Off-site catering takes the event everywhere

F
or more than 11 years, North-
ern Valley Affairs has been at
its home at Temple Emanu-El
of Closter. It has been the site
of countless events – weddings,
bar and bat mitzvahs, fund-
raising dinners, corporate events, and
more. There have been events that have
wowed with creativity, like the uncon-
ventional wedding ceremony that took
place on the outside grounds that was
made to look like a “chuppah in the for-
est,” and required quite a bit of landscap-
ing. And there have been many events
that have taken place inside the lavish
venue, which boasts an original stain-
glass dome in its sanctuary. The well-
choreographed events that are overseen
by owner Les Friedman and manager
Marty Maged, who spare no detail and
tend to every need of their clients, are
the culmination of decades in the busi-
ness that has translated into blending the
traditional “good old fashioned affair”
with delivering the innovative and the
new. The pair has built a name for what
they do and where they do it.
Now, with increasing frequency,
Northern Valley Affairs is taking their
signature events that they have done
at their home base and are replicating
them nearly everywhere in a trend to
off-site catering that has increased in
recent years.
“It’s not unusual for one family to

Off-premise catering, say event and
catering professionals, can give the event
the best of both worlds. The party maker
can choose the kind of food and kind of
event that the caterer is known to do, and
choose their venue, which can be more
convenient or more expansive than the
home base. It is a winning combination
that keeps the caterers busy and clients
happy with the flexibility.
Yamin Dayan, owner of Estihana in
Teaneck, has a flourishing off-premise
business that has grown for years. Known
for their signature Asian-inspired glatt
kosher and pareve cuisine and for its very
artful and fresh sushi, Mr. Dayan said that
his off-premise catering business has done
everything from the most “heimish” Kid-
dush with the requisite cholent and kugel,
to plated meals at spectacular venues that
run the gamut from Continental to Medi-
terranean dishes. It’s not just Asian for his
catering. While there is a natural associa-
tion with his restaurant and its cuisine, he
can do everything, bringing in chefs who
specialize in whatever the client wants.
Mr. Dayan said that he has catered lav-
ish affairs at venues including Rain in
Teaneck, The Rockleigh, Excelsior Grand

“We do it all over, and we do it all,
from Shabbos dinners to weddings,”
said Mr. Dayan. “We can give such vari-
ety from sushi and Asian specialties to

I
remember a video I watched of my
niece when she was on a trip to Aus-
tralia. It was quite the distance from
her home on Long Island, and from
her college in Philadelphia. But young
and unencumbered, she was prime for
adventure. She was on the other end of
the Earth, literally, and she wanted to take
advantage of all the opportunities Down
Under — so much so that she started from
Way Up Yonder.
The video, as I recall, was of my
20-something-year-old niece, jumping
out of a plane and skydiving to a land-
ing below. How they managed to video-
tape her, I have no idea, but I do remem-
ber her exuberant face, her managing to
smile through the whipping wind, and her
displaying the palms of her hands, upon
which she had written the letters, Y-O-L-O.
“Yolo,” as in You Only Live Once. Watching
her skydive was enough to take that one
off my bucket list. (Truth be told, it never
was on my bucket list.) But I’m sure that is
one thrill she will never forget.
One need not go to Australia or even
jump out of a plane to experience the thrill
of skydiving in our area. In fact, no plane
is necessary.
The first indoor skydiving venue in
the area has opened in Paramus, iFly on
Route 4.
“We’ve been packing them in every
week since the March 30 opening,” said
Joshua Braunstein, the sales manager.
“This is a great place for birthday parties,
corporate events, anything. This is some-
thing new, something different. And who
doesn’t want to be able to fly?”
In fact, said Mr. Braunstein, even people
who can’t walk, can “fly” in the simulated
capsule that creates a wind from all angles
that helps to support someone in mid-air.

whatever is necessary for the week. After
spending time picking out produce, meat,
dry goods, paper goods, prepared foods,
and being rung up at the cashier, out
comes the cart filled with bags that get
stored in the trunk. Thus goes the grocery
shopping experience. Some people love
grocery shopping. For others it is a more
prosaic exercise in making sure that the
refrigerator is filled with food and that no
one goes hungry.
Going to the grocery store or market to
shop for an event requires putting all the
pieces together. You have your list and
you have your ingredients of what you are
going to buy and to either cook or create
your party. That is if it’s a small enough
party.

