These facts about chilies are no less thrilling than their taste

Chili and black pepper - both are pepper. Why?

Is there any resemblance between chili pepper and black pepper? No, not even in the wildest of the
imagination. Then why they both are 'pepper'. It's because Columbus located South America, he
confused chili with black pepper and termed it 'Chile pepper'.

Why is Mexican food so spicy?

Sometimes name fails to explain the logic. But it's ok, history comes to the rescue then. There're not just
genes in the blood of Mexicans, there's chili too. They have been using this food since 7000 BC.

The politically correct spelling of Chili

There is great uncertainty in the orthography of the chilly. In the United States of America, it is called
chile or chile pepper; in England, it is known as chilly or chili; and in India, it has numerous names chilly,
or mirchi (Hindi), marchu (Gujarati), and molzhukai (Tamil).

Fishes could not feel pungency of the chilly because they do not have pain receptors. Chilies belong to
the same family as tomatoes and potatoes.
India and chili - Like water and fish

Most of the non-Indians recognize Indian cuisine as full of chili and spices. In fact, the hottest chilly
'Naga Jolokia' in the world is found in Tezpur in our country. Not just that, our nations is the largest chili
producer in the world as well. A flavorful desi gravy has to have the 'Mirchi' after all!

And, as a dessert, in the end, let's give you another interesting fact, a fish cannot feel the pungency of
chili as it doesn't have pain receptors. Hope, our discussion ended on a sweet note :)

May you ignore these reasons to order from Chowki

How are you feeling? Had a tiring day? Don't be so rude to make yourself slog more. Order food. But
from where? The most common option is that regular food chain in your area.

Most probably it would have something made with cheese, say a pizza or a burger. So this sort of food
has to contain cheese, or 'processed cheese' in precise words. As a matter of fact, this processed or
pasteurized cheese contain half real and rest is the job done by chemicals. Why don't you order dal
makhani from Chowki - the real lentils and real butter?

Another 'healthy' alternative that these fast food chains offer is the salad. Before you dial the number
and order, do know that most of these food corporates sprinkle antifreeze-chemicals on the veggies and
fruits. It prolongs their longevity and freshness. So this salad is too preserved to preserve your health.
Why not you order the Subz Miloni from Chowki - a range of fresh vegetables tossed with chopped
masala in the pan.

And, in the end, if you have a sweet tooth, you would want smoothies and ice cream. Don't be surprised
to know that the food giants often bring in half the flavor with artificial preservatives. It's more
economical than using the real fruits and veggies only. But anyways its better to drop the idea of
relishing something sweet in the evening. The sugar directly gets converted into fats. Rather, go for your
all-time-favorite Murg Makhani.
And, in the end, Chowki cooks with love. So in our food, there's an extra flavor of affection!

Your food maybe addictive, confirm now.

A few months ago, a famous noodles brand was banned in the country. The reason was simple. It
contained more than prescribed amount of MSG or Monosodium Glutamate - a flavor enhancing
chemicals. That's addictive in nature too. After some time, the brand was relaunched into the market.
But, can all food containing an unhealthy level of MSG be banned? To your surprise, there are eateries
which make a use of this chemical to make a good number of customers.

The good side to it

Every coin has two sides. There are research pieces which confirm that the side effects of MSG are so
mild that they are close to negligible. The US FDA categorized this flavor enhancer as a “generally
regarded as safe” food. However, it admits that some individual may have an MSG allergy. In countries
like Japan and China, adding it to the food is a custom.

The negative side to it

Flipping the coin and throwing light on the 'negative' side - MSG is considered to have side effects too.
Some of them are Sweating, Facial pressure or tightness, Headache, Flushing, Numbness, tingling or
burning in face, neck, and other areas. But, only those who consume in more than moderation are likely
to suffer.

Thankfully, we have got other options. For example, the Chowki food. Our chefs replace MSG with love.

Here's what India can learn from this state of India

Yeah, we have read numerous articles about how unhealthy the processed food is! But, seldom we hear
that even fresh fruits and veggies are harmful to health. The reason is over usage of pesticides and
chemical fertilizers.

But, Sikkim is an example-setter. Over the past few years, this Indian state learned to grow crops
organically. Isn't it inspiring? And, this applaudable step was taken when the state is already hilly - both
the climate, as well as topography, do not favor agriculture. Pawan Chamling, the Chief Minister of the
state, introduced this agricultural movement in the legislative assembly, 2003. And the rest is history.

