changed his mind and

Mississippi’s justice system less pu-
nitive.
Gov. Phil Bryant’s statements
came Tuesday at a meeting sponsored
by groups including top Republican
backers to build support among law-
makers and others for such changes.
The move comes as U.S. Senate
Majority Leader Mitch McConnell
announced Tuesday that he will ac-
cede to President Donald Trump’s
push to reduce some federal sentenc-
es. Bryant is an outspoken Trump
supporter.
The governor, who once served as
a sheriff’s deputy in Hinds County,
said that as a state House member, he
pushed for a law requiring inmates to
serve 85 percent of their sentences in
state prison. But he said that he later
reconsidered.
“I began to realize the cost, as
lieutenant governor then, of what was
happening in the state of Mississip-
pi,” Bryant said. “The 85 percent rule
had done its job and we were filling
prisons in Mississippi and having to
build more.”
Across the nation, at least 34
states have taken action since 2001
to change or reduce laws requiring
mandatory minimum sentences ac-
cording to Families Against Man-
datory Minimums. In some states,
prison populations have been falling
for years. Mississippi was late to the
movement and historically impris-
oned people at the second-highest
rate in the nation, behind Louisiana.
Mississippi passed a bill in 2014
meant to cut prison sentences. The
state’s prison population declined for
a time, but the number of state prison-
ers is rising again.
Louisiana moved to cut prison
population, probation and parole
caseloads in 2017, seeing a signifi-
cant drop in population in just a year.
Both Louisiana and Mississippi now
imprison fewer people per capita than
Oklahoma.
Some conservative groups have
been seeking less punitive sentenc-
es for years, arguing that prison sys-
tems cost too much money and that
America’s tough-on-crime culture
can create laws that infringe on peo-
ple’s rights. Among the sponsors of
Tuesday’s conference were Ameri-
cans for Prosperity, the political arm
of the conservative Koch brothers’
network and the American Conserva-
tive Union.

ter,” said Matt Schlapp, chairman of
the American Conservative Union.
Proposed changes for Mississip-
pi have yet to be specified, but could
include allowing people to wipe
out criminal records and letting
officials reconsider long sentences
handed down in the past. Other pos-
sibilities include improving re-entry
programs for people in prison, try-
ing to divert people who are mental-
ly ill from the criminal system and
cutting sentences for drug crimes.
Lawmakers could be asked to
let more people get out of jail while
awaiting trial without paying bail
and to set up a statewide public de-
fender system to improve legal rep-
resentation for people accused of
crimes.
Van Jones, a liberal commenta-
tor and co-founder of criminal jus-
tice reform group #Cut50, said the
agreement at the federal level could
also provide political cover for ac-
tion.
“Everywhere else the water is
now safe for reform because Nancy
Pelosi and Donald Trump support
the same bill,” Jones told the Missis-
sippi meeting.

JACKSON — A new survey provided to The As-
sociated Press suggests that the number of Missis-
sippi inmates jailed for short periods may be declin-
ing, but that those in jail for longer is holding steady.
However, experts say it’s hard to draw too many
conclusions from the data. Observers underline
that better information is needed to help policymak-
ers determine why people are in jail, what’s keeping
them there, and what Mississippi should do about it.
The survey by the MacArthur Justice Center
shows almost half of the more than 5,000 people
jailed had a stay of 90 or more consecutive days.
More than 600 had been in jail longer than a year,
but that number includes an unknown number of
people serving sentences in jails and not just await-
ing trial.
Long pretrial detentions are particularly prev-
alent in Mississippi because of impoverished in-
mates who can’t make bail, delays in appointing
public defenders, slow processing of evidence and
even infrequent meetings of local courts stemming
from the state’s rural nature.
It’s the second such survey in a year by the
University of Mississippi branch of Chicago-based
MacArthur. Cliff Johnson, a law professor who has
led data collection, blames many extended deten-
tions on judges who set bail that poor defendants
can’t pay.

things that I have no
doubt will continue to fill
up.”
Sean Koehn, Perry’s
business partner, said
Sports Center’s main
location, which is sep-
arate from the already
vacant former Archery
space, could be split to
house two stores. He
said there’s already been
some interest in those
locations.
“We have gotten some
interest,” Koehn said. “In
all likelihood, that one
store will be two poten-
tial new locations. Both
of those are in negotia-
tions. At the same time,
we’re still under lease
and in negotiations with
Mr. Craig (which expires
in July).”
For the former

