1.1.0. AIM:
Analyzing reasons for extensive development of the street food culture in Surat.

1.2.0. OBJECTIVES:
1. Importance of street food culture among the people of Surat.
2. Delicacies which are popular among the people of Surat.
3. Understanding the environs in which street food culture is prevalent in
Surat.

1.3.0. SCOPE OF WORK:


Street food is ready-to-eat food or drink sold in a street or other public place,
such as a market or fair, by a hawker or vendor, often from a portable food booth,
food cart or food truck which represents the rich tapestry of Surats multi-cultural
fabric.

Hundreds of different street food with their diverse ingredients and aroma across
different streets and regions in Surat opens a window into the world of people of
different community having their own tradition and diversified cuisines.

Our study is limited to the area of gaurav path on piplod such that the environs
are well understood and proper solutions can be determined for the problems of
health, hygiene, parking and waste disposal facilities which are existing due to
unawareness in mass public.

2.0.0 INTRODUCTION OF SURAT AS A FOOD CITY:
Surat nu Jaman ane Kashi nu Maran
to dine in Surat and to die in Kashi are considered the most soul ennobling
acts, according to the wise sages. The waters of the Tapi are said to lend their
distinctly delicious flavour to the famous food of Surat. The cuisine of the city
consists of an exclusive array of exotic dishes prepared only in the Tapi Town.
Surat holds its place in history for its distinct, lip-smacking cuisine. The unique
delicacies that Tapi town offers have a rich past the tales of which suggest why
we prepare certain delicious fare and relish it at a particular time every year.
Starting from Dumas langar na bhajiya to Malhar na dosa, Goswami ni pani-puri,
Zapa bazaar,Talavdi,Chowk nu non-veg, Bhai Bhai and Navsari bazaar na eggs, the
famous old Khaudhra gali to Gaurav path na Paratha Suart serves the widest
variety of savouries to go crazy pampering the taste-buds.

3.0.0 IMPORTANCE OF STREET FOOD


The street food vendors are valuable because it is a large significant area
supporting the livelihoods of millions of the urban poor.

The convenience and low prices make street food the most favored choice.

The concept of traditional street food has acquired new dimensions in


developed countries, with food streets/food centers emerging as new
tourist attractions.

Major tourist destinations abroad invariably have food streets offering


exotic local foods.

Nothing represents the rich tapestry of Indias multi-cultural fabric better


than street food. The cuisine of a place speaks volumes about the weather,
culture, lifestyle and habits of the people.

Like travelling educates us like no book ever could, hundreds of street food
with their diverse ingredients and aroma across different states and regions
open a window into the world of people and give us a perspective of their
lives and mores.

4.0.0 STREET-VENDED FOODS & URBAN FOOD


SUPPLY (NASVI REPORT-2007)
As per government own admission, the total of street vendors in the
country is estimated at around 1 crore.

Some studies estimate that street vendors constitute approximately 2% of


the population of a metropolis.

Street-vended foods included foods as diverse as meat, fish, fruits,


vegetables, grains, cereals, frozen produce and beverages.

Types of preparation included foods without any preparation, ready-to-eat


and food cooked on site.

They also make a very large contribution to the national economy.

Vending facilities varied from mobile carts to fixed stalls and food centers.

Infrastructure developments were relatively limited with restricted access


to provide water, toilets, refrigeration and washing and waste disposal
facilities'.

5.0.0 STREET-VENDED FOODS & PUBLIC HEALTH

Lack of basic infrastructure and services, such as potable water supplies.

Difficulty in controlling the large numbers of street food vending operations


because of their diversity, mobility and temporary nature.

General lack of factual knowledge about the microbiological status or the


precise epidemiological significance of many street-vended foods.

Poor knowledge of street vendors in basic food safety measures.

Here exists a unique practice which I call Footpath eateries.

. On both sides of the Surat-Dumas road, in Piplod area, are lined with people
sitting on footpaths and eating. The footpath is lined with several hawkers selling
paranthas, pav bhaji, corn, sandwiches and frankies. The hawkers spread chatai in
front of their thelas for their customers. If not, people just bring their own food
and have it there.

you are going to love the experience of sitting on the wide footpath, the shiny
lights of Iscon Mall, Big Bazaar and Chroma gleaming over you and cars zipping
past. This is a strict dont-miss if you are visiting Surat. You cannot leave from
Surat without experiencing the footpath eateries.

The foothpath attracts joint families (I needent mention joint families specially,
because Suratis ALWAYS travel with their extended families) and college kids.

