Reaction Paper
The different manufacturing processes, systems, and workflows of food related products learned in
the school are just pure imagination. The educational tour that was conducted on November 10, 2018
made it possible to turn those imaginations into reality because for us chemical engineering students,
realism is very essential. Also, in this activity it helps us develop our personality since social graces and
etiquette are learned too by experience.
Lighthouse Cooperative and Cagayan State University (CSU) Piat Dairy Cattle Research and
Development Center made it possible for me to turn those imaginations into reality. They gave me a
chance to acquire more knowledge through actual exposure to different real manufacturing industries.
Our first destination is at Lighthouse Cooperative, an associated cooperative that caters computer,
furniture, school supply and food services and it was established in Larion Bajo, Tuguegarao City,
Cagayan. The company has developed their products such as the Chicha-rabao (carabao skin
crackling), carabao milk candies, peanut products and crackers. I admire this cooperative since they
were able to provide jobs to the community and able to support the farmers since their raw materials
are all related to agriculture. However, every manufacturing industries has their own weaknesses.
Proper orientation particulary on safety must be provided to the employee. I observed that in the
dicing section, the workers were not wearing protective gloves while cutting and this issue must be
address immediately because the safetiness of their employee is utmost priority. Proper personal
protective equipment (PPE) must also be provided to the visitors when they enter the processing
room because risk may be observed to both food and people. For their sanitation, there is still a room
for further improvement. The layout of the food premises must be improved as well as the
environment condition. They must also integrate a process that can utilized their waste. But overall, it
was a great experience because the cooperative gave us an idea on how they produce good quality
products.
Our next and last destination is located at Piat, Cagayan. The Cagayan State University Piat dairy Cattle
Research Development Center. The staff showed us how they manufacture their dairy products
starting from milking of cows up to finished products which are the flavored and unflavored milk and
yogurt. I observed that the milking cows are being handled with extensive care. On the other hand,
more advanced manufacturing process and equipment must be integrated. As the staff mentioned,
one of the main problem they have encountered during their manufacturing is the low supply of milk
and for me this problem must be addressed and taken into priority in order for them to supply
adequate amount of milk to the consumer. Based from their product, their traditional way of
sterilization is still feasible since their dairies is at good quality. Their staff was very accommodating
and I give four stars to that.
The whole trip was a success and indeed, it was very enjoying. We were not just able to see how those
manufacturing process we have learned in the school works in reality , but we were also able to bond
with our classmates. The trip was really indeed educational.
