Recipe for Pumpkin Pecan Pie Squares Serves 12

1 c. flour
1/2 c. oats (regular or quick-cook)
1/2 c. packed brown sugar
1/2 c. butter, softened
3/4 c. sugar
1 can (15 oz.) pumpkin
1 can (12 oz.) evaporated milk
2 large eggs
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/2 c. chopped pecans
1/4 c. packed brown sugar

Preheat oven to 350. Combine flour, oats, brown sugar and butter. Beat at low speed 1 to 2
minutes until crumbly. Press on bottom of ungreased 9x13 pan. Bake 15 minutes. Combine
granulated sugar, pumpkin, evaporated milk, eggs and spices in large bowl. Beat at medium
speed 1 to 2 minutes. Pour over crust. Bake 20 minutes. Combine pecans and brown sugar.
Sprinkle over filling. Continue baking 15 to 25 minutes or until knife inserted in center comes out
clean. Cool completely in pan before cutting into bars.
