the solenoid valve is
working properly.
Note: The water pressure must be between 2.5-6 bars when using CombiWash.

Value Description

Water pressure Displays Yes when the water pressure is ok and No


when the water pressure is low.

Miscellaneous test
1. On the Technician display, touch Test functions, and then touch Miscellaneous.
2. Touch External vent, to test if the external ventilation is working. The outlet is named
terminal no.2. When external ventilation is activated, the outlet is active during
program performance and (by default) until 10 minutes after the program has
completed.
3. Touch Restart lamp, to test that the restart lamp is active.
4. To test the probe, you can place the probe in hot water or ice water and read the
temperature.

Value Description

Core 1 temperatures Displays the temperature of each of the 3 sensors


in the probe.

Restart button Displays the status of the restart button. Should


switch from Off to On when you touch the Restart
button. The button is located on the backside
on the oven. The button is only available on
PassThrough ovens.

ClimaOptima sensor Displays the voltage of the pressure sensor. The


value is between 0 -5 volts.

IO temp. Displays the temperature of the IO board. The


temperature increases if the cooling fan is broken
or the filter is blocked.

CPU temp. Displays the temperature of the CPU board. The


temperature increases if the cooling fan is broken
or the filter is blocked.

Important note: External ventilation only control the voltage and therefore they must
be connected through an external relay with a maximum voltage of 24V.

Alarm Test
This function tests the thermo-switch circuit.

1. On the Technician display, touch Test functions, and then touch Main alarm.
2. Touch Main contactor. If all status values are displayed in green and the status is On,
it indicates that the alarm is working properly. If a value is displayed in red and
the status is Off, a fault has occurred.

Value Description

24V Displays whether the alarm is on or off. if it is off, check


the 24 Volt supply.

Fan Displays whether the alarm is on or off. if it is off, check


the thermo switch on the fan motor.

Oven Displays whether the alarm is on or off. If it is off, check


the thermo switch in the oven cavity

Generator Displays whether the alarm is on or off. If it is off, check


the thermo switch in steam generator.

Solid State Relay Displays whether the alarm is on or off. If it is off, check
the thermo switch at the SSR

Testing the Gas Functions


The gas test functions contains controllable functions and status information.

1. Pressing the Main Contactor will engage the main contactor.


2. Pressing the button Oven Fan will start the fan in the oven cavity.
3. Pressing the Automatic Water Level will activate the preparation procedure for the
boiler to prepare it for test. When activating the preparation of the boiler, the
button Automatic Water Level will turn yellow. The boiler will empty and then fill
with fresh water. After this procedure the button will change colour to green, and
the boiler is ready for test.
4. Pressing either Heater 1 or Heater 2, Generator will choose which specific burner
needs testing.
5. Pressing the Gas Control will activate the gas control box and prepare the heating
cycle.
6. Pressing the Gas Reset will reset the gas control box in case of error.
7. Pressing Adjust fan speed and sliding your finger up and down will set the fan speed
from 0% (Minimum fan speed) to 100% (maximum fan speed).

RPM to MAX RPM. 0% = Min and 100% = MAX RPM.

The Minimum and Maximum RPM is automatically set


up when the oven size and the model is set up in the
oven setup menu.

Fan speed Displays the requiested fan revolutions per minute and
the actual fan revolutions per minute.

Running the burners in test function

Warning: Do not start the oven cavity burners without the oven cavity
fan running and the oven door fully open.

If this procedure is ignored, the heat exchanger will become very hot. This might damage
the cavity/heat exchanger and result in deformation.

It is possible to start up an oven cavity burner for shorter periods of time without the
oven cavity fan running.

This may be done to enable the technician to hear noises and sounds from the burner
system and only for a troubleshooting purpose.

1. Press the Main Contactor to engage the main contactor.


2. Press the button oven fan to start the fan on the oven cavity.
3. Press the Automatic Water Level to activate the preparation procedure for the
boiler to prepare it for test. When activating the preparation of the boiler, the
button Automatic Water Level will turn yellow. The boiler will empty and then fill
with fresh water. After this procedure the button will change colour to green, and
the boiler is ready for test.
4. Press either Heater 1, Heater 2 or Generator to choose the specific burner that
needs testing.

