Ingredients:

For the crepe

 50 grams plain flour, sifted


 1 tbsp potato starch, sifted
 1 egg, lightly beaten with fork
 2 tbsp finely granulated sugar
 3 tbsp melted butter
 160 ml water
 40 ml fresh milk
 1 tbsp vanilla essence
 1 drop of yellow food colouring

For the filling

 Sufficient durian portions, de-seeded


 150 ml fresh cream, whipped
Method:
1. Mix all of the ingredients together for the crepes in a large bowl until consistent.
2. Heat a medium nonstick frying pan and pour the crepe mixture evenly into the pan to form a thin layer.
3. When crepe has set, flip to cook both sides.
4. Remove crepe from pan, and put the filling onto the middle of the crepe.
5. Fold four corners of the crepe over the filling to make a parcel shape and turn over.

A) Bahan-bahan untuk lempeng/kulit


o 250gm tepung gandum

o 500ml santan

o 2 biji telur

o 1 sudu kecil esen vanilla (optional)

o 1/2 sudu kecil garam

o Pewarna (ikut suka, saya sarankan warna Kuning Telur/Egg Yellow)

B) Bahan-bahan untuk inti/filling


o 1 cawan Whipping Cream (pukul sehingga kental)

o Isi durian yang telah dilenyek.

Cara penyediaan
1. Campur semua bahan A kemudian blender. Kemudian tapis adunan supaya tidak berketul-ketul.

2. Panaskan non-stik pan dengan api yang kecil.

3. Tuang satu senduk adunan dan ratakan hingga menjadi crepe/lempeng yang nipis. Masak sebelah saja, bila
bahagian atas kering, angkat dan biarkan sejuk.

4. Bentangkan sekeping crepe dan letakkan whipping cream di tengah-tengah. Letak isi durian atas whipping
cream dan tutup semula dengan whipping cream. Akhir sekali lipat crepe untuk membentuk bantal.

5. Simpan di dalam peti sejuk sebelum dihidangkan.

砂糖 30 克

低筋麵粉 160 克
液體菜油 25 克
斑蘭精(選用) 1 茶匙

餡料
淡忌廉 500 毫升
砂糖 20 克
芒果 1個
香蕉 1隻
榴槤肉 適量

工具
細平底鑊(直徑約 25cm 或更小) 1個

Ingredients
75gm All Purpose Flour
19.50gm Sugar
15gm Egg Yolk
180gm Fresh Milk
4.5gm Butter
300gm Durian Paste
300ml Fresh Cream
90gm Eggs

Preparing the durian paste


1. Pre-prepared the flesh durian by having the fresh durian frozen or use fresh durian flesh.

Preparing the fresh cream.


1. Whip the fresh cream to stiff peak.

Preparing the pancake batter


1. Melt the butter and allow it to cool.
2. Mix sugar and flour into a mixing bowl mix it. Add in the egg yolk and continue mixing.
3. Add in fresh milk bit by bit, combining all ingredients together.
4. Lastly, add in the melted butter.

Pan frying the pancake


1. Heat up the pan lightlly. Make sure that the fire is low.
2. Scoop pancake batter and put it in the lightly heated pan, swirl it to ensure that the pancake is smooth, thin and even.
3. Pan fry the pancake one minute on both sides.
4. Remove pancake from pan and lay it out flat on the table to keep cool.

Wrapping the pancake


1. Apply fresh cream on the pancake skin, followed by a table spoon of durian paste.
2. Fold the pancake into half a moon.
3. Trim the sides and you have a durian pancake ready.
4. Best to serve cold. Enjoy!
