Adding pineapple chunks to the adobo dish enhance and yield fruity sweet flavor.

As a Filipino, I find adobo really taste good and it’s hard to resist once
on the table, but sometimes I simply feel that I am tired of eating same food of same flavor again and again. Having this adobo with pineapple chunks
version breaks the sated or appetite loss feeling about this all time favorite dish.

Ingredients:

 1 kilo pork including its fat, cut into about an inch cubes
 ~400 grams of pineapple chunks (I often use pineapple chunks in can for convenience, reserve its syrup)
 1/4 cup soy sauce
 1/2 cup white vinegar
 1 piece bay leaf (laurel)
 1 teaspoon black peppercorn
 1-2 cups water
 5 cloves garlic, chopped
 2 tablespoon cooking oil for sautéing

Procedure:
1. In a deep pan, heat the oil and sauté garlic until slightly brown.
2. Add pork and stir fry for couple of minutes.
3. Add soy sauce, vinegar, bay leaf, peppercorn, pineapple syrup, and water just enough to cover the pork. Let it boil. Reduce heat, cover the
pan, and simmer it about 30 minutes or until pork becomes tender and its sauce is half way evaporated. Add more water if necessary if in
case liquid is drained early and meat is not yet tender.
4. Add the pineapple chunks. Mix it with the pork and continue cooking for a couple of minutes and it’s done.
5. Best served when hot.
