INGREDIENTS METHOD
2 lb (1 kg) meaty pork Prepare a large ice water bath. Bring a large pot of water to a boil. Working
spareribs, cut crosswise in small batches, add the ribs to the boiling water and blanch for 1 minute,
through the bone into allowing the water to return to a boil between batches. As each batch is ready,
1-inch (4-cm) pieces use a slotted spoon to transfer the ribs to the ice bath to stop the cooking.

appeared in Italy in the sixteenth century and spread to France and

education and models for art schools around the world. The political power of
these countries significantly contributed to not only the increasing number of
artists, but also to the acquisition of masterpieces, which supplied many of Europes
museum collections. Academic art history casts a large shadow over contemporary
artists working in Europe and provides a necessary backdrop for understanding the
emergence of street art in Europe.

Street art in the twenty-first century looks very different in cities that wear
their history throughout their urban and suburban landscapes. Its an art form that
contrasts sharply with this history and provides an alternative to tradition and

to the establishment. While the great museums of Europe collect and preserve
masterpieces, street art is a fresh and exciting development that was born in
spontaneity and opposition to the heavy hand of history. Created outdoors,
in public spaces, its placement alone is revolutionary.
The Italian and French academies were among the first to professionalize the
discipline of art in the sixteenth and seventeenth centuries. By imbuing certain
values and establishing charters for regulating practice and the organization of
teaching, these academies formulated a professional atmosphere that was quite
different from that of the craftsmen workshops of the time. Young artists learned
to draw and sculpt the human figure with time-tested techniques and deftness of
hand. Perfection was the ideal, and the more realistic one could make the work of
art, the more acclaim it received. Interestingly, as street art has evolved, artists have
embraced these figurative qualities, prizing technique and realism once again.
The French Academy was the epicenter of this true-to-life approach to painting
and sculpture, and this practice was spread throughout the majority of European art
academies. And while street art exists outside the traditional academic institutions,
both physically and conceptually, this rich history of artistic tradition is a wonderful
backdrop for art in streets. Although the grand history of European art and the
age of Europes cities may not compare to the younger and less-established locales
portrayed here, the stark contrasts that we have come to associate with and
appreciate about street art are accentuated.