Celebrating a (big!) milestone birthday

here’s something special
about the Eightieth. It’s not
just that you’ve lived four
score years. You’re actually
blasting into your ninth decade.
How to celebrate the 80th
birthday? A trip to Paris with a
visit to the Louvre, and a stroll
down the Champs Elysees? Or
glide in a gondola through the
canals of Venice? A Mozart festi-
val in Vienna?
None of this can be shared
with grandchildren and friends.
Here’s a unique idea. How about
a party? And so it was. A graphic
artist niece set the theme with a
picture display on a folding three-
by-four-foot board entitled “80
years with Sharon.” It’s all there
in some six dozen pictures of all
shapes and sizes — photographs,
newspaper clippings, and por-
traits from birth through the
years of childhood, adolescence,
marriage and motherhood.
Where’s the party? All possi-
bilities were explored from the
elegant (The Plaza Hotel) to the
spectacular (the Jewish Heritage
Museum with it’s breathtaking
view of the Lower Bay and the
Statue of Liberty), to the conve-
nient but minimal (a restaurant
with an attractive room overlook-
ing a garden but limited availabil-
ity) to the cozy and familiar (the
hostess’ own spacious apart-
ment). It was like Amazon’s
exhaustive search for a second
headquarters.
The choice was the Jewish
Community Center of Manhattan with its
library and adjoining party room, both of
which open onto an outdoor balcony, a
classy arrangement at a manageable price.
Food? Yes. Again, a vast range of possi-
bilities from frail tidbits to hardy fleisch.
The one that made the most sense was a
dairy meal provided by the caterer who
services the JCC
Booze? At the JCC one could bring
one’s own wine and spirits at great sav-
ing in cost. Besides vodka and scotch, we
selected an Israeli mevushal wine, both
red and white, moderately priced, which
our advising maven said, “Nobody will
complain and say, ‘What the hell is this?’”
For the guest list we were guided by Dr.
Spock’s party rule. One should invite only
the number of children equal to the age of
the guest of honor. So we invited a mere
80, and felt guilty about the many who
were omitted.
The menu was poached salmon with an
appetizer of macaroni and cheese served
in demitasse cups. The choice of cake
was left up to the caterer’s baker with the
admonition, “No sacher torte!”
Multicolored invitations printed with a
creative font went out with the injunction
“No presents please,” but guests had the
option of making a donation to Hadassah
in honor of the birthday lady. Hadassah
benefitted, but there were also memen-
tos from the year of her birth — a copy of
an 80-year-old page one newspaper and a
recording of songs popular in that era.
For decorations, framed family pic-
tures, some 50 in all, were gathered from
Sharon’s apartment. Each picture was
assigned a number and they were distrib-
uted on the tables along with a list describ-
ing each numbered picture. It became a
sort of party game as the guests roamed
among the tables to identify the pictures.
Entertainment ranged from the

sentimental and heartfelt to the
jocular and barbed. The birth-
day celebrant began by greet-
ing everyone by name and men-
tioning a fragment of their life
together. There were remarks by
her sister, her two oldest friends
from childhood and a brief nar-
rative by her husband on how
they met.
Her oldest grandson charmed
her with a guitar solo. A cousin
who was critically ill traveled
from Florida to be there, and
employed magic tricks to tell her
story about their youth. Another
cousin, a Broadway lyricist, pro-
voked howls of laughter with
an original song that told how
indebted she was to her older
cousin for teaching her the facts
of life.
Then, so the party would
not become too warm and
affectionate, came a roast by
her two sons. Their ammuni-
tion was their mother’s habits
and pronouncements, theories
and axioms, accumulated over
time. Her favorite bus route, a
bête noir politician, a theory
about women’s health, and a
denouncement about doctors
— nothing was spared until the
food arrived, and with the food
came a problem.
The JCC had scheduled an
open house for new and poten-
tial members the same day as the
birthday party. By the time the
conflict was discovered it was
too late to change either event.
Even though a large sign stat-
ing “Private Party “ was outside
the door, many uninvited came drifting
in. One in particular was gobbling up the
macaroni and cheese and marring a beau-
tiful food display. When asked to leave, he
was taken aback. “You should invite every-
body. That’s what we do where I come
from.”
“Maybe we’ll do that next time.”
Ed Silberfarb was a reporter for the Bergen
Record in New Jersey, then the New York
Herald Tribune where he was City Hall bureau
chief. Later, he was a public information
officer for the New York City Transit Authority
and editor of one of its employee publications.

What to wear to an affair?

Received a wedding invitation and unsure about what to
wear? You’re not the only one. It’s challenging to decipher
the wedding dress code these days.
Here’s what you need to know:

White tie
“Whip out your best stuff ... purchase or rent it for the
evening,” said Ms. Bil, explaining guests should dress like
they’re meeting the president or the queen. “This is going
to be a big event.”
Men should wear formal tuxedos, dress shoes and even
gloves. Women are expected to wear floor-length gowns,
and nothing too revealing. Consider getting professional
hair and makeup.
White-tie events are typically held at government build-
ings, mansions and hotels.

Black tie
Treat black tie like a red-carpet event.
“Pretend you are going to the Oscars or opera,” said Ms.
Bil, who calls this her favorite wedding style.
Guys should wear tuxedos. Women should dress up in
gowns, which can be eye-catching and designer styles.
“As a guest invited to a black-tie wedding, you should
opt for a formal gown in a neutral color,” said the Chins.
“You can also wear a chic cocktail dress or a long evening
gown.”
Still not sure what to wear? “When in doubt, picture
what would look appropriate next to a tuxedo,” they say.
Black-tie weddings are often held at large venues includ-
ing high-end hotels and art galleries.

Black-tie optional or formal

“Pretend you are going to your prom again,” said Ms. Bil,
who added that formal is the most popular wedding dress
code. It’s often seen at weddings held at banquet halls and
hotels.
Women wear dresses, including shorter styles, if
desired. Men don tuxes or dark suits and dress shoes.

Semi-formal
This style has a slightly laid-back vibe.
“The important part, again, is not to aim too informal,”
said the Chins. “And this means jeans, no matter how nice,
are simply a no.”
Ties are optional for guys. Ladies typically wear dresses.
“Clothes can be comfortable, but still presentable,” said
Ms. Bil, who generally sees this style at smaller venues
such as restaurant receptions, bars and golf courses.
With semi-formal, the time of the wedding dictates what

“If the ceremony and reception are later in the evening

the Chins, who note a daytime wedding calls for vibrant
colors and lightweight fabrics.