Sikkim has a minimal exposure to all kinds of 'technologies' that most of the Indian states enjoy. That's
also one of the reasons, this organic revolution took off successfully. You can't even imagine, how
beneficial the organic farming could be. Believe it or not, ever since the people of Sikkim have
significantly improved their general well-being, the overall health and wealth ratio and even Gross
Happiness Index.

So, you see, how food quality affects so many facets of our life. How do you think we can promote
organic farming? Share in the comments.

These two cities are called Cabbagetown. Why?

Every name says something. Especially the weird ones. You there are two cities named 'Cabbagetown' in
the world. Won't you like to know what led to this funny thing?

Cabbagetown, Toronto

The region, in the very beginning, was a farmland. You would only see a few cottages and vegetated
lands. But, gradually Irish workers inhabited the area as they were working in the adjoining industries.
The entire area gradually gained a Victorian look we see in movies. And, now comes the point. Actually,
a small section of these Irish immigrants was growing cabbage in the front lawns. The name
Cabbagetown purportedly came from stories of new Irish immigrants digging up their front lawns and
planting cabbage.
Cabbagetown, Atlanta

Among the many interesting stories behind the name of this town, we picked the most interesting and
credulous one for you. The placed initially got occupied by the humble Appalachians. They were majorly
of the Scot-Irish origin and working in the Fulton Bag and Cotton Mill (now a historical place). The
community started planting cabbages in the front of the houses. The custom grew as eating something
made out of the cabbage was affordable. Gradually, all the front yards were full of this food. The lanes
looked identical and iconic. No wonder, Cabbagetown became its official name.

Do you have any story associated with the name of your ancestral town or village? Do share with us in
the comments :)

Guess who's the cousin of Indian cuisine

Imagine you met a distant cousin and there are stunning similarities between the two of you. Now
replace the word 'cousin' with 'cuisine'. We absolutely love Indian cuisine. But, it's also a good deal to
discover a similar one and that too with a twist. So, what are the connections between an Indian and
Mexican food?

On an unexpected note, the 'mano y metate' - the grinding stone, 'molcajete' - the stone pestle and the
'comal' - griddle are found in the kitchens of both the nations. The other so 'Indian' thing about Mexican
food is the usage of chilies. Like us, they also use their fresh and dried version - both. The list of
vegetables and fruits that they use is hardly different from the Hindustani one. Chiles and pungent
spices are extensively used in the cuisines of both the countries. Well, there's some difference in the
taste, but the liquidy Mexican dishes - moh-leh and adobo (ah-doh-bohs) are analogous to the popular
Indian curry; if we go by details you see.

Tasted the Mexican rice ever? Actually, even they are very similar to the Pulao our mom cooks. Rice and
beans are not just a regular part of the Indian diet, they apply on Mexicans as well. Their salsa is our
distorted chutney; made with tomatoes, onions, and green chilies. The Mexican version of chapatis is
Wheat tortillas. They are prepared and rolled out just like the rotis you had in lunch. Even, Mexicans
wrap them and store them in some tight container to retain the warmth.
So you see, Mexican cuisine is the cousin of our Indian food. Share such interesting facts with us in the
comments.

always difficult to cook.

Broccoli and carrot stir fry with sesame: The health and taste of veggies meet the twist of sesame seeds.

gentle heat to this mixture. The dinner couldn't have been healthier.

This food you can carry anywhere, and is perfect for winters.

Lazy winters always provoke us to sleep. And, who can escape dozing off after having groundnuts in the
season? Made any successful attempt to avoid sleeping after munching these 'nuts'? Let's explore some
more interesting facts about groundnuts.

You are likely to raise your eyes after knowing that groundnut is not a nut. In fact, it's a legume related
to beans and lentils. Though, we never give groundnut a 'legume' treatment. Rather, prefer to keep
them in the pocket and munch time and again. If you had a choice between peanut and peanut butter,
we'd better suggest you go for peanut. Because there are around 540 peanuts in a 12-ounce jar of
peanut butter.

But, just because peanuts are available at affordable rates, doesn't mean they hold less value. To your
surprise, these groundnuts contain more protein, niacin, folate and phytosterols than any nut. Well,
eating them in excess might be harmful but otherwise, peanuts are naturally cholesterol free. That's why
they are recommended in the breakfast. Because heavy food if taken early in the day gets digested
early.

