mondo ci riguarda tutti. Noi siamo ciò che mangiamo e beviamo. Quindi il nostro approccio al modo in cui mangiamo e beviamo è di grande

Tea-drinking in China is relate to relaxation and Nature.The Chinese believe that we are all part of a vast moving landscape in which Nature
and our own human nature are identical. What we do affects the world around us. What we eat and drink from that world affects us. We are
what we eat and drink. Therefore our approach to how we eat and drink is of great importance for our own wellbeing.
From the earliest days, tea-drinking in Eastern cultures has been associated with people in contemplation, practicing meditation. Tea was
grown around the monasteries in the high mountains and was served as an elixir to help maintain the ideal state of mind – a sense of
awareness and alertness combined with a feeling of deep and peaceful harmony. Over time, tea-drinking became more and more ritualized,
culminating in the famous tea ceremony. At their best, modern-day versions of the ceremony can still play a key role in bringing the individual
a sense of harmony and inner calm.

Una Pianta - Migliaia di Tè!
Tutto il tè proviene da una pianta, conosciuta come Camellia Sinensis. Si tratta di un arbusto sempreverde che può crescere come un piccolo
albero. La sotto-specie Camellia Sinensis Sinensis è originaria della Cina sud-orientale. Le piante possono vivere fino a 100 anni o più e le
foglie sono raccolte durante tutto l’anno.
Ha un raccolto inferiore rispetto al suo cugino indiano, una complessità più raffinata e livelli di caffeina più bassi.
Produrre tè cinesi di alta qualità rimane un laborioso processo di raccolta manuale e di lavorazione delle foglie intere per mantenere il sapo-
re pieno della foglia di tè. Attraverso le dinastie Song, Tang, Ming e Qing e nella nostra epoca moderna, l’amore e il rispetto per la natura della
popolazione cinese, in combinazione con il continuo sviluppo di nuove tecniche di coltivazione e di lavorazione, ci ha donato i tè raffinati e di

Appassimento
Le foglie raccolte sono distribuite (all’interno e/o all’esterno al sole) per ammorbidire le pareti cellulari delle foglie. Questo processo ammor-
bidisce le foglie tirando fuori l’umidità dalla superficie per evaporazione, inizia la fermentazione enzimatica naturale e imposta la prossima fase
di lavorazione. Ciò riduce anche il gusto di erba delle foglie di tè.
Mescolamento / Schiacciamento (Rivoltamento)
Conosciuto come “Shaking” in cinese, perché in passato le foglie erano semplicemente scosse in un cesto di vimini. Oggi, questa operazione
viene eseguita con l’ausilio di macchine per suddividere ulteriormente le foglie tramite mezzi meccanici (in contrasto con i mezzi chimici
utilizzati durante l’appassimento). Questo migliora l’ossidazione e mescola gli elementi chimici dei gambi con le foglie, rimuovendo l’amarezza
e bilanciando il sapore del tè.
Ossidazione (parziale e totale)
Questo passaggio utilizzato negli Oolong e nel tè nero continua il naturale processo di fermentazione, consentendo alle foglie di riposare
dopo le fasi di Appassimento o Mescolamento / Schiacciamento (Rivoltamento). Il tempo concesso determina la quantità di ossidazione per
il tè in corso. A questo punto, le foglie diventano di un verde più scuro o anche di un colore rosso, dovuto alla rottura della struttura cellulare
delle foglie. È in questa fase che il tè inizia a sviluppare le sue caratteristiche dal sapore erboso, fiorito o fruttato.

