SYSTEM 700
INFRARED & INDUCTION HOB

Ambach System 700 ceramic hob with infrared and


induction heating techniques is built in level with the
covering.
The 6 mm thick ceramic hob is easy to clean.
The automatic pan detection with 100% power shut
down is a standard fitting with the infrared heating
technique. This function can be turned off if necessary.

IVP: The chef decides whether he wants to use the


permanent power or the energy saving pan
detection.

The induction technique is the power source with the


highest degree of efficiency. With System 700 induc-
tion hob, the power is continuously adjustable. The
warmth is produced using the induction technique
directly in the pan bottom.

IVP: Pleasant for the chef, immediate heat in the pan


(see thermo gram), fast cooking times, exact
adjustment and low heat loss.

Ambach induction hobs have an ingenious cooling


system.

IVP: The generator's over heating limit device and


the labyrinth refrigerating filter guarantee a

INDUCTION WOK

Gas woks are usually used on strong gas rings as the


chef needs the pan to be very hot.
The same performance can be achieved using a more
comfortable type of energy source with the Ambach
Induction Wok.

IVP: The extremely strong induction coil creates an


even temperature in the wok.

For even more operational comfort, you can also


order the induction wok with a digital control.

IVP: The low voltage control board can be found


behind the touch control panel. This technique
has successfully been used by Ambach for
years.

The placing of the important components insure for


easy servicing.

GAS HOB

There is a 2 burner and a 4 burner hob in the Ambach


700 Series. Due to the construction of the modules
and the hygienic covering, it is possible to extend the
number of the burners according to the customer's
wishes.
The standard 2 flame hob is fitted with a 5.6 kW burn-
er at the front and a 3.5 kW burner at the back. The 4
flame hob is fitted with two 3.5 kW burners and two
5.6 kW burners.
The burners are built into the 2 mm thick stainless
steel recess.

IVP: overflowing fluids cannot enter the appliance.

Ambach gas hobs are preset at the factory for all


kinds of gas.
Our long year experience in building gas appliances
guarantees a long lifespan of the appliance.

IVP: The massive brass burner heads are heat resist-


ant and stainless.

IVP: The ignition burner is incorporated in the burn-


er head.

IVP: The pan support grids are made of stainless


steel.

ELECTRIC SURFACE RANGE

Everyone knows the advantages of an electric surface


range.
The cooking surface can be used with various sized
pans.
Here we are talking about extremely heat resistant
bronze heat storing blocks.

IVP: The cast bronze is conductive and tolerates the


highest temperatures. The Incoloy heating ele-
ments cannot overheat due to the bronze appli-
ance casing which also increases the lifespan.

IVP: An optimal energy transfer is achieved through


the direct contact of the heat storing blocks with
the cooking surface. (see thermo gram, left pic-
ture).

The spillage channel is tilted slightly to the side drain.


Overflowing fluids are directed to the stainless steel
collecting container.

IVP: The 15 mm thick polished steel plate is hermet-


ically moulded into the recess which makes
cleaning easier.

The cooking plate has an automatic partial load shut


down, as soon as a pan is placed on the hob, the

A standard feature of the Series System 700 electrical


appliances is a fitting that can be connected to an
energy consumption optimizing arrangement.

ELECTRIC GRILL TOP

Ambach 700 grill tops have various surfaces, flat or


ribbed special steel, as well as highly polished com-
pound plate.

IVP: Compound grill plates have a low heat radia-


tion, low sticking tendency, and an optimal
cleaning characteristic.

The innovative Ambach Thermal Block Storage


Technique*) ensures a perfect temperature distribu-
tion.

IVP: the in alloy embedded heating elements consid-


erably increase the lifespan of the appliance.
IVP: Lowest drop in temperature by loading through
the thermal block storage technique.

The temperature regulation of each grill plate is con-


tinuous between 50° and 300°C.
The compound grill plate is deep welded and level in
the hygienic covering. An optional Teflon plug stops
the drainage of the fat.