Koehn said his firm is
being “very selective.”
“The phone has been
ringing off the hook,”
Koehn said. “… We want
to be sure we have a good
fit for that location.”
Cannon said. “There will
always probably be some
kind of interest in that
center.
“There has been inter-
est from retailers in the
past, but there just hasn’t
been existing space,” he
added. “We’ve commu-
nicated with Jason in the
past regarding different
tenants at different
times. A lot of this comes
down to timing.”
Billy Wang, owner of
Umi’s Japanese Steak-
house and Sushi Bar in
Middleton Court, said
he’s confident the vacant
spots won’t stay that way
long.
“I think that location
can fill very quickly,”
Wang said. “It’s a very
prime location. Our
business, every year, has
been picking up, at both
locations in Starkville
and Columbus. Every
year has been better than
the last. I’m very confi-
dent that the shopping
center will continue to do
well.”

ident Donald Trump
heatedly threatened
to shut down the U.S.
government Tuesday
as he and Democrat-
ic leaders bickered Trump
over funding for his promised bor-
der wall and offered a grim preview
of life in Washington the next two
years under divided government.
Trump and House and Senate
Democratic leaders Nancy Pelosi
and Chuck Schumer squabbled for
more than 15 minutes in the stun-
ning, televised encounter. Each of
them, especially Trump, interrupt-
ed the others to question facts,
quibble over election results and
lob insults.
Trump questioned Pelosi’s abili-
ty to count votes in her own House.
She questioned his manhood — af-
ter she left the building.
The public clash marked
Trump’s first meeting with the
newly empowered Democrats since
their midterm victories that put
them in control of the House, laying
bare the tensions on both sides and
suggesting how divided govern-
ment might work — or not — as the
2020 presidential election nears.
Neither the public nor the pri-
vate face-to-face portion of the
meeting appeared to resolve the
wall-funding dispute with a partial
shutdown looming on Dec. 21. How-
ever, Pelosi said Trump called her
later in the afternoon and told her
the White House was looking at op-
tions she and Schumer had laid out.
In the public debate, Trump
sounded more determined than
ever to allow a partial government
shutdown unless he gets the bil-
lions he wants for his long-promised
wall along the U.S.-Mexico border.
“I will take the mantle. I will
be the one to shut it down,” he de-
clared.
Pelosi later crowed that she and
Schumer had goaded the president
to “fully own that the shutdown was
his.” She told Democratic lawmak-
ers back at the Capitol, according to
an aide who was in the room, that
the wall was “like a manhood thing
for him ... as if manhood could ever
be associated with him. This wall
thing.”
The aide was not authorized to
speak publicly and commented only
on condition of anonymity.
While Trump has suggested he
may be willing to trade with Dem-
ocrats and has publicly praised
Pelosi, he was focused Tuesday on
reinforcing his hard-line immigra-
tion promises, repeatedly stressing
border security and the wall as a
critical part. Democrats were in no
mood to sympathize, emphasizing
their newfound political strength.
“Elections have consequences,
Mr. President,” said Schumer.
Trump later called it a “friendly
meeting,” saying “I’ve actually liked
them for a long period of time and I
respect them both. And we made
a lot of progress.” The Democrats
said they had given Trump two op-
tions to keep government open and
the responsibility lay with him and
Republicans who control Congress.

will bring legislation to
the floor to overhaul the
nation’s federal sentencing
laws.
McConnell’s decision
comes after more than
three years of overtures
from a large, bipartisan
group of senators who sup-
port the criminal justice
bill. Trump announced his
support for the legislation
last month, but McConnell
treaded cautiously as a
handful of members in his
caucus voiced concerns
that it would be too soft on
violent criminals.
Texas Sen. John
Cornyn, the No. 2 Republi-
can, said Trump’s push for
the legislation was “critical
to the outcome.”
“Sen. McConnell was
always concerned about
the small window of time
that we have to do all these
things we need to do, but
the president was insistent
that this be

the toughest sentences on
the most violent offenders,
lowering mandatory mini-
mum sentences for some
nonviolent drug offenses
and reducing the life sen-
tence for some drug of-
fenders with three convic-
tions, or “three strikes,” to
25 years.

