A large amount of free radicals can be generated in human body during metabolic process. These free
radicals can result in oxidative stress and homeostasis imbalance, even some chronic diseases and cancers if they
are not promptly removed. Currently, many studies devote to exploring and utilizing natural antioxidants to remove
excessive free radicals in human body, thus realizing the prevention and treatment of diseases. . Phenolic
compounds are antioxidants because of its ability to donate hydrogen or electrons and to generate stable radical
intermediates. Recently, much attention has been focused on phenolic compounds, as they inhibit oxidation of
biomolecules by scavenging free radicals (Heinonen, Meyer, & 73 Frankel, 1998; Urquiaga & Leighton, 2000). Papaya
(Carica papaya L.) fruit grow in tropical and sub-tropical regions and are marketed around the world. Several tropical
fruits like papaya are rich in antioxidants such as Phenolic compounds.

Several studies, show that there is a presence of flavonoid in papaya fruit. Anthocyanins are members of
the flavonoid group of phytochemicals. Anthocyanins are a group water soluble phenolic pigments which can act as
antioxidants or free radical scavengers, thus preventing oxidative stress (Pojer, 2013). Thus, this study aims to extract
and characterize anthocyanin in papaya fruit. The solvent extraction has been the most common method for
extraction of diverse compounds found in plants, including flavonoids. This study will test to quantify and determine
the anthocyanin in papaya fruit.