IVP: this enables roasts and other dishes to swim


slightly in fat, e.g. by fish that is grilled whole.

COMPOUND WITH SPLASH GUARD IVP: The opening of the fat recovery container is her-
metically welded and stops fat running into the
inside of the appliance.

The optional splash guard is easy to remove to clean


and fits in every industrial dishwasher.
The special steel griddles are welded in a slightly tilt-
ed position towards the front to allow healthy low fat
grilling.

*) Thermal energy storage blocks are Incoloy 800 heating elements indi-
vidually imbedded in alloy to ensure an even heat distribution. The direct
contact with the underside of the griddle and the perfect heat transmission
of the storage blocks ensure optimal efficiency and temperature stability.

ELECTRIC BAINS-MARIE

Whoever decides on a Bain-Marie from the Ambach


System 700 wants more than just to keep food warm.
Using a Bain-Marie it is easy to prepare dishes such
as spinach pudding, or cream caramel:
The electromechanical thermostat can be regulated
between 30° and 110°C. The water level is constantly
controlled by two sensors.

IVP: The low level water shut off stops the destruc-
tion of the water well if used without water.

The water inlet and the overflow are integrated in the


well wall.

IVP: This makes it easy to clean and to take out the


perforated bottom panel.

The water valve handle is situated on the front of the


control panel.
The drainage seal does not protrude above the perfo-
rated bottom panel.

IVP: This allows the optimal usage of the three 150


mm deep GN 1/3 containers.

COUNTER ELEMENT

Worktops, base units, bridge elements and the many


compensating elements of the System 700 allow you
to design your individual kitchen block.
The worktops have got a 4 mm thick sturdy stainless
steel frame construction.

IVP: This ensures absolute stability.

IVP: Two units mounted next to each other only


require two feet, this makes floor cleaning easy.

The stainless steel drawers are fitted with ball bear-


ing stainless steel runners with self closing feature.

IVP: The drawer will only stay open when fully


pulled out, half open it closes by itself. This
lessens the chance of hurting yourself on an
open drawer.

The hygienic base units can be replaced with a heat-


ed cabinet or an oven depending on the width of the
unit and the onsite electricity connection.

IVP: The easy removal of the base unit helps the


service technician with his work.

That saves time and money.

OVEN AND HEATED CABINET

Despite modern hot air ovens, many chefs don't want


to do without a traditional oven.
The small amount of space needed speaks for this
unit. The upper and lower heat regulation is separate
and is continuous between 30° and 300°C.
Ambach System 700 ovens are easy to clean due to
the hygienic design and the well processed doors.

IVP: The stainless steel door axle has enclosed door


hinges. The doors have an internal shock
absorber which acts as an opening limit.

The hygienic heated cabinets with stainless steel


wing doors are fitted with circulating air heaters for
optimal heat distribution.
IVP: The fine feeling temperature regulator allows
the cabinet to be used as incubator for yeast
dough.

REFRIGERATED BASE UNIT

Due to the new hygiene standards in the catering


world, refrigerated units play an even more impor-
tant part in the correct storage of food.
Intermediate storage or „Mise en Place“ is not imag-
inable any more without refrigerated base units.
The refrigerated base units of the Ambach System
700 are available with a power unit or a connection
for an onsite refrigerated unit and with drawers or
doors.

The cells are separated for the storage of different


foods. The internal parts such as runners, gratings,
condense water container can easily be taken out for
cleaning without the use of tools.
Programming the digital display is simple and easy to
understand.
The circulating air can be turned off, if static cooling
is required.
The base units are equipped for the following tem-
peratures, -2/+10°C, and 0/+10°C.

Optionally, the base units can have a wider door for


using 600x400 mm containers.
All components that need servicing are situated on
the front of the unit.

ELECTRIC DEEP FAT FRYER

Ambach System 700 one and two well deep fat fryers
are fitted with high efficiency heating elements.

