How Rendang is Made

Rendang is one of most traditional food in Indonesia. It’s spicy meat dish which
originated from Minangkabau. It’s served at ceremonial occasions and to honour guests.
Rendang is including to World’s 50 Most Delicious Foods by CNN.
Rendang is revered in Minangkabau culture as an embodiment of philosophy of
“musyawarah”. It’s mean discussion and consultation with elders. Rendang has been
claimed that the four ingredients represent Minangkabau society as a whole. The meat or
“dagiang” symbolizes the niniak mamak or traditional clan leaders, coconut milk or
“karambia” symbolizes the cadiak pandai or teachers, the chili or “lado” symbolizes the alim
ulama, and the spice mixture or “pemasak” symbolizes the rest of Minangkabau society.
How Rendang is made ? Rendang mades from meat, coconut milk, chili, and spice mixture.
The first process is making a paste. Chillies will be soaked in boiling water for 15
minutes and then the seeds will be drain from chillies. The second process is cutting the
beef. The beef will be cutted into square. Third process is frying the paste and the beef. The
oil for frying will be heated for 5 minutes, then the paste will be added to pan until the
aroma is released. After that, the beef, coconut milk, and water will be added to paste.
Fourth process is prepare the coconut. The coconut for Rendang will be toasted in a
frying pan on a low heat for 5 – 7 minutes. After toasting coconut, coconut will be made into
finer pieces by a blender. The final process is cook Rendang. After 2 hours fying, the
coconut, kaffir lime leaves, chicken stock powder, tamarind, sugar and salt will be added to
pan for 30 minutes and the oil will be separated from the mix. Rendang is ready when the
meat is tender.