These reasons behind the Indian food traditions are worth

knowing.

You may be using forks and spoons in restaurants. But, India itself has certain noticeable food traditions.
And, most of them have a strong healthy significance.

Eating with hands

In Ayurveda, each finger of the thumb represents a certain element. There are five fundamental
elements - earth, water, fire, air, and vacuum in total. Hence, this habit evokes a sensory experience,
emotions, and passion. In fact, Vedic wisdom considers hands the most precious organs of action.

Food on Banana leaf

This custom is prevalent mainly in the Southern part of India. Even, ancient Hindu science regards
placing hot food on these leaves emanates several nutrients that enrich your food. Banana leaves
contain large amounts of polyphenols; a natural antioxidant found in many plant-based foods. It also
adds to the aroma of food and enhances the taste.

The Bohri Muslim community follows a tradition of eating from one huge platter called the thal. The
meal begins by sitting around the platter and passing the salt. After every family member has tasted it,
the first course is served. The entire family eats out of the same platter which should never be left
unattended after the meal has been placed. Every dish sits in the center of the thal and the members
pull out their share.

We bet you haven't heard about this type of agriculture

before.

India is the land of agriculture for it's the livelihood of our country's major population. Yet, there's so
much we Indians are still left to know. Yeah, aesthetically astounding terrace farming is exotic for a fifth-
grader. But, we need to move on and talk about an agriculture type that's even more extrinsic and
unusual. Well, let's not make you wait anymore and reveal the terrestrial fantasy that came true.

An agriculture based on astrology. How surreal is that! People typically term this crazy farming
technique as 'biodynamic farming' or 'agricultural astrology'. This method "advises the planting,
cultivating and harvesting of crops based on moon phases". In fact, people practicing this idea are
claiming their farm produce now has a way better quality.

Many experts believe that chemical farming reduces the number of seeds that can potentially be
produced. The farmers plan a calendar for the entire year. And, this calendar is based on a constellation
of the moon and other planets, the tides of the sea guided by the force of the moon and the forces of
other planets. When studied from a rational point of view, the scientists found out that eggs and other
crops planted according to the astrological chart actually tasted better and had more nutritional value.
..................................................................................

Finally, something will super-excite your taste buds.

delight the chutney are of red chilies, garlic, tamarind, mustard seeds, Cumin seeds, Curry leaves, onion,

One of the most crowded cities of India, Bombay is popular for its film studios. And, once you visit the
city, you will also remember it by its street food. No wonder people are crazy about Bombay. Read this.

Juices and Milkshakes

Start your walk down the street with a glass of juice, smoothies or milkshake. There are shops in
Bombay that have been there for decades. From coconut water to litchi juice, the youngsters often
gather here after a tiring day.

Crab

A Mumbai trip with no crab is like an Italy trip without pizza. The most exciting combo in the city is Crab
served with Roomali Rotis. Cooked with spices and smeared with butter and garlic, the rich crab
absolutely tastes out of the world with light Indian Bread.

Chhole Bhature

Well, the Punjabis of Bombay have made sure that their fellows are not deprived of this heavenly taste.
The big heart of Punjab can't ever be a miser. So, bhatura is prepared with a lot of love and oil - the sole
purpose is to create a delicious steaming bread piece in the size of a football.

Bhel Puri

Sour, sweet, salty and spicy - Bombay offers amazing Bhel Puri. The stalls of Bhel Puri are omnipresent in
the city, even during midnight.

It's a delectable mix of puffed rice, sev, chopped onion and potato, and tamarind chutney.

The world now loves Indian Cuisine. Thanks to this man.

Imagine Gajar Ka Halwa, served cold in the form of a cube. So weird and unauthentic. Isn't it? Well, but
that's how our food was transformed according to the western expectations. In fact, when a chef with
Oberoi experience wholeheartedly made the creamy and steaming 'Gajar ka Halwa', it was sent back.
The western customers used to have a very ingenuine impression about Indian foods. But that chef was
committed to change this Image. You know who was he? None other than the world-renowned
restaurateur Vineet Bhatia.

The world now loves Indian Cuisine. Thanks to this man.