Gaurav Paths to add to Surat glitz

SURAT: Come April, zooming down the Piplod-Dumas road would be a thrilling
affair. With three lanes in each direction for uninterrupted vehicular movement,
service roads on both sides and greenery in the backdrop of high-rise buildings,
this road, christened 'Gaurav Path', would ensure a smooth ride for Surtis.

This is the first of four Gaurav Paths planned for the city in 2006 by the Surat
Municipal Corporation (SMC). The other three, with a total length of about 13 km
in different parts of the city, would help ease traffic congestion.
The 'Gaurav Path' from Malhar Complex to Rundh octroi post in Piplod, having
been built at a cost of Rs 12.5 crore, is almost complete and final touches are
being given, according to officials in the corporation.

SMC commissioner Pankaj Joshi said the total width of the 2.5-km-long Gaurav
Path is around 60 metres. The 3.25-metre broad central verge has a decorative
fountain with attractive lighting and plants, Joshi said.

Parking arrangements have been made on 6-metre-wide blocks along the


concrete pavement on both sides and a provision for 11 bus stops has been made
, said city engineer BM Desai.

With this Gaurav Path, travelling towards Magadalla airport and Dumas and also
to Hazira from Athwalines and Ghod Dod Road would be fast and free from any
traffic snarls, said Joshi.

The other three Gaurav Paths would come up at Surat-Navsari road with a total
length of 7.8 km, Surat-Bardoli road with a length of 2.4 km and Rander-
Ramnagar, a stretch of 2.8 km.

All these Paths, currently under various stages of construction, would be


completed by the end of 2006, at an estimated cost of Rs 55 crore, Joshi told TOI.

NEW DELHI: The country needs to tap the huge potential of street food sector as
it can provide employment and help growth of tourism, food experts said today.
At a national consultation organised by National Association of Street Vendors of
India (NASVI) here, street food advocates demanded that the government should
formulate a national policy for encouraging street food vendors. They also called
for creation of food streets, trainings to street food vendors and support.

Culinary cooking sensation Vikas Khanna, a better known face from Masterchef,
however believes that whereas street food inspires his cooking style, it is beyond
his capacity to reproduce the taste that is served on the streets.

"One cannot do better street food than the people who serve on the streets. To
be really honest, I can't do it," Khanna told PTI.

"I can't re-create the same 'golgappa paani' in my kitchen. That particular 'paani'
has its own texture and flavour which is hard to get in a room similar to an
operation theatre (the restaurant kitchens)," Khanna says.

STEPS TO BE TAKEN FOR ENHANCEMENT OF STREET FOOD:


Street food vendors must be Regulated and Governed

Availability and reliability of data, financial provisions, monitoring

and quality.

Vendors as partners in the urban food supply system providing

control and supervision to ensure nutrition and safety value of the foods

(FSSA Legitimacy and Regulation of vendors) The location of the

vending unit should be in a place approved by the local authorities

and not blocking traffic or pedestrians or near unhygienic Locations.

Considering elements of Public Health, Sanitation and Food Safety

Need for training of vendors on the basic principles of sanitation,

Manufacturing quality and safety besides consumer rights and

education.

ISSUE OF GOVERNANACE IN INDIAN CITIES


Multiplicity of departmentsland development authority/PWD/
police/health department/food safety department.
Policies and laws not implemented if implemented not properly.
Capacity of municipal bodies planning for cities not dynamic and out of sync
with real situation.
Harassment by police and local administration and mafia.

SCHEME OF UP GRADATION OF QUALITY OF STREET FOOD

SAFE FOOD TOWNS:


Provide training to the street food vendors to enable them to voluntarily
adopt the hygienic practices to improve the quality of food served.

Assist them in getting registered and provide them with identity cards,
possession of authorized vending spaces in the vending zones from the
municipal authorities.

Health checks to ascertain the status of health of the vendors/ their


families and follow up immunization programme.

Insurance; health cover for the vendor and a maximum of 4 members in


her/his family, life insurance cover for accidental death/
dismemberment/partial disability and insurance cover for the processing
and vending equipment/cart/kiosk avoiding overlap and duplication of
other public funded schemes.

Grant of 25% towards the cost of a scientifically designed safe & hygienic
food cart/kiosk or

Facilitating microfinance to the selected vendors for the rest of the


amount for cart/kiosk and working capital.

Promote the concept of Clean and Tasty street food through awards for
the best vendors, municipalities.

STREET FOOD AN EFFECTIVE POLICY ON FOOD SAFETY

Hence, the vendors that are currently positioned along the gaurav path can be
provided with the above marked spaces, i.e. by expansion at the night bazaar and
further development at the open plot behind Shardayatan School that can be
instrumental in providing better quality food as well as driving a huge part of
traffic away from the main road.
