Fish Kebab

Preparation Time : 15 minutes


Cooking Time : 1 hour & 15 mins.
Serves / Makes : 10

Ingredients
2 canned white flesh Tuna (strain the oil/water properly)
1 boiled & smashed potato,
3 medium finely chopped onion,
5-6 clove garlic & 1inch pieces ginger paste,
1 egg white,
half cup chana (chholar) dal soak(2-3hrs) and grind,
1/2 cup corriander & 1/3 cup mint leave , 2 green chilli paste together,
for dry & roasted masala (2 each clove,green cardamom, & 1inch cinamon, 2tbsp whole
dhaniya , 1tbsp jeera , 2 dry red chilli,5-6corn pepper) in a grinder.
salt to taste,
oil for shallow fry
1-2 tbsp gramflower(byasan) if require.

Method

1.Heat oil in a pan


2. Put chopped onion
3. Fry in medium heat till colour will be translucent,
4. Put garlic-ginger paste, fry 2 mins
5. Then mix straind fish, fry for 3-4mins,
6.Put salt ,
7. Put pudina-dhaniya paste & mixed well. 8.Close the gas.
9.Now pour into a bowl,
10.Mix chana dal paste,
11.Smashed alu, mix white egg. mix together. 12.Put roasted powder and mix. if this
mixture is not dry much then put little gramflower.
13. Now make flatten, round shape kebab from that mixture.
14.Heat the frying pan.
15. Pour 1 tsp oil. put 3-4 kebab in a pan. heat will be little high. after 1-2 min turn other
side. pour very little oil side of the kebabs. when both side will be brown then take it out. in
this way finish all the kebabs
Mooli Aur Palak Ka Paratha Recipe
Ingredients
For dough:-Gehun ka atta (1 1/2c), maida (1 1/2c), lemon juice (1/2tsp), chopped spinach
(1c), ghee (2tbsp), salt (1tsp).
For stuffing:-Grated radish (2c), chopped green chilies (2), chopped coriander (2tbsp) and
salt (to taste).
Method of preparation:-
For stuffing:-Take grated radish in a bowl, sprinkle a little salt over it and then keep aside
the bowl for ½ an hour. Squeeze out the water and then put chopped coriander, green
chilies and salt into the radish.
For dough:-Mix the chopped spinach and lemon juice with 2 tablespoon of water in a
liquidizer. Take a bowl, sieve the flour with salt in it. Put the ghee and mix it well. Now add
the spinach mixture in the flour and then make a semi- soft dough by adding enough
water. Make small balls of this dough and then roll it into thin rotis. Put the filling in the
centre of roti and then fold the edges. Again roll it and then cook it on heated tawa. After 1
minute turn the side and apply ghee on one side and again turn the side. Cook it in this
way from both sides until it gets crispy. Make more mooli aur palak paratha in this way and
serve them hot with fresh curd

Naan Recipe
Ingredients
Self rising flour or maida (3c), baking soda (1/2tsp), butter (2tbsp), oil (1tbsp), salt (to
taste), fresh curd (1/2c) and warm milk for kneading.
Method of preparation:-
Take a large bowl; sieve together all the dry ingredients in it. Add oil, butter and curd in it.
Mix them with finger, when it gets crumbly then add milk a little until soft dough is formed.
Cover the dough with clean and wet muslin cloth. Then keep it aside for 5- 6 minutes. Now
knead the dough lightly. Take some dough. Make a ball of it and then roll it into a thick
triangle. Place this roll of triangle on preheated tawa or griddle. Apply water on the top part
with hand. Now invert it so that it gets stick to the tawa or griddle. Invert the griddle and
roast it over the gas flame direct. When it gets ready serve it hot with butter on it.
Tandoori Roti (without tandoor) Recipe
Ingredients
Slightly coarse wheat flour (2c), curd (2tbsp), maida (1/4c), ghee (2tbsp) and salt (to taste).
Method of preparation:-
Take a large bowl. Mix 2 cups of wheat flour in it. Add maida, curd, ghee and salt in it. Mix
all these ingredients well and add enough water to make the dough of this mixture. Place
the dough on the flat and floured surface and knead it until it gets soft. Take some dough
and make a ball then roll this ball of dough into a thick or round roti. Heat the griddle or
tawa. Place this roll or roti on the tawa and dry one side. When it gets dry from one side
then wet the upper side with water and then invert the side. Now invert the griddle and
roast it over the gas flame. It will fall off when done.
Serve it hot with vegetables

White Gravy Recipe


Ingredients
Fresh curd (1c), milk (3/4c), khuskhus seeds soaked in 2tbsp of milk for 1 hour (1tsp),
fresh cream (1c), husked and lightly roasted peanuts (1tbsp), finely chopped coriander
(1tsp), ginger piece (1), grated cheese or paneer (1c), broken cashew nuts (1tbsp), green
chilies (3), day old white bread (1slice), glazed or canned cherries (3-4), ghee or oil
(3tbsp), cinnamon clove powder (1/5tsp), sugar (1tsp) and salt (to taste).
Method of preparation:-
Take bread, cashew nuts and peanuts. Grind them together in a dry mixie. Now take
khuskhus, onion, ginger, chilies and grind them together in a wet mixie. Take a heavy pan,
place it over heat. Heat the oil in it and add the onion mixture in it and sauté it for 3-4
minutes. Add curd in it and stir it continuously until the whiteness of the curd disappears.
Add milk, keep it to boil then add cream, spice powder, dry mixture salt and sugar. Stir it
gently while cooking. Now add the vegetables. Cover the pan and cook it for few minutes
till it gets thickened. When the white gravy gets ready then garnish it with grated cheese,
cherries and chopped coriander leaves. Serve it hot