Cottura al vapore (noto anche come “Fissaggio “)
Interrompe la naturale fermentazione e i processi di crescita all’interno delle foglie senza danneggiarle. Vengono usate le tecniche di cottura
delle foglie al vapore, di pressatura a mano in un recipiente caldo e di cottura al forno. Questo processo imposta anche la successiva fase di
Rollamento/Sagomatura delle foglie.
Rollamento/Sagomatura
Le foglie sono passate attraverso rulli caldi e/o freddi per rompere leggermente le foglie, il che intensifica il sapore del tè e stabilisce la forma
delle foglie.
Essiccazione
Stabilisce il contenuto finale di umidità delle foglie, ferma la fermentazione, previene la formazione di muffe, elimina ogni residuo di gusto di
erba e sviluppa l’aroma del tè. Vengono utilizzati i metodi di essiccazione al sole, riscaldamento in recipienti e aria calda.
Tostatura
(Oolong) Vari metodi di tostatura in un recipiente o in un cesto con carbone o utilizzando calore elettrico sono usati per dare un aroma di
affumicatura o una caratteristica fruttata.
One Plant - Thousands Of Teas!
All tea is made from one plant, known as Camellia sinensis. It is an evergreen shrub that can grow into a small tree. The Camellia sinensis
sinensis sub-species is native to Southeast China. The plants can live for up to 100 years or more and the leaves are harvested year round.
It has a lower yield than its Indian cousin, a more refined complexity and lower caffeine levels.
Manufacturing high quality Chinese teas remains a laborious process of hand-picking and processing whole leaves to retain the full flavor of
the tea leaf. Through the Song, Tang, Ming and Qing dynasties and into our modern age, the Chinese love and respect for nature, combined
with the continual development of new growing and processing techniques has given us the refined and high quality teas we enjoy today.
With the resurgence of the Chinese economy and growth of the Chinese tea industry, discerning tea drinkers in the West are re-discovering
the New World of Chinese teas which provide high quality, variety, delicacy, depth and complexity of flavor and aroma.
Over the centuries, Chinese manufacturers have been able to produce thousands of varieties of tea from this single plant Camellia sinensis
sinensis, each having its own unique flavour. This has been achieved by controlling 4 basic elements:
• Region where the plant is located; soil and altitude are key factors
• Time of harvesting the leaves - early, middle or late in each season
• Method of harvesting - picking only buds or buds with leaves
• Processing - withering, rolling, oxidizing, drying and grading
Withering
Picked leaves are spread out (inside and/or outside in the sun) to soften the cell walls of the leaves. This softens the leaves by drawing the
moisture to the surface for evaporation, begins natural enzymatic fermentation and sets up the next stage of processing. This also reduces
the grassy taste of tea leaves.

Tossing/Bruising (Turning Over)
Known as “Shaking” in Chinese, because in the old days, the leaves were simply shaken in a wicker basket. Today, this step is done with the aid of
machines to further break down the leaves by mechanical means (as opposed to chemical means as in “Withering”). This improves oxidation and
mixes chemical elements from the stems with the leaves, removing bitterness and balancing the flavour of the tea.
Oxidization (Partial and Full)
This step used in Oolongs and Black Teas continues the natural process of fermentation by allowing the leaves to rest after the Withering or Tossing/
Bruising (Turning Over) steps. The time allowed determines the amount of oxidation for the tea being made. At this point, the leaves turn to a
darker green or even a red colour, due to the breaking down of the cell structure of the leaves. It is at this stage where the tea begins to develop its
grassy, flowery or fruity taste characteristics.
Steaming (also known as Fixing”)
Stops the natural fermentation and growing processes within the leaves without damaging them. Steaming the leaves, hand pressing in a hot pan
and baking techniques are used. This also sets up the next step for Rolling/Forming the leaves.
Rolling/Forming
Leaves are passed through hot and/or cold rollers to slightly break down the leaves, which intensifies the tea flavour and establishes the shape of the
leaves.
Drying
Establishes the final moisture content of the leaves, stops fermentation, prevents mold growth, removes any remaining grassy leaf taste and develops
the tea’s aroma. Sun drying, pan heating and hot air methods are used.
Firing
(Oolongs) Various methods of roasting in a pan or a basket with charcoal or electric heat are used to give a smoky flavour or a fruity characteristic.