The new farm bill passed
by the U.S. Senate on Tues-
day prevents maple syrup
and honey producers from
being required to list their
pure products as contain-
ing added sugars on their
nutrition labels — a plan
proposed by the U.S. Food
and Drug Administration
months ago that producers
said was misleading.
The FDA’s goal was to
update the Nutrition Facts
label on products to edu-
cate consumers about the
amount of added sugars
in foods based on govern-
ment dietary guidelines.
However, no sugar is add-
ed to pure maple syrup or
honey.
After getting thousands
of comments on the draft
plan, it acknowledged in
June the labeling was con-
fusing and said it would
come up with alternative
approach for maple syrup
and honey.
“This was a huge mis-
take by the FDA and was
really threatening to the
Vermont maple industry,
who are conscious about
food labels and conscious
about added sugar,” said
U.S. Rep. Peter Welch, a
Democrat. He, along with
Republican Rep. Kevin
Cramer, of North Dakota,
pushed for the labeling ex-
emption in the farm bill.

Labat and Shelton show admirable leadership, cooperation

Since her arrival as super-
intendent for the Columbus
Municipal School District this
summer, Cherie Labat has
taken pains to carefully craft
and nurture the image the
city’s schools present to the
community.
Being a champion for the
schools is a big part of the job.
But there is also another
part of the job that sometimes
requires honest and open ap-
praisals of less-than-flattering
realities.
This week, during a CMSD
board meeting, Labat acknowl-
edged the signs of a budding
gang issue in the district,
something that under other
leadership might have been
addressed behind the scenes.
She also briefed the board on
how she intends to address
those issues by working with
the Columbus Police Depart-
ment to provide mentoring
geared to curbing this trend
before it becomes a crisis.
To date, the signs Labat has
seen in the district are small
infractions, mostly involving
the dress code. According to
CPD Chief Fred Shelton, Louis
Vuitton clothing is associated
with the Vice Lords while
Georgia Bulldog apparel is
linked to the Gangster Disci-
ples.
The CMSD and CPD look at
all this from somewhat differ-
ent perspectives. CMSD sees
gang associations in its schools
as an issue to deal with. For
the CPD, the issue is not gang
membership, which is not in
itself illegal, but gang activity,
which is illegal.
It would have been easy
enough for the CPD to shrug
their shoulders when ap-
proached by the school district
over the matter.
Likewise, it would have been
easy enough for the CMSD
to address the issue without
outside help (or exposure).
That the two entities un-
derstand the vested interest
shared by this matter shows
a maturity of vision that may
ultimately benefit the schools
and law enforcement alike.
Our schools should be sanc-
tuaries, not breeding grounds.
Where gang presence is,
gang activity must surely
follow.
For many students, it’s a
matter of making sure be-
ing “gang curious” doesn’t
evolve into being active gang
members, and any efforts to
interrupt that progression will
help keep a lid on whatever
potential gang activity might
follow.
The best way to quit smok-
ing is to never start. That same
theory holds true here.
We applaud Labat’s clear-
eyed approach to this potential
problem as well as Chief Shel-
ton’s cooperation in providing
the resources needed to stop it.

“We actually noticed some
things we wanted to change
before we were targeted,” Ken-
nedy said. “We took a look at
our students with disabilities
in ELA. We saw some areas of
improvement, but our weakest
area was in writing. So, that’s
going to be our focus.”
AMS was listed as a Target-
ed Support and Improvement
(TSI) school based on those
students remaining in the low-
est 50 percent of overall ac-
countability, largely due to the
students’ performance on end-
of-year state assessments.
Kennedy said the largest
change at AMS since in August
was immersing special educa-
tion students into the general
education classroom.
“We have seen that the stu-
dents are enjoying it better be-
ing with their peers,” Kennedy
said.
Benefits of inclusion
Julie Jones, SOCSD director
of special education, said all
schools within the district have
started this process. In addition
to inclusion, SPED students are
now taking Case 21 benchmark
assessments, which simulate
state testing.
Jones said she expects to
see student growth with more
grade-level instruction rather
than functional-level instruc-
tion.
“They were taught on
their functional level, but they
weren’t being exposed to their
grade-level instruction,” Jones
said. “While it is a difficult tran-
sition, they’re still getting their
accommodations and modifica-
tions. When they are expected
to do grade-level work, they’re
going to recognize that materi-
al.”
Jones said special education
students work in general educa-
tion classrooms with both SPED
and classroom teachers. When-
ever those students need more
focused instruction, the SPED
teacher takes the student for any
special services.
The state only allows SPED
students with disabilities to
receive a general high school
diploma or a certificate of atten-
dance, since the state discontin-
ued the occupational diploma.
Since those students take the
same state tests as every other
student, Jones said, it’s import-
ant to learn in a general educa-
tion environment.