Of course, it was ominous to see how drastically edited our delicious Indian dishes were! In his
childhood and teens, Chef Vineet Bhatia didn't have a second thought other than becoming a pilot. He
wasn't much of a foodie as well. But destiny has its own plans. After not being selected as a pilot, Vineet
ventured into the hospitality industry. There also, he had no keenness in fiddling with the kitchen
equipment and ingredients. He was looking forward more to attending the customers.

But, the sight of Oberoi's professional kitchen carried him away. He was impressed by the precision of
chefs. After making the Indian cuisine popular in the world, his delectably delicious ideas have now been
adopted by India. Chocolate Samosa is one such idea.

Veg food, non-veg nourishment. How?

In one of the previous blogs, we talked about which veg diet gives you enough nutriment after you hit
the gym. Let's be more specific today. Protein is the king in the non-veg diet. But with so much of mental
overwhelmingness, vegetarians are supposed to track their protein intake too.

There's also a myth my friends. Many of us believe that protein contained by a veg diet is of "lower
quality". But, on the contrary, plant-based foods also have all the "high-quality proteins".
Veg food, non-veg nourishment. How? Scroll down.

Milk, curd, cottage cheese, milk cream, almonds, cashew nuts, ground nuts, pistachio seeds, soy
products, wheat, and rice - so, you see the veg genre has enough protein-rich diet to lure you. You must
have heard this word 'amino acids'. It's basically the building block of proteins like cells are to our body.
And, there is a range of amino acids our body needs. So each of the above-mentioned foods contains a
different amino acid and thus, the quality of protein differs too.

We introduced more than a dozen of protein rich fruits to you. Reserve each for a day. And, last but not
the least, protein intake should be limited because the excess will give you a double chin. We are better
off with one!

Why a Gulab Jamun after lunch isn't a bad idea!

There's something incomplete in the lunch time. In short, we miss the 'post-meal excitement'. And,
excitement keeps the liveliness awake. Well, for us, the 'post-meal excitement' is the feeling of not able
to wait for desserts. You know those special dinners and even the weekend ones.

Why a Gulab Jamun after lunch isn't a bad idea!

- Every day is special: Why some occasions have the privilege of sugaring your taste buds and the others
not! By eating gulab jamun after lunch, its hot and sweet taste might make you as relieved as you are
during the weekends.

- It's hot and winters are cool: How much caffeinated can you be? The idea of beating summer blues
with coffee is already too customary. Be different. Choose a delicious hot dessert to warm you up for
the new office tasks.
- It's day time, calories will burn: Before you start frowning over this advice, may we tell you that you got
to work for more 4-5 hours. And, then, probably it will take you more than one hour to be back home.

A Gulab Jamun can't widen your waistline just like that.

- You need something sweet after having salty and spicy- From the veg gravy to the parathas, there's
nothing literally sweet in the food. But, the taste buds need to feel 'complete'. Fulfill their thirst, they
need a change. What else can be a tastier change than Hot Sugary Gulab Jamun?

Now, you are enough motivated to change your diet pattern for office lunch. The only worry is to find a
sweet shop around. But, wait. Lunch from one place and dessert from? Too unsorted. Visit Chowki.co.

Sizzling food with spinach, we are not kidding

How often do kids turn their heads away from eating the spinach food? But don't you think winter with
no spinach isn't justified. These seasonal leaves are pleasant for a taste change. And of course, season
food brings rare nutrients that may not be present in any other food.

Here are some recipes that would even lure those who are not fond of eating spinach.

- Spinach soup: Chop the spinach and heat it very finely. The leaves extract enough water to make the
paste thin like a gravy. Add, pepper, salt, cream and some other chopped veggies if you like. By the way,
adding garlic for a luscious flavor is a must.

- Corn spinach sandwich: Here comes the kids' favorite, your favorite and anybody's favorite! The blend
of spinach, milk cream, corn, salt and few other spices of your choice is sandwiched between two bread
loaves. In a healthier case, two whole wheat bread loaves.
- Palak paneer: The Indian-style gravy of cottage cheese and spinach is irresistible. Paneer is added to
the spinach gravy (cooked with Indian spices). Don't forget to add the milk cream in the gravy so as to
make it richer and softer in texture.