IVP: The performance is 1kW per litre effective


capacity.

The wells are hermetically welded into the one piece


hygienic top and are fitted with a high moulded
upstand.

IVP: This stops fluids from the one piece hygienic


top entering the hot fat. A considerable point of
safety.

The oil well is made in one piece and has a large cold
zone underneath the heating elements.

IVP: The rests from frying collect together in this


cold zone, and due to the low temperature, can't
be burnt. The fat therefore stays fresh longer.

The deep fat fryers are fitted with a large sized ball
valve to ease the changing of the fat. The fat drain is
situated straight down without a bend.

IVP: This eases the drainage and stops the blockage


of the drain.
MOULDED UPSTAND
The heating elements are fitted with a non abrasive
stopping mechanism.

IVP: This protects from the unintentional falling


down of the heating elements during cleaning-
a further safety feature of the Ambach deep fat
fryers.

The fat recovery container and the wing doors of the


base unit are standard features.

PASTA COOKER

There are two types of electric pasta cooker in the


System 700 series, a lengthways built in version of 24
litre and a sideways built in version of 36 litre.
The deep drawn well in stainless steel (molybdenum
alloy) is welded into the one piece hygienic top.
The large volume starch drainage hole has an easy to
remove filter to help cleaning.
The sturdy perforated removable cover plate can be
found above the starch drainage hole.

IVP: This helps stop damage to the well when shak-


ing the pasta baskets.

The electro polished heating elements are made of


salt resistant stainless steel. They are fitted below the
perforated drain grate.

IVP: This enables faster heating of the water.

The continuous temperature regulation allows other


foods to be cooked such as vegetables, fish, pate and
also eggs for breakfast.

ELECTRIC MULTI FUNCTION BRATT PAN

The pan of the bratt pan is hermetically welded into


the one piece hygienic top.
The System 700 bratt pan is heated by the thermo
energy storage blocks. The 15 mm thick compound
bottom is connected to the 15 mm thick thermo ener-
gy storage block and ensures an even heat distribu-
tion in each part of the pan and avoids a fall in tem-
perature when loading cold cooking contents.

IVP: The stabile temperature - a credit of the thermo


energy storage block- is especially important
when roasting meat so that it doesn't start
braising.

The temperature can be continuously regulated


between 50°C and 300°C.
Due to the plug being situated at the front, the bratt
pan is ideal for the preparation of meals that are nor-
mally prepared in a frying pan - incrustation of
sauces, ragouts, risottos...
The drain makes it easy to transfer to the GN 1/1 con-
tainer that can be found in the internal hygienic cup-
board.

IVP: The large waste pipe is level with the upper


edge of the GN container to reduce deposition
of dirt in the cupboard room.

BRATT PAN

Ambach System 700 bratt pans are the perfect addi-


tion to a compact kitchen.
The frame of the bratt pan is made out of 4 mm thick
stainless steel.
The compound pan bottom is made of molybdenum
stainless steel and is easy to clean due to the round-
ed corners. The double walled stainless steel lid is
hermetically welded. It is balanced with the spring
that is incorporated in the lid.

IVP: The water inlet is automatically pushed to the


side when the lid is closed.

The pan is heated by the thermo energy heating


block technique (see note on page 8).
IVP: This ensures high heat stability, exact tempera-
ture control, optimal temperature transmission,
best results, gentle cooking of delicate food
goods, better energy efficiency and longer lifes-
pan of the heating elements.

The electronic control is installed in a separate black


box inside the appliance.
The digital display is easy to understand.
As well as the start/stop function of the automatic
cooking process with optical and acoustic display, the
HERMETICALLY WELDED LID nominal value and the actual value are displayed.
The control board behind the membrane keyboard
works on a low voltage.

IVP: Damage to the membrane does not mean the


appliance is not operational.

The water measuring device allows exact filling in


litres. The 2 inch drain is closed with a stainless steel
plug which also doubles as a measuring instrument.