After serving as the
head coach at Louisiana-La-
fayette for seven seasons
and working as an associ-
ate head coach/tight ends
coach at Mississippi State
this season, Hudspeth was

who spent seven years on

turn. Atmosphere’s going crazy,
we go out there and try to knock
somebody out.
“I’ll do anything for the team.”
Rivers was a top-10 defensive
end coming out of Stephenson
High School in Stone Mountain,
Georgia. He also was the best de-
fensive end prospect coming out
of EMCC.
This season, Rivers played be-
hind likely first-round NFL draft
pick Montez Sweat and senior
Gerri Green. The role on the kick
return unit made him more valu-
able and impressed his coaches.
“We want a big, ‘fullback,’ kind
of guy to kick out their best play-
er. Being 260 pounds and athlet-
ic, he does a great job of the kick
blocks on our return unit,” Jones
said. “We try to design schemes
where we’re putting our best play-
ers on their best cover guys. Him
and Gerri Green are the two best
blockers we have, so we try to do
that every week.”
Rivers’ role puts him closest to
the back two in position to receive
a kick. With a significant gap be-
tween him and the second line of
blockers ahead of him, he’s so far
back that a short kickoff could go
to him. He would welcome that
opportunity.
“I can catch it if you want me
to. I’m waiting for that one,” Riv-
ers said. “I’m going to catch one
and do something with it. I’m try-
ing to get back there, all the way
to the back.”
Until that opportunity comes,
Rivers will continue to play his
role and to learn everything he
can to help him down the road.
“They asked me. They want-
ed to play special teams,” Jones
said of Rivers and Green. “Sec-
ond, they want to play at the next
level and they know that playing
special teams is very beneficial.
They know to get to that next lev-
el they need to be good on special
teams.”
Abram, Sweat add more
All-America honors
Montez Sweat and Johnathan
Abram added more All-Amer-
ica honors to their postseason
awards lists Tuesday when Sport-
ing News and CBS Sports re-
leased their All-America teams.
Sporting News named Sweat
to its first team, while CBS Sports
selected Sweat and Abram to its
second team.
Sweat became MSU’s first
first-team All-America selection
by Sporting News since corner-
back Fred Smoot in 2000.
This is Sweat’s fifth All-Amer-
ica honor and the fourth for
Abram. Sweat’s other All-Amer-
ica honors have come from the
Football Writers Association
of America (first team), Sports
Illustrated (second team), and
The Associated Press (second
team). Abram’s other All-Ameri-
ca selections include The Athletic
(second team), Sports Illustrated
(second team) and The AP (third
team).
Sweat has 11 sacks on the sea-
son, which is tied for sixth in the
nation and second in the South-
eastern Conference. He also has
51 tackles, including 13 1/2 for
loss.
Sweat is the No. 24 player on
ESPN’s Todd McShay’s top 32
players for the 2019 NFL draft.
Abram has 93 tackles, seven-
and-a-half for loss, two-and-a-
half sacks, five pass breakups,
two interceptions, one forced
fumble, and one fumble recov-
ery. He is listed at No. 30 on
McShay’s top 32 players for the
2019 NFL draft.
Sweat and Abram were first-
team All-SEC choices by The AP
and helped the Bulldogs’ defen-
sive unit finish the regular sea-
son ranked No. 1 in the Football
Bowl Subdivision in scoring de-
fense (12), fewest touchdowns al-
lowed (12), yards per play allowed
(4.14), among other things.

For our version, we set out
to make a kirsch-scented, rai-
sin- and dried cherry-studded,
almond-crusted Kugelhopf
typical of Alsace. Classic Alsa-
tian recipes we tested yielded
dense, somewhat dry breads
that we needed to dunk in cof-
fee or wine to fully enjoy. Sev-
eral modern versions we tasted
were sweeter, airier, moister,
and even doughnut-like.
Our goal was to develop a
Kugelhopf recipe that would
please traditional and modern
palates alike — not too sweet,
yeasty and a tad boozy, light
but not fluffy, chewy yet soft,
rich but not heavy.
Many traditional recipes
call for a sponge — a mixture
of yeast, flour and liquid that
ferments separately and is
added to the dough — for fla-
vor, but we found that allowing
our dough to ferment slowly
(up to 2 1/2 hours) during the
initial rise, and folding the
dough upon itself twice during
that time to redistribute and
stimulate the yeast, gave our
bread plenty of heady flavor.