- Palak Pakoda: The hot tea visits your table several times in a cold day. Let it be more interesting. Have
spinach pakoras with it. Chop the spinach very finely and make little balls out of it. Immerse each ball in
the spiced gram flour mixture, take the ball out within no time and fry in hot oil.

So, you see. There's so much you can do with spinach. Buy a bunch after office and the kitchen is all
yours.

Non-veg - the guilt pleasure of Fat people - preserve it.

Calorie count, doctor's advice, other people's fitness, desk job - any factor can make you resist luscious
food. But, excuse us, is toothsome food always bad for our health? Well, let's be strategical and follow
the given pattern -

Definitely, if you are dwelling on chicken biryani every night then nothing can come to your rescue.
However, if your job involves decent travel, please make the tongue water during the lunch and let it
calm down after relishing a portion of chicken biryani. By using the word 'a portion', we suggest you
donate some of this heavenly food to your colleagues. That way, you relish your favorite and regular
food and that too in moderation. Ohh, another suggestion - vegetable salad should be there on the table
too. So that, after lunch, you can concentrate on the work rather than bother about the waistline
growth. The fiber content of salad absorbs a good amount of fats.

But, why are we insisting you to have your favorite food regularly, even though it is rich in fats? The
reason is simple. It's your happiness. Many research pieces prove that the foods associated with our
good memories or those containing chemicals like omega 3 acids and valproic acid are bound to give us
a happiness boost.

America is crazily foodie. These food festivals prove it all.

The Stockton Asparagus Festival: California

A competition with a difference. This event is also a good medium to raise money for the charity. One of
the activities at the celebratory festival is the eating contest, in which participants eat deep-fried

weight of the fruit.

Cheese Curd Festival: Wisconsin

Wisconsin is popular for its cheese curds recipes. And, conducting this competition is one of the ways to
relish more of this food. The festival is filled with various activities, but the day wouldn’t be complete
without a cheese-curd-eating competition. The participants are divided into certain age groups. The deal
isn't bad because winner receives a trophy and 10 dollars! Count on the trophy to decorate your living
room with pride.

World Slugburger Eating Championship: Mississippi

Do you have 3-minute to spare? Because it's urgent for the

peace of your mind.

It's not just the food. The myths associated with it can also bring a smile on your face. Be it the Bible,
Ramayana or Quran. Do you have 3-minute to spare? Because it's urgent for the peace of your mind?
Well, the upcoming story, you must have read in your childhood. A large crowd was following the Jesus
to mountains. After the sunset, it was realized that nobody had eaten anything. Philip, a disciple of Jesus
told him that his followers lacked enough money to buy the food. Andrew, another disciple, brought a
boy’s lunch to Jesus following the Lord's advice. The lunch contained a few loaves of bread and two fish.
The power of Jesus' faith and prayer worked. You see the power of faith.

In Ramayana, an 'outcaste' disciple Shabri was told by her Guru that she would join him in heaven after
meeting Lord Rama. Shabri grew old while waiting for the lord's arrival. But as and when Rama entered
her area, she offered him half-eaten berries. This was done to pick only those berries which were sweet.
Lord ate all the berries with love and blessed her to reunite with the Guru. Innocent prayer never gets
unheard.

In Quran, it's mentioned that those who fast during the holy month are leveraged with health benefits.
Such a believer would be in heaven after life on earth. The Quran text also confirms that the holy month
is of "great energy and a rested soul that pines to fast - it leads to increasing the immune system and,
thus achieving the utmost benefit of fasting". It also claims that people who fast get psychologically
tougher and calmer. Because they are able to conquer the 'temptation' of hunger to a considerable
extent.

So, each religious text illustrates a worth-knowing story or theory related to food. Weren't you
intrigued?

For those who dislike your love for spicy food, here's the
perfect answer.

There's only one absolute compensation - food. Good food kills the bad mood. And, catching a cold is
one of the most common reasons behind a bad mood. So, what's the remedy for it? The food, of course.
Thankfully Indian cuisine is blessed with plenty of herbs. Amidst the winter season, there's so much on
the plate. We naturally feel hungrier.

For those who dislike your love for spicy food, here's the perfect answer.
Black Pepper: Yes, this herb helps in warming the body. And, you have so much to experiment when
black pepper is available in the kitchen. It gives such a pleasant taste, be it the soup, pasta, Indian
vegetable gravy or pizza. You go anywhere, pepper is omnipresent!