5. Press the Gas Control to activate the gas control box and prepare the heating cycle.

6. Press the Adjust fan speed and set the 0% to 100%, depending on the needed RPM.
7. The CPU will start a heating cycle. The CPU will automatically speed the gas fan up to
the start RPM. When the gas control box detects a steady flame, it will adjust the
gas fan RPM to the selected % fan speed.
8. Pressing the Gas Reset will reset the gas control box in case of error.

Touch test
Touch display test is a function that can detect dead spots in the touch module of the
touch display.

Press a finger to the screen and drag it in any direction and it will leave a mark, in form
of a line following the finger.

It is possible to see delay or markings, that are not related to the finger being dragged
across the screen.
To leave the touch test, press the on/off button or the numbers in the corners in the
following order: 1, 2, 3, 4.

Changing the Oven Set-up


Oven serial number Input
Enter the serial number as it is displayed on the type plate the lower right-hand corner
of the oven’s side as shown in the illustration.

Note: This is only when CPU have been replaced.

Heating System
1. On the Technician display, touch Oven setup, and then touch Heating.
2. Slide your finger up or down to select Electric or Gas LPG, GAS LPGB, GAS G20
Pr, GAS G25, and then touch OK. You can see whether the oven is a gas or an
electric oven on the serial plate located on the oven exterior on the bottom right
side.

OEM
OEM function is for the private label customers. Standard setting is HO (HOUNÖ)

Oven Type
1. On the Technician display, touch Oven setup, and then touch Oven type.
2. Slide your finger up or down to select the correct oven type: BPE, CPE, or KPE, and
then touch OK. You can see the oven type on the serial number plate located on
the oven exterior on the bottom right side.

Oven Size
1. On the Technician display, touch Oven setup, and then touch Oven size.
2. Slide your finger up or down to select the correct oven size, and then touch OK. You
can see the oven size on the serial number plate located on the oven exterior on
the bottom right side. Size number with an S in front indicates a CombiSlim unit.
NOTE: Specifying the oven type and the oven size will automatically set up the Minimum,
Start, Maximum RPM of the gas fan(s) if a gas heating system is chosen.

On - when using water and On - All functions

Auto humidity

1. On the Technician display, touch Oven setup, and then touch Auto humidity.
2. Slide your finger up or down to select Yes or No. Select Yes to enable ClimaOptima
and No to disable ClimaOptima.
Note: Only applicable if sensor is avaliable

PassThrough Oven

Use this function to specify whether the oven is a PassThrough oven that can be loaded
and unloaded both from the front and back.

1. On the Technician display, touch Oven setup, and then touch PassThrough.
2. Slide your finger up or down to select Yes or No. Select Yes if the oven is a
PassThrough oven and select No, if the oven only has 1 door.

This function switches on the output for the display on the back side of the oven if using
a PassThrough model.

Delime
NOTE: This function is only used in those cases where the HOUNÖ Hydro Shield is not
fitted to the water supply connection.

Function Description

1. Delime program has two functions

1. Delime: Press to start a delime program to remove the limescale


from the boiler. Follow the instructions on user panel

2. Delime flush: Press to remove any chemical leftovers after a de-


lime program interruption.

2. Auto delime (pump)


Yes: If the oven has a delime pump.
No: if the oven does not have a delime pump.

3. Delime interval: Sets the time between delime notification


(OFF-30H-60H-90H)

Forced Wash
This function will set up the interval between forced CombiWash, an alarm will be
displayed. Available options: OFF, 2 Minutes, 30H or 40H. The oven can not be used
before a cleaning cycle have been performed.

Gas Settings
On the Technician display, touch Gas settings. You can now change the speed of the gas
air control according to the gas type that is being used. For more information, See Gas
Burner Settings. Setting up the size and model will automatically setup the RPM setings
in this menu.
1. Gas 1: Smaller ovens with one gas fan: 1.06, 1.10, 2.06, 2.10 and larger ovens with
two gas fans: 1.20, 2.20.
2. Gas 2: Larger ovens with two gas fans 1.20, 2.20.
3. Gas 3: Gas burner for steam boiler.

Setting Description

Off delay on door open Choose between Off - 10s - 20s - 30s. When opening
the door the gas burner will be turned off. Unless this
value is set to e.g. 10s. Then the burner is reduced to a
minimum but remain active for 10s. If the door is closed
prior to this the burner return to normal speed.