TÉ BIANCO - WHITE TEA
CARATTERISTICHE: il tè bianco è una varietà di tè parzialmente ossidato. Questa varietà si ottiene dalle gemme o dalle prime foglie della pianta del tè, che prima di essere
leggermente lavorate vengono lasciate essiccare alla luce naturale del sole, così da prevenirne l’ossidazione. Il nome “tè bianco” deriva dalla sottile peluria bianco-argentata
che ricopre le gemme ancora chiuse, peluria che conferisce alla pianta un aspetto biancastro. La bevanda vera e propria non è bianca o incolore, ma di un color giallo pallido.
LUOGHI DI ORIGINE: il tè bianco viene prodotto nelle province del Fujian e dello Yunnan in Cina.
BENEFICI: contiene diversi componenti funzionali, compresa caffeina, polifenoli del tè, polisaccaridi, teaflavina, teanina, che sono benefiche per la salute umana in molteplici
aspetti. Ad esempio, i polifenoli possono fungere da anti-invecchiamento, da antiossidante e bloccare i radicali liberi; la caffeina è diuretica per la sua funzione di fermare il
ri-assorbimento di sodio, cloro e acqua; i flavonoidi, e anche la caffeina, aiutano a rinfrescare la mente e rimuovere il grasso in eccesso.
PREPARAZIONE: si consiglia di utilizzare accessori a base di vetro o di porcellana. Sciacquare la tazza da tè e la teiera con acqua calda. Usare circa 2 grammi di foglie di tè
(1-2 cucchiaini) ogni 150ml di acqua. Lasciare in infusione la foglie in acqua calda da 85 C a 90° C per un minuto per la prima e seconda infusione. Aumentare gradualmente
il tempo e la temperatura di macerazione per le infusioni successive.
CHARACTERISTICS: white tea is a variety of teas partially oxidized. This variety is obtained from the buds and first leaves of the tea plant, which are left to dry to natural
sunlight before being slightly processed, in order to prevent oxidation. The name “white tea” comes from the thin silver-white hair that covers the still closed buds, hair that
gives the plant a whitish appearance. The drink itself is not white or colorless, but of a pale yellow color.
PLACES OF ORIGIN: white tea is produced in Fujian and Yunnan provinces of China.
BENEFITS: it contains various functional components, including caffeine, tea polyphenol, tea polysaccharide, theaflavin, theanine, which are beneficial for human health in
multiple aspects. For example, tea polypgenol can anti-aging, by antioxidation and clearing free radical away; caffeine is diuretic due to its function of restraining the re-
absorbing of sodium, chloridion and water; flavanols, and also caffeine, help to refresh mind and remove fat.
PREPARATION: we recommend using glass-based or porcelain tea ware. Rinse tea cup and teapot with hot water. Use about 2 grams of tea leaves (1-2 teaspoons) for
every 150ml of water. Steep tea leaves in hot water at 85°c to 90°c for 1 minute for the first and second brewing. Gradually increase steeping time and temperature for
subsequent brewing.
TÉ VERDE - GREEN TEA

CARATTERISTICHE: il tè verde è prodotto in gran parte a mano e durante la lavorazione non deve subire alcuna ossidazione. Le foglie di tè sono arrostite subito dopo la
raccolta per arrestare il processo di ossidazione naturale, che è una parte della creazione del tè nero e oolong. L’azione degli enzimi presenti nel tè, è fermata dal riscalda-
mento in vaschette o dalla vaporizzazione delle foglie prima che si asciughino completamente. Una volta infuso, il tè produce un colore giallo-verde.
LUOGHI DI ORIGINE: il tè verde viene prodotto in varie regioni della Cina, come lo Zhejiang, l’Anhui, il Jiangsu e il Fujian.
BENEFICI: il tè verde contiene vitamina C, aminoacidi, e, come la maggior parte dei tè verdi cinesi più fini, ha una delle più alte concentrazioni di catechina fra i tè. Il tè