Cardamom: Do you have an important meeting lined up? Eat cardamom and let others be not enough of
sitting near you. And, in winters, it makes more sense as cardamom is a warming agent too. How about
a cardamom tea. It's like Taste+Health.

Red Chili Pepper: Well, often this herb is 'offended' for being too spicy. A few people know that if taken
in moderation, red chili pepper is an asset to human health. Besides, it is laden with the warming effect.
So, once in a blue moon, you can relish your favorite honey chili potatoes.

But, when you can afford to have something much healthier (without compromising with the spicy
punch), why to limit to chili potatoes! Order from Chowki and consume herbs in the tastiest form
possible.

wheat in the 'cereal' category. This cereal is actually a member of the grass family that produces a dry,
one-seeded fruit commonly called a kernel.

Need to know so much about the bread you had in lunch

You know when did we discover that wheat is edible? Well, it was more than 17,000 years ago, humans
gathered the seeds of plants and ate them. But, on purpose, it was first planted in the United States in
1777 as a hobby crop. But now wheat is grown in 42 states in the United States. And, around three-
quarters of all U.S. grain products are made from wheat flour. In fact, nearly half of the wheat grown in
the United States is used domestically.

Usually, wheat is considered to be high in carbs. But a few of us know that it is a rich source of proteins,
vitamins of the B group and minerals such as iron, manganese, magnesium and zinc. Paradoxically, we
consume more of this cereal than we assume. Becuase it's used for the production of bread, pasta,
cookies, breakfast cereals and fermented beverages. We happen to take at least one of them. Isn't it?

You can smell so much wheat around, and Chowki uses it to bake some irresistible bread recipes. The
flavors diverse from Tandoori, Butter, Lehsuni, to paneer and pudina. Would you like to try one?

Taste is given, but history of this bread is irresistible too

Bread is synonymous with our Indian meals. Of course, rice is part of the family as well. But, on which
Diwali did you not relish the naan with Dal Makhani or Kadai Paneer?

Visit any stretch of the country, the North Indian restaurants have pledged to serve Naan and Kulcha.
Our ancestors were no less than us in terms of gluttony. You know you should thank that experiment
that took place between 2,500 years ago. In fact, Egyptians hold the credit for introducing yeast to
Indians. That's when we tasted the fermented bread for the first time.

The original bread recipes were chapatis and thick Roti during the Harappan civilization. They would
usually survive for a week. Even after the arrival of yeast, we Indians experimented for a century to
invent the fermented bread prepared in the tandoor. Since Naan requires more expertise. That's why for
many years, it remained the privilege of rich and royal people even in the post-independence era.

The ingredients of Naan are very simple and accessible. Despite that, the cooks who could knead the
dough for this bread variety were limited and worked in the royal courts or affluent houses only. Luckily,
the local chefs quickly picked up this culinary art after independence. The rest is history. Now, Naan is
omnipresent in the Great Indian Feast.

Read below before considering label this food a mere street food
Some historical facts simply blow our minds. But there are so many. Being a refuge to so many foodies,
the Chowki Blog would like to unveil some Kulcha facts that would astound you for sure. So, Read below
before considering kulcha a mere street food.

The technical definition of Kulcha is “Pan Cooked Leavened Flatbread”. And, for the Dilliwale, it's
another name for the street food. But, it was the symbolic representation of the Asaf Jahi dynasty of
Hyderabad. Now we may think that this city is more popular for its Biryanis and Kebabs. Isn't it?
Astonishingly, the Kulcha was seen as a more 'royal' food than any of our assumed Biryani or Kebab.

During that era, be it the Coat of the Arm or the formal flag, the sign of Kulcha was omnipresent.
Actually, there is a very interesting story behind this. After the death of Aurangzeb, the Mughal Dynasty
was on the verge of declining. The emperors supposedly had misleading companies. Mir Qamruddin,
being a secretary and loyalists of Mughals was very unsettled about all this. So, he went to Hyderabad
to serve as the Governor of the Deccan (Hyderabad and the surrounding area).

Before heading towards the South, he decided to meet his spiritual guru Hazrat Nizamuddin
Aurangabadi. The guru prophesied that Hazrat Nizamuddin and his next seven generations would rule as
a king. He also fed Mir with seven Kulchas when the latter asked for some food. That's how Kulcha
became an emotionally attached memory for Mir Qamruddin. By the way, the prophecy came true and
he and his seven generations governed Hyderabad and other South Indian provinces.

