1 lar e e plant, diced 2 tablespoons tomato paste
1 teaspoon salt 1 tablespoon nely chopped fresh ore ano
3 tablespoons olive oil 1 tablespoon nely chopped fresh rosemary
1 clove arlic, crushed 300ml ve etable stock
2 teaspoons minced in er 150 baby spinach leaves, chopped
1 medium carrot, peeled and diced 50 butter
1 lar e brown onion, diced 3 tablespoon plain our
1 small reen capsicum, chopped 700ml milk
1 small red capsicum, chopped 1 cup (120 ) rated cheddar cheese
200 button mushrooms, thinly sliced 375 lasa ne sheets
400 can chopped tomatoes 1/3 cup nely rated parmesan cheese

Preparation: 35 min Cook: 45 min Ready in: 1 hour 20 min
1. Sprinkle e plant with the salt, place in a colander and stand for 20 minutes. Rinse under water, pat dry with
paper towel.
2. Preheat oven to 180 de rees C.
3. Heat the oil in a lar e fryin pan, add the arlic, in er, carrot and onion; cook, stirrin , for 4-5 mins or until
onion is soft. Add the e plant and capsicums; cook, stirrin , for 3-4 minutes. Add the mushrooms,
tomatoes, tomato paste, herbs and stock. Brin to the boil, reduce the heat to a simmer. Cover and cook for
30 minutes. Stir in the spinach thorou hly and cook for a further 2 minutes or until the spinach is wilted.
4. For the cheese sauce: Melt the butter in a medium saucepan, add the our and stir over a medium heat for 1
minute or until the mixture forms a ball. Remove from the heat; radually whisk in the milk. Stir over a
medium heat until sauce boils and thickens. Stir in the cheddar cheese and season to taste.
5. Pour a third of the cheese sauce over the base of a 6-cup oven-proof bakin dish. Cover with a third of the
pasta, then half the ve etable mixture. Repeat layers usin ve etables and pasta.
6. Pour remainin cheese sauce over pasta layer, makin sure all the pasta is covered. Sprinkle with the
parmesan cheese. Bake for 45-50 mins, or until the top is olden brown and the pasta is tender.