Gas box type Touch Gas Box type and slide your finger up or down
to select the right Gas Box type. Ovens with Type I gas
systems have serial number XX XX 6XXXX. Ovens with
Type II gas systems have serial number XX XX 9XXXX.

Min speed gas 1 Touch Min speed gas 1, and the slide your finger up or
down to select the preferred value, and then touch OK.

Start speed gas 1 Touch Start speed gas 1, and the slide your finger up or
down to select the preferred value, and then touch OK.

Max speed gas 1 Touch Max speed gas 1, and the slide your finger up or
down to select the preferred value, and then touch OK.

Min speed gas 2 Touch Min speed gas 2, and the slide your finger up or

Making Temperature Adjustments


Use this function to adjust the oven or the core temperature offsets. This is useful when
the temperature should correspond with the temperature of a 3rd party probe. The
default setting is 0.

Adjust the Oven Temperature


1. On the Technician display, touch Adjustments.
2. Touch Oven temp offset.
3. Slide your finger up or down to select the preferred offset. You can adjust the
temperature offset up or down by 10°C (50°F) in 1°C increments.

Adjust the Core Temperature


1. On the Technician display, touch Adjustments.
2. Touch Core temp offset.
3. Slide your finger up or down to select the preferred offset. You can adjust the
temperature by 1-degree increments.

Adjust the sous vide temperature


1. On the Technician display, touch Adjustments.
2. Touch Core temp sous vide offset.
3. Slide your finger up or down to select the preferred offset. You can adjust the
temperature by 1-degree increments.
Detergent Conversion
The default setting for this parameter is 24ms.
If the value is changed it will affect the Detergent level warning function.
Rinse Aid Conversion
The default setting for this parameter is 18ms..
If the value is changed it will affect the Rinse level warning function.

Update platform
Software download and installation on USB
This function will update the software version in the CPU to the latest version to opti-
mize the functionality and performance of the oven.
The latest software version is available on our webpage at WWW.HOUNO.COM

Tool needed: 1 USB stick or 1 Micro SD card (Min. 1G).


Note: The USB key does not necessary have to be a HOUNÖ USB key. It can be any USB
key of good quality.

There are three different procedures depending on the already installed software.

SW VERSION PROCEDURE

SW versions Manually back up recipes and settings. SW update needs to be


lower then done with a MICRO SD CARD. ClimaOptima and door sensor need
1_1_40 calibration after the software update.

SW versions Manually back up recipes and settings. SW update can be done


between 1_1_40 with a USB STICK. ClimaOptima and door sensor need calibration.
and 1_1_57
From SW version Automatically takes back up of recipes and settings. SW update
1_1_57 and can be done with a USB STICK. A backup of the ClimaOptima and
forward door calibrations will be created.

Verify the oven recognizes the USB key prior to performing the SW update:

• Insert the USB key in the USB slot in the bottom of the front panel.

• Go to the Advanced Menu, select USB and enter in the “Export recipes” menu.

• Export a recipe. If the export fails or does not start at all, the USB cannot be
used. Try another USB key. If the export is successful within a minute, the USB
can be used – proceed to the next step

• Mount your USB key in your PC.

• Go to www.houno.com, go to the Login section and login using the password.


Scroll down to find “Software”

• Click on the file you want to download; the version that match the oven. We
recommend downloading it to a seperate folder (desktop).

• Wait until the download is complete. This may take several minutes dependent
on your Internet connection speed. When the download is completed, it may
look like this in Windows 10 and Chrome: now the file is downloaded.

• When the download is complete, run the program by double clicking on the icon.
Windows may present a warning depending on your setup:

• Press NEXT to continue the installation procedure.

• The program will now guide you through the creation of the USB key.

• Verify the version stated correspond to the expected version from the
homepage. In this case “1_3_4”. Press Next.

• Select the drive letter of the USB key. Use the “Browse” button to find the
correct drive letter. This could e.g. be “E:\”/“F:\”/ “H:\”.
Important: Make sure NOT to select the harddrive of the PC, e.g. “C:”.

• The installer will copy the files to the USB Key – this will take a while. When it is
complete it should look like this:

• Press Install when the correct destination is chosen.