Beware: An Indian vegetarian is most probably obsessed with

this cereal!

The subconscious mind is a spy. It has only one thing to reveal - the unbelievable and surprising facts
about our own selves. What the hell! Anyways, if we talk about the two staple foods of India, they are
wheat and rice. Well in North India, most of us would have chapatis with some sabzi; for that's how the
tradition has been. But why do we (especially vegetarians) prefer rice if not chapatis (made out of wheat
flour)?
The local areas, however, have a diverse taste. For example, pearl millet is widely consumed is several
regions of Rajasthan. Similar is the case of Maize (a cereal variety) in Punjab and Haryana. But if we
consider North India as a whole, the culinary experiments have largely flirted with rice only (less than
wheat of course). Warning: An Indian vegetarian is most probably obsessed with this food! Couldn't you
observe the pattern, the last time when you were too bored with wheat bread, Chowki brought you lip-
smacking Biryani and Pulao?

Plain rice is not enough. To make it a little more interesting, we add some cumin and ghee and twist it
into jeera rice. If the combo of some vegetable/lentil gravy with Indian bread varieties. The invasion of
Mughals also happened to add a richer tang to our rice. Can you imagine how delicately a Biryani is
cooked, the range of flavors infused into it and the amount of time taken - each factor is taken care of!
But since, our mothers often lack time, they invented a shortcut of Biryani which we lovingly term as
'Pulao'. A load of vegetables spices and herbs added to rice is the mouthwatering idea.

Not just that. we never miss this cereal in the desserts as well. From the liquidy 'Kheer' to semi-fluid
'Phirni'. With so many arguments, do you still doubt rice is our weakness?

Why are you chubby? Your mother knows the answer

Do you know one of those upset souls whose bodies make it pretty evident that they had chole Bhature
too often? And, Chowki chefs are sure that you also know those fortunate lean souls who relish street
food at least thrice a week and their body is 'fit' enough to hide it. Can anybody solve this unjustified
puzzle as difficult as the Da Vinci Code?

Well, the answer is simple. Why are you not slim? Blame your ancestors. It's an ages-long battle
between the fatty genes and skinny genes. If your parents have a pot belly, it's pretty possible that you
would also have one. A popular research held at the University of California, Los Angeles proves it all. It
fed normal diet to genetically different mice for two months. And, then the University let them switch to
high in sugar and fat diet for another two months. As a result, the mice with comparatively more fat
genes gained weight drastically. While, the one with skinny genes were found to be hardly affected.

However, that doesn't mean that your DNA has shut down all the ways to shed kilos! It is only partially
responsible. Little changes can make you hide the effect of fatty genes effectively. Some of them are -

- You are not a machine, so stop consuming processed food products. Be more natural

- The salad is your best friend. Let the lunch and dinner be accompanied with it

- Lower oil cooking in amount, fewer the calories tension. The slimming formula is simple you see!

- Last but not the least, earlier the dinner the better.

So, rather than drawing those not-so-pleasing physical similarities between you and your aunt, follow
this dietary regime. Good luck:)

What so human about these non-humans? Find out.

A squirrel with sweet tooth

Usually like other squirrels, the red squirrel also dwells on nuts and grains. It starts hoarding them in
advance as winters are too cold. This red creature also bites side part of the maple tree to create a hole.
Then the squirrel is able to reach the center and lick the sweet syrup falling from the tree. The sugary
food not only delights the squirrel but also provides it with the energy to collect more nuts for the
winters.

Only washed food for Snow Monkey

The habits Monkeys resemble those of humans in many ways. A native of Japan, the snow monkey is
closest to humans in terms of etiquettes. You know it washes the food before eating. So the next time
you throw a fruit on the ground, better not expect this sophisticated monkey to go crazy after it.

The honey bee

No, other insect but this striped bee has the unique talent of producing the food that's readymade for
the human race. We call this food honey and bee the 'worker bee'. It collects nectar from flowers and
take it to the hive. There the other worker bees filter the nectar and convert it into by evaporating.

So, you see, there's so much of human in non-humans too. Which of the above facts was the most
astonishing to you? We are curious to know.

Who says avoid these luscious foods, moderation is the key!

