El vino en la Edad Media
Durante la Edad Media, las tierras (y con ellas los cultivos de vid) pasan a ser propiedad de
la Iglesia y los reyes. Así, la elaboración del vino queda circunscrita a monasterios y
castillos. En este periodo se hace extensivo el uso de las barricas de madera para
almacenar el vino y, de forma casual, aparecen las primeras bodegas.
Lagar
Lagar o jaraíz, es el recipiente, ingenio, cuba, barreño o gran tina o primitiva prensa donde
se pisan los frutos de la vid (para obtener el mosto, separando el hollejo de la pulpa).
También se usaba para prensar otros frutos como el olivo (dentro de la almazara donde se
prensa la aceituna), o el manzano (para triturar la manzana, extraer su jugo y fabricar la
sidra).

Se abre una nueva etapa en la historia del vino, con el perfeccionamiento –en los siglos
XVII y XVIII– de las técnicas de vinificación. En este periodo, los vinos de Borgoña, Burdeos
y Champaña (Francia) adquieren parte de su posterior fama mundial, gracias, en gran
medida, a los comerciantes del norte de Europa. Comienzan a utilizarse las botellas de
vidrio para conservar el vino y se inventa el tapón de corcho. También en este momento, el
monje Dom Pérignon descubre cómo elaborar el vino espumoso en la región de
Champagne.

Una vez desgranado el racimo, los granos de uva se pasan por una máquina estrujadora o
pisadora. El fin de este proceso es conseguir que se rompa la piel de la uva, conocida como
hollejo. De esta manera se extrae gran parte del mosto del interior de la fruta, con lo que se
facilitará el siguiente proceso de maceración, ya que el mosto tendrá un contacto mayor
con los hollejos. El estrujado no debe ser demasiado exhaustivo, ya que hay que evitar que
se rompan las semillas de las uvas, algo que podría aportar amargor al mosto.

2.4. FRUIT PRESS
The invention relates to a fruit press and more particularly to a hydraulic cider press. The
primary object of the invention is the provision of a press of this character, where in the
juices from fruits, for example, apples, can be conveniently extracted and the extracting
operation is hydraulically controlled, the press in its entirety being of novel construction
and is readily portable so that such press may be used in stores or other places for the
dispensing of the juices of the fruits on extraction thereof.