• When the installation tool is finished, press “Close” and unmount the USB key
from the PC. Follow the steps in the next chapter in order to install the new
version on the oven.

Platform update with USB key


• Mount the USB key in the oven to update.

• VERY IMPORTANT: REMEMBER TO BACKUP!


If the current version is older than 1_1_57 all settings and programs will be lost
after a platform update, and you must do this manually.

Make an “Export backup” and an “Export recipes” (Advanced, USB, Export


backup, Export recipes) before the platform update to preserve settings
and recipes.

If current version is 1_1_57 or newer this will be done automatically and you do
not need to worry about this.

• Start the update. Key in the Technician code (576021), Touch OK.

• Go to Technician menu. Select “Update platform.

• If the current version is older than 1_1_52 the update is divided into 2 parts.
Select first “Import new platform” and select “Yes” to the warning, data is read
from the USB stick. Then select “Start update” and “Yes” to the warning, now
the update takes place.

• When the update procedure is started, it will automatically update to the SW


version that is avaliable on the USB stick. The update procedure should not
be interrupted. The avaliable update will take a few minutes and the oven will
restart after the procedure has ended.

• When the software has been successfully installed, the oven asks for a confirmation
on retrieving the settings, recipes and customer images from auto backup. If this is
rejected the oven will return to default setting without recipes.

• After a successful SW update, the oven needs to be restarted.

Platform update with SD card


When updating the platform and application with a SD card, the front panel and cover
must be removed to get access to the card slot.
The software for the SD card can be obtained in the same way as for the USB key.

IT IS VERY IMPORTANT THAT YOU REMEMBER TO TAKE A MANUAL BACKUP OF


SETTINGS AND RECIPES!

Because all settings and data are lost after a platform update, it is recommended
to make a backup of all settings: Switch on the controller, insert an USB key, go to
“Advanced”, “USB”, “Export Setup”. Please note, if the current version is very old (before
1_1_28) it will not be possible to retrieve the setup data.

• Retrieve the settings and recipes from the USB


stick, if this files are available. If not, the settings
need to be set up according to the model and
size (see explanation on setup on page 33-37).
The ClimaOptima and the door sensor must be
calibrated again.

• Software has been successfully updated.

Enabling Demo Mode


When you want to use the oven for demonstration purposes, you should enable demo
mode. When demo mode is enabled, the heating elements and the steam generator will
not be switched on when the oven is running.

1. On the Technician display, touch Demo Mode.

3. Application will restart if demo mode is started.

CLEANING
Daily cleaning of the oven is recommended for hygienic reasons and to avoid interrup-
tions of operation.

The design of the HOUNÖ ovens allows quick and easy cleaning. The oven chamber is
made of all-welded stainless steel, which makes it splash proof. You will therefore find
the easy-to-use handshower, which is located under the front panel, very suitable for
interior cleaning.

The door sealing is easy to remove, which ensures quick and efficient cleaning under and
around it.

Furthermore, the flat front panel makes exterior cleaning simple and efficient.

To give the oven an extra shine, we recommend HOUNÖ Steel Care Steel Oil, which is
available at www.hounoshop.com

Cleaning the oven chamber


Use CombiWash and choose between Flush, Light, Medium, Heavy or Intensive wash.

Note: CombiWash cannot be retrofitted; it can only be installed as an optional extra


when the oven is produced. Therefore CombiWash should be ordered together with
the oven.

See Description of Functions in the User manual, or do as follows:

• Always clean in a cold oven or cool the oven chamber down to below 80°C.

• Let the oven run in CombiSmart at 80°C for 15 minutes.

• Apply HOUNÖ PROTECT oven detergent to the sides of the oven chamber, racks,
etc. (according to need), using a soft brush or a spray pistol. Protect your face
and hands as the detergent may cause irritation should it come into contact
with your skin.

• Let the detergent work for 10 minutes. Let the oven run in CombiSmart at 80°C
for 15 minutes.

• Rinse the oven chamber with water (using a soft brush or the handshower
(optional extra).

• If the oven is not connected to a soft-water plant, we recommend that you use
HOUNÖ PROTECT Rinse Aid and wipe the oven chamber with a dry cloth.