Food is to relish only. But some health freaks avoid them as a forbidden fruit. Well, the key to a healthy
being is not avoiding. Because if we do so, we also lack certain rare nutrients which only those foods
could provide. So how much should be the intake, let’s dig deeper –

Dairy products – Indians primarily consume Dahi (yogurt) or milk as dairy products. But, those poor
calories conscious people, they refrain from the spicy tangs of yogurts and sweet flavors of desserts
made with milk. Actually, you can shuffle between curd and milk. If half a glass of milk today then a
small bowl of curd tomorrow. Simple!

Eggs – The weakness of eggetarians. The egg is a mine of proteins. If you are a gym-goer, then you
should stick to them as fish to water (not regularly though). Let’s say one egg each day so that you don’t
suffer from those pangs of eating eggs and worrying about dieting at the same time.

Chicken - Well, a majority of the research pieces say that around 550 grams of chicken are too little to
raise your bad cholesterol level. To be on the safer side, let the chicken feast delight you three times a
week. Well. so all the chicken lovers out there, the Chowki Chefs prepare a dozen of chicken flavors, pick
your own taste.

In fact, let's strive to get the best from both the worlds. Why resist eating your favorite foods when
eating in moderation is harmless!

So, how have we changed over a year, check it out

Don't you think 15 years ago, our food preferences were indeed different from now. Time changes a lot
and we cease to notice. In many ways, 2015 also influenced our food habits. So, how have we changed
over a year, check it out -

How 2015 was different for the foodies of Delhi?

Fresh enterprises by chefs

Gone were the days when food cooked by professional chefs had five-star prices too. Now, there are
many startups driven by professional chefs at relatively more affordable rates.

Ingredient quality more important

It's a good news. Our city is becoming more health conscious. The year 2015 saw a constant upsurge in
the use of fresh milk products, vegetables, and fruits.

Packaged food on the rise too

Well, a coin has two sides. The busy populace of Delhi is definitely running short of time. That is why it
has started depending on packaged food more. In fact, the industry witnessed a boost last year.

Indian cuisine on an upsurge

Indians love their cuisine to the core; to the extent that now more and more eateries are coming up
with Indian regional cuisine. How can a pizza or burger replace our delectable spicy gravies and filling
bread varieties?

Well, these were the food trends for all. We would also like to know how your food habits were affected
during the year!

All you Vegetarians & Non-vegetarians - What are your special
powers?

Do you often feel that your vegetarian pals are somewhat different from the non-vegetarian ones? Well,
evident or not, the Hindu Mythology do talk about it. So what are the 'special vigors' it has given to each
category. Let's explore one by one...

We see the animals running around and plants rooted to the ground. Paradoxically, that doesn't imply
that plants do not have sufficient energy for the physical activities. The sunlight reaches the plants first.
Therefore, the vegans and vegetarians get the maximum energy. Eating fresh food from nature like
fruits and vegetables comes under the Satwik division. A plate of salad in the morning adorns your body
with purity, goodness, divinity, and calmness. Follow the pattern if you are one of those hot-tempered
fellows.

But, only a few have the ability to dwell on the raw diet. So the vegetarians would like to cook the
veggies and make them richer by adding milk or milk products. Well, that's considered to be the part of
the Rajas diet. You know Hindu Mythology says that it makes you more capable and powerful. 'Rajas'
translates 'kingly' into Hindi.

But human's taste buds are untamable. So they chase the non-vegetarian flavors as well. High in iron
and fat content, the best thing a Tamasic diet can give you is a good sleep. Besides, it is believed to make
you indifferent. And, isn't it good to be not able to react in certain situations? That's called being
indifferent you know.

Well, because good food is your birthright. There's no point in restricting your diet. Try some good food
from Chowki - this time the Rajasic one!

What dynamite consists is edible.

We have actually not forgotten to add 'not' to the above statement. An explosive like dynamite has a
filling of peanuts. The rich-in-protein peanuts could be so atomic! Never thought so...

Blame the ancestors for sweet tooth

The problem that you relish Gulab Jamun before Pulao is because of your parents. Either of them has
passed the trait of a sweet tooth to you.

Chickens have become drastically fatter than before

The human life expectancy rate has surely increased. But seems the better availability of resources has
benefitted chickens the most. The most thing. An average chicken contains 266% more fat than it did
forty years back.