cherry brandy augmented this
complexity.
We tested our way through
hydration levels and amounts
of sugar, butter and eggs until
we landed on the perfect for-
mula to yield a delicate yet sat-
isfying texture and a moderate
level of richness. We developed
this recipe using our favorite
12-cup Bundt pan, however,
we also like using a traditional
10-cup Kugelhopf pan. If using
a Kugelhopf pan, the dough
will rise 1/2 inch above the lip
of the pan. We do not recom-
mend mixing this dough by
hand. Key equipment includes
a stand mixer, 12-cup nonstick
Bundt pan and a instant-read
thermometer.
KUGELHOPF
Servings: 16 (1 loaf)
Start to finish: 9 1/4 to 10 1/4 hours
(Baking time: 25 minutes)
2/3 cup dried cherries, chopped
coarse
1/3 cup golden raisins
1/4 cup (2 ounces) kirsch or other
cherry-flavored brandy
3 1/2 cups (17 1/2 ounces) all-pur-
pose flour
4 teaspoons instant or rapid-rise
yeast
1 teaspoon salt
2/3 cup (5 1/3 ounces) whole milk,
room temperature
3 large eggs, room temperature
6 tablespoons (2 2/3 ounces) granu-
lated sugar
8 tablespoons (4 ounces) butter,
softened
1/4 cup sliced almonds
Confectioners’ sugar
n Microwave cherries, raisins and
kirsch in covered bowl until steaming,
about 1 minute. Let sit until cherries
and raisins have softened, about
15 minutes. Drain fruit and reserve
kirsch.
n Whisk flour, yeast and salt
together in bowl of stand mixture.
Whisk milk, eggs, granulated sugar
and reserved kirsch in 4-cup liquid
measuring cup until sugar has
dissolved. Using dough hook on low
speed, slowly add milk mixture to
flour mixture and mix until cohesive
dough starts to form and no dry flour
remains, about 2 minutes, scraping
down bowl as needed.
n Increase speed to medium-low
and knead until dough begins to pull
away from sides of bowl but sticks to
bottom, about 5 minutes. With mixer
running, add butter, 1 tablespoon at
a time, and knead until butter is fully
incorporated, about 4 minutes. Con-
tinue to knead until dough is elastic
and slightly sticky, about 3 minutes.
n Reduce speed to low, add fruit
mixture, and mix until incorporated,
about 1 minute. Transfer dough to
lightly greased large bowl or contain-
er, cover tightly with plastic wrap, and
let rise for 30 minutes.
n Using greased bowl scraper (or
your fingertips), fold dough over itself
by gently lifting and folding edge of
dough toward middle. Turn bowl 90
degrees and fold dough again; repeat
turning bowl and folding dough 2
more times (total of 4 folds). Cover
tightly with plastic and let rise for
30 minutes. Fold dough again, then
cover bowl tightly with plastic and
let dough rise until nearly doubled in
size, 1 to 11/2 hours.
n Grease 12-cup nonstick Bundt pan
and sprinkle bottom with almonds.
Press down on dough to deflate, then
transfer to lightly floured counter. Us-
ing your lightly floured hands, press
dough into 8-inch round.
n Using your fingertips, press
through and stretch center of dough
to create 2-inch hole.
n Place dough in prepared pan and
gently press into even thickness.
Cover loosely with greased plastic
and let rise until loaf is level with lip
of pan, 2 to 2 1/2 hours.
n Adjust oven rack to lower-middle
position and heat oven to 350 F.
Bake until golden brown and loaf reg-
isters 190 F to 195 F, 25 to 30 min-
utes, rotating pan halfway through
baking. Let loaf cool in pan for 10
minutes, then invert loaf onto wire
rack and let cool completely, about 3
hours. Dust with confectioners’ sugar
and serve.

Makes 15 Brie bites
1 (15-count) package frozen
mini fillo shells
3 ounces Brie, cut into 15
evenly-sized cubes
1 batch cranberry sauce (see
below)
Fresh basil leaves, torn into
small pieces
For the cranberry sauce:
1 1/2 cups (6 ounces) fresh
cranberries
1/4 cup Bota Box red wine*
1/4 cup water
1 tablespoon granulated
sugar, or your desired type/
amount of sweetener
* To make without alcohol,
substitute water or orange
juice for red wine.
n Preheat oven to 400 F.
n To make the cranberry
sauce, stir all ingredients
together in small saucepan.
Bring to boil over medium-high
heat, then reduce heat to
medium-low. Continue simmer-
ing, stirring occasionally, until
cranberries begin to “pop.”
Remove from heat and let
mixture cool for 5 minutes to
thicken slightly.