Cleaning

Cleaning the Oven Exterior


1. Use a soft, damp cloth and a liquid detergent to clean the oven cabinet on the
outside,
2. Remove the door sealing to clean under and around the door.
3. Treat the surface with HOUNÖ Steel Care Steel Oil to protect it. The steel oil is
available at www.hounoshop.com
Note: Do not use a water hose or high-pressure cleaner to clean the oven exterior since
it may damage parts of the oven including electronic components.

Cleaning Behind the Filter Housing


You have to remove the Baffle plate to be able to clean around the fan and the heating
elements.

1. Loosen screws (A) and (B).


2. Turn the filter housing and clean behind it. You dismount the filter housing by lifting it
upwards until it is clear of the pin at the bottom and then tipping it.

Cleaning the Jet Heads


You have to clean the jet heads regularly, when you have used CombiSmart and
ClimaOptima. The Visual Cooking oven comes with two sets of jet heads. While you clean
one set, you can replace them with the other.

1. Unlock the screws to dismount the jet heads.


2. Soak the jet heads in descaling solution overnight.
• The jet head for steam (ClimaOptima and CombiSmart) has the notch facing
downwards (long tube).

• The jet head for CombiWash is located to the right or above the other jet
head. It has the notch facing upwards (short tube).

Cleaning

Cleaning the Filter


The filter is located below the control compartment in front of the spray hose.

You have to unscrew and clean the filter under the front panel on a weekly basis. You
can clean the filter manually or in a dishwasher.

Important: If the filter is not cleaned, the computer or other electronical parts may
overheat and the oven will fail. You must remount the filter after it has been cleaned.

Frequency inverter

FREQUENCY
INVERTER
When replacing the frequency inverter, always check that the frequency
inverter potentiometers and dip switches are set up correct. To gain
access to the potentiometer for adjustment: open the small transparent
hatch with a small screwdriver, as shown in the drawing.

ADJUSTMENT OF THE 3 POTENTIOMETERS OF THE FREQUENCY INVERTER


Motor i nom This potentiometer controls the current output of the frequency
inverter.
This potentiometer must be set to 100%

ACC/DEC This potentiometer controls the acceleration and deceleration of the


main fan motor in seconds.
The potentionmeter must be set a few degrees past 5.
It is very important that the acceleration of the fan is 10 sec. +/-1

If the acceleration is to fast the invert might be switching off due to
overload. Too slow will result in error 14.

replacement on equipment that is connected to a pressurised gas
supply line.

system Type II.
All HOUNÖ gas ovens are equipped with a closed gas burner systems. Our closed heat-
ing system contains Honeywell gas control box and a heat exchanger that delivers the
heat to the oven cavity, and to the water in the steam generator.

The ignition system for the cavity gas system is withe an ignition rod that will deliver a
spark to ignite the gas air mixture. This system will give a distinguishable buzzing sound
when igniting.

The ignition system for the steam generator ignites the gas air mixture with a glowtread.
Therefore there is no sound when the ignition is in progress.

When testing the gas functions always open the oven door fully and activate the cavity
fan to cool down the heat exchanger.

Some safety functions are disabled in the test function. Therefore,


always monitor an oven running in test mode.

GAS HEATING CYCLE EXPLANATION

A heating cycle contains several different steps. Here is a step by step description of the
heating cycle.
User selecting a function
1. When a user starts a manual or a recipe function that demands heat, the CPU sends that requires heating
a digital signal to the Honeywell gas control box that it needs to start a heating
sequence.
2. The gas control box then starts the gas fan, and speeds it up to the start RPM.
3. When the gas control box receives a RPM signal for the gas fan, which indicates that
the fan speed is at start RPM, the gas control box begins the ignition. You will
hear the ignition as a steady buzzing sound.
4. After 3 seconds of ignition, the gas control box will open the gas valve and let gas mix
with air, and flow in to the combustion chamber.
5. The air gas mixture will be forced into the combustion chamber by the gas fan, where
it will be ignited by the spark from the ignition rod.
6. When a stable flame is present, the gas control box uses the flame detection rod to
detect the steady and stable flame.
7. When the temperature in the oven cavity approaches the set temperature, the gas
fan speed will be reduced to the minimum RPM setting. This will reduce the
combustion temperature. The reduced combustion temperature will minimize
the temperature overshoot in the oven cavity. And the oven will have a more
stable temperature in the oven cavity.
8. When the temperature in the oven cavity reaches the cavity set temperature, the
combustion flame will be terminated. The gas control box closes the gas valve.
9. When the temperature drops below oven set temperature in the oven cavity, the
cycle will be repeated.