CHARACTERISTICS: green tea is largely produced by hand and during processing must not undergo any oxidation. The tea leaves are roasted early in processing (after

steaming the leaves before they completely dry out. When steeped, the tea produces a yellow-green color.
PLACES OF ORIGIN: green tea is produced in different Chinese regions, like Zhejiang, Anhui, Jiangsu and Fujian.
BENEFITS: green tea contains vitamin C, amino acids, and, like most finer Chinese green teas, has one of the highest concentrations of catechins among teas. Green tea
has high levels of antioxidants and other natural chemicals that reputedly help reduce the incidence of cancer, promote good skin tone and help reduce the affects of aging.
Also high in vitamin C, fluoride and calcium, they also promote healthy teeth and bones. Green tea is also widely renowned in China as a good tea to help calm the mind,
cheer you up and clear your thinking.
PREPARATION: for best infusion results, water at around 75-80 °C should be used to brew the tea leaves. Although it is common practice nowadays to steep green tea
tea in porcelain or glassware, the real taste profile of a finer green tea is achieved only by using a genuine, slightly porous, Yixing clay teapot, which since the beginning, was
popular exactly for preparing green tea well. The best is to do 4-5 infusions of 20-40 seconds each.
TÉ AL GELSOMINO - JASMINE TEA

CARATTERISTICHE: il tè al gelsomino è tè profumato con l’aroma proveniente da fiori di gelsomino per creare un tè profumato. In genere, il tè al gelsomino possiede il
tè verde come base; tuttavia, vengono utilizzati anche tè bianco e tè nero. Il sapore del tè al gelsomino è sottilmente dolce e molto profumato. È il più famoso tè profumato
in Cina. Per questo tè, un germoglio e un ramoscello sono raccolti, a volte rollati a mano in forma di perla, ed essiccati come un tè verde. Il tè viene poi mischiato con fiori
di gelsomino freschi di raccolto (circa 70% di tè e 30% di gelsomino) e lasciati ad assorbire il sapore e l’aroma del gelsomino. Il tè è poi separato dal gelsomino e messo ad

LUOGHI DI ORIGINE: l’origine del tè al gelsomino dipende dalla zona di provenienza della materia prima utilizzata, ad esempio può trattarsi di tè verde del Fujian o tè
bianco proveniente dal Fuding.
BENEFICI: lo stesso discorso può essere fatto per quanto riguarda i potenziali benefici. Il tè al gelsomino con base di tè bianco Silver Needle è rinomato per i suoi benefici
per la salute, contribuisce a ridurre il rischio di attacchi cardiaci, di alcuni tipi di cancro e a ridurre gli effetti dell’invecchiamento. Per quanto riguarda invece i tè al gelsomino

contribuendo a ridurre la depressione e aiutando anche con la disintossicazione naturale del corpo. Inoltre il gelsomino può armonizzare lo stomaco, regolare il flusso di

energia vitale, rafforzare il fegato, migliorare l’acuità visiva, contribuire a produrre la saliva e spegnere la sete. Il fiore di gelsomino ha il beneficio di rinfrescare la mente,
favorire la perdita di peso, liberare la gola ed eliminare efelidi e rughe.
PREPARAZIONE: si consiglia di utilizzare accessori in porcellana o in vetro. Sciacquare la tazza da tè e la teiera con acqua calda. Utilizzare circa 2 grammi di foglie di tè (1-2
cucchiaini) ogni 150ml di acqua. Lasciare in infusione le foglie di tè in acqua calda da 70° C a 80° C per 1 minuto per la prima e seconda infusione. Aumentare gradualmente
il tempo e la temperatura delle successive infusioni.
CHARACTERISTICS: Jasmine tea is tea scented with aroma from jasmine blossoms to make a scented tea. Typically, jasmine tea has green tea as the tea base; however,
white tea and black tea are also used. The resulting flavour of jasmine tea is subtly sweet and highly fragrant. It is the most famous scented tea in China. For this tea, a bud
and sprig is picked, sometimes hand rolled into a pearl shape, and dried as a green tea. The tea is then mixed in with freshly picked jasmine flowers (about 70% of tea and
30% jasmine) and left to absorb the flavor and aroma of the jasmine. The tea is then separated from the jasmine flowers and allowed to dry after being in the moisture.
PLACES OF ORIGIN: the origin of jasmine tea depends on the area of production of the raw material used, for example, it can be green tea from Fujian province or white
tea from Fuding.
BENEFITS: the same argument can be made regarding the potential benefits. Jasmine tea made with a base of white tea Silver Needle is renowned for its health benefits,
helping reduce the risk of heart attacks, some cancers and reducing the affects of aging. Regarding jasmine tea made of green tea, it helps reduce the instance of some