filo shells evenly on a baking

of Brie. Bake 5-7 minutes, or

HOLIDAY COOKIES
Servings: 36
Start to finish: 2 hours
For cookies:
2 1/2 cups (12 1/2 ounces)
all-purpose flour
3/4 cup (5 1/4 ounces) super-
fine sugar
1/4 teaspoon salt
16 tablespoons unsalted but-
ter, cut into 1/2-inch pieces
and softened
1 ounce cream cheese,
softened
2 teaspoons vanilla extract
For all-purpose glaze (about
1 cup):
2 cups (8 ounces) confection-
ers’ sugar
3 tablespoons milk
1 ounce cream cheese,
softened
Food coloring (optional)
n Using stand mixer fitted
with paddle, mix flour, sugar
and salt on low speed until
combined. Add butter, 1 piece
at a time, and mix until dough
looks crumbly and slightly
wet, 1 to 2 minutes. Add
cream cheese and vanilla and
beat until dough just begins to
form large clumps, about 30
seconds.
n Transfer dough to counter;
knead just until it forms cohe-
sive mass and divide in half.
Form each half into disk, wrap
disks tightly in plastic wrap,
and refrigerate for at least
30 minutes or up to 2 days.
(Wrapped dough can be frozen
for up to 2 weeks. Let dough
thaw completely in refrigerator
before rolling.)
n Working with 1 disk of
dough at a time, roll dough
1/8 inch thick between 2
large sheets of parchment pa-
per. Slide dough, still between
parchment, onto baking sheet
and refrigerate until firm,
about 10 minutes.
n Adjust oven rack to middle
position and heat oven to 375
F. Line two baking sheets with
parchment. Working with one
sheet of dough at a time, re-
move top piece of parchment
and cut dough into shapes
with cookie cutters. Using
thin offset spatula, transfer
shapes to prepared baking
sheet, spacing them about 1
inch apart.
n Bake cookies, one sheet
at a time, until light golden
brown, about 10 minutes,
rotating sheet halfway
through baking. Let cookies
cool on sheet for 3 minutes,
then transfer to wire rack.
Let cookies cool completely
before serving or icing with
the easy-to-make glaze after
whisking all glaze ingredients
in a bowl until smooth.

1 cup beef broth
1 cup water
1 1/2 pounds carrots, peeled
and cut into 3 inch pieces
1 1/2 pounds red potatoes,
unpeeled, cut into 11/2 inch
pieces
1 1/2 pounds parsnips,
peeled and cut into 3 inch
pieces
1/3 cup dry red wine
n Adjust oven rack to low-
er-middle position and heat
oven to 300 F. Tie roasts
crosswise with kitchen twine
at 1-inch intervals. Pat dry
with paper towels and season
with salt and pepper. Heat 2
tablespoons oil in Dutch oven
over medium-high heat until
just smoking. Brown roasts
on all sides, 8 to 10 minutes;
transfer to plate.
n Add remaining 1 tablespoon
oil, onion, and celery to fat left
in pot and cook over medium
heat until vegetables are
softened, about 5 minutes.
Stir in garlic, sugar, and thyme
and cook until fragrant, about
30 seconds. Stir in chicken
broth, beef broth, and water,
scraping up any browned bits,
and bring to simmer. Return
roasts to pot along with any
accumulated juices. Cover,
transfer pot to oven, and cook
for 2 hours, flipping roasts
halfway through cooking.
n Remove pot from oven.
Nestle carrots into pot around
roasts and sprinkle potatoes
and parsnips over top. Return
covered pot to oven and cook
until vegetables and beef are
tender and fork slips easily in
and out of meat, 1 to 11/2
hours.
n Remove pot from oven.
Transfer roasts to carving
board, tent with aluminum foil,
and let rest while finishing
sauce. Transfer vegetables to
large bowl, season with salt
and pepper to taste, and cover
to keep warm.
n Using wide, shallow spoon,
skim excess fat from surface
of braising liquid. Stir in wine,
bring to 7/8 simmer over
medium-high heat, and cook
until sauce measures 2 cups,
about 15 minutes. Season
with salt and pepper, to taste.
n Discard twine, slice roasts
against grain into 1/2 inch-
thick slices, and arrange on
serving platter. Spoon some
of sauce over meat and serve
with vegetables, passing re-
maining sauce separately.