NOTE: The gas heated steam generator does not have a spark ignition. The combustion
is ignited by a glow thread, which is located inside the combustion chamber of the gas
heat exchanger for the steam generator.

GAS-AIR MIXTURE
ADJUSTMENT
All HOUNÖ gas burners need to have the gas air mixture adjusted at set up, and we
recommend that it is checked and adjusted as needed, or on a yearly basis.

Always start with a gas leak check of the hoses and components
in the gas burner system before activating the combustion.
Always use a detection tool or spray leak finder, which is ap-
proved by local rules and regulations.

The gas air mixture must be adjusted using a fuel gas analyser that can detect the
amount of O2 and CO in the combustion exhaust.

All detection tools must be approved by local rules and regulations.

HOUNÖ recommends the following flue gas analyser and gas detector: Econ CN-P
and Econ LSG. You can order the flue gas analyser and gas detector from HOUNÖ by
ordering spare part no. 32720027.

Note that the default language of the gas analyser is English.

The gas-air mixture must be adjusted at maximum and at minimum RPM of the gas fan.
Adjusting the mixture at minimum RPM will inflict the maximum RPM mixture and vice
T40
T40 versa. It is therefore necessary to shift between the maximum RPM adjustment and the
minimum RPM adjustment several times. This procedure must be repeated until the
mixture is correctly adjusted.
Tools needed to adjust the air gas mixture.

1. Minimum RPM mixture adjustment screw is a tork size T40 screwdriver.

driver, as shown in the picture on the right, to
gain access to the minimum RPM mixture
adjustment screw.

Use technicians code 576021 to enter the technician’s menu, select test menu and gas
test.

NOTE: To prevent the oven from tripping the oven cavity overheating safety in test
mode, it is important to activate the main fan and open the oven door to lead the
heat out of the oven, during the adjustment procedure.
Use the gas test menu to select and start up the individual gas burner for the gas air
adjustment procedure.
The gas-air mixture must be adjusted at maximum and at minimum RPM of the gas fan.

0% will speed up the gas fan to minimum gas fan RPM.


The minimum gas fan speed parameter is automatically set up, when the oven type and
size have been selected in the oven setup menu.

100% will speed up the gas fan to maximum gas fan RPM.
The maximum gas fan speed parameter is automatically set up, when the oven type and
size have been selected in the oven setup menu.

Gas-Air Mixture Adjustment Step-by-Step Description


• Press the button Main contactor to engage the main contactor.

• Press the button Oven fan and open the door. This is to prevent the oven from
tripping the oven cavity overheating protection.

• Press the button Heater 1to select the burner that needs a gas-air mixture
adjustment.

• If Generator is selected press the Automatic Water Level button, and wait until
the button changes from yellow to green, then the boiler is ready for test. The
water level will automatically adjust to high level. The steam generator test
cannot be started unless the water level in the burner is at high level.

• Press button Gas Control to start the ignition/combustion cycle. The CPU will
automatically speed up the gas-fan RPM to the start RPM.

NOTE: The MINIMUM, START and MAXIMUM RPM are automatically set up when size
and model are set up in the Oven setup menu.

O%= Runs the gas-fan at minimum RPM


100% = Runs the gas-fan at maximum RPM

• Press the % button/scroll function and set the RPM to 100%. The % button allows
the technician to control the gas-fan RPM

• Place the gas fuel analysing tool in the exhaust after a few minutes of steady
combustion. This procedure is to make sure that the heat exchanger has reached
operating temperature.

maximum RPM. Use a 4mm Allen key to adjust the minimum O2 level in the
exhaust. This should correspond with the model and size in the matrix on page
68-70.

• Press the % button and scroll down to 0%, to reduce the RPM of the gas-fan to
minimum RPM. Use a T40 torque screwdriver to adjust the minimum O2 level in
the exhaust. This should correspond with the model and size in the matrix on
page 68-70.
