Happy Eid Mubarak for those who celebrate! Now after the celebration, well you can
continue to read more about Indonesian food, right? Maybe after discussing about
Indonesian soybean products, I can discuss also about Moslem Fasting and Eid Mubarak
foods. The previous post about Tempeh might awe you about how unique is Tempeh and I
also discussed a little bit about Tempehs counterpart, the Tahu (tofu) which is eaten with
sweet soy sauce and rice. Regarding about Wedang Tahu, since the ingredient is also silken
tofu, I chose to include it in this article. Tahu is the Indonesian term for tofu, since tofu were
brought to Indonesia by Chinese immigrants. In Indonesia, Tahu means tofu or know.
Thats really different meaning, isnt it? Tofu case once occurred in Indonesia few years ago,
due to addition of formalin (carcinogenic chemical preservatives for body corpse) into tofu
so they will not be easily spoiled and when you press it, its still bouncy. So thats why now
big tofu manufacturers in Indonesia add claim in their products that its formalin free. Well,
enough for the tragic history of tofu in Indonesia, so lets continue to read more
about Tahu!

So, whats interesting about Tahu? Even Tahu was originated from China, but in Indonesia
many people have modified Tahu to several eating purpose, for example if you want to
eattahu with sweet taste, you can eat wedang tahu/tauwa (silken tofu dipped with ginger
soup) or if you want to make tahu as accompaniment for chicken soup, you can
use kembang tahu/yuba. Anyway, most Indonesian people still loves to eat tahu with salty
taste, especially tahu goreng (fried tofu)! Similar with tempeh, you can also find tahu in
most Javanese restaurants, sometimes accompanied with tempeh. Similar with tempeh, a
simple tips to make your fried tofu yummier is by adding garlic during brining and frying! :)

There are many types of tahu in the picture, most of them are different in texture and even
shape, for example tahu bulat from Tasikmalaya with round shape which is not the cube
shape like we can see in most tofu. The most popular places for tofu industries in Indonesia
are Sumedang and Kediri, even Kediri is called as kota tahu (tofu city) that you can bring
home many tofu products as souvenirs to your family and friends. Of course its fresh since
you buy them from the manufacturer, for example tahu putih/tahu halus, tahu takwa or
stik tahu (tofu stick). The difference between these two tofus is that inner part texture
of Tahu Sumedang is more compact but the outer part is still crunchy if you fried it,
while Tahu Kediri inner part after frying is hollow but still crunchy in outer part. If you ask
me which one I prefer, its Tahu Kediri since the hollow adding crunchy sensation. Well, how
about the neon yellow tofu above? Its called tahu kuning/takwa. Instead using yellow
synthetic colorant, they use turmeric to soak the tofu. Its tastier due to addition of the
turmeric and also the texture is firmer due to longer pressing process in manufacturing, so
more water released from the tofu. Wedang tahu is Javanese-Chinese traditional street
food with main ingredient is the silken tofu in sweet ginger soup. The texture is like pudding
and you can find the dessert in Semarang. The soup is just made of ginger, palm sugar and
white sugar. Interesting isnt it to know that there are many variants of tofu in Indonesia? So
guys, lets continue to step by step how to make Tofu!

First, make the soymilk by soaking the soybean for a night, then boiled to reduce the beany
aroma. The beany aroma is caused by lipoxygenase enyzme and this enzyme is easily
destroyed by using heat. Then, by using blender soybeans were crushed until the liquid
soymilk obtained was white yellowish. The filtering process can be done around 2 times and
now you got the soymilk. Soymilk is then boiled again to reduce beany aroma, eliminate bad
microorganisms, inactivate trypsin inhibitor (the antinutritional component of soybean), and
also for the ease of next production process.

So, how do we get tofu then? After cooling down the soymilk, tofu can be obtained by
coagulating protein and fat from the soymilk, either by using salt such as MgCl2 (nigari) or
CaSO4 (gypsum, but please dont use the gypsum for building material :P), acid such as
Glucono Delta Lactone (GDL) which is the most expensive one or as simple as acetic acid
(vinegar) and citric acid (lemon juice) or enzyme for coagulating protein such as papain or
other proteases. Different coagulation method also means different tofu texture. After the
soymilk form curd with pudding-like texture, press it by using special wooden mold and
cheesecloth to drain out the water from tofu for approximately one hour. Taraaaaa, your
homemade tofu is done! If you want to cook it in Indonesian way, there are several
Indonesian traditional food which you can choose now in the picture below!

Left: tahu isi (stuffed tofu), Bottom right: tahu gejrot, Top right: tahu tek

Those Indonesian traditional tofu cuisines look delicious! So all of you certainly want the
explanation, right? Yeah now since Im very kind to you (this starts to be cheesy), so Ill
explain one by one. Tahu isi (stuffed tofu) or sometimes called as tahu kipas in Sundanese
restaurant is fried tofu but filled with beansprout, carrots, string bean, spices and
shrimp. Tahu gejrot is Cirebon traditional food made by fried tofu which was cut into small
pieces then added with garlic, chili and sauce made of brown sugar, vinegar, and sweet soy
sauce. Tahu tek is fried tofu with egg with bean sprout, peanut sauce, garlic
andpetis (shrimp/fish paste) and served with lontong (compressed/cooked rice wrapped
with leaf) and boiled potato. So after the big eating of Indonesian food, how
about Tahunutrition?

Similar to tempeh, Tahu which is also originated from soybean is a low calorie food (unless
you fry it) but also contains a lot of nutrition such as high source of vegetable protein
(minerals (Calcium, Iron, Magnesium, Phosphorus, Zinc and Potassium), vitamins such as D,
E, A, B6, C, B1, B2, B3 and folic acid and unsaturated fatty acid which are beneficial to your
health! With the suitable cooking process, you can retain all the nutrients there! So after
reading this do you know (tahu) more about tofu (tahu)?

Temple Tjoe Hwie kiong.

Kediri City

(Gate on street corner)

When returning to the Hotel after the dish ate dinner in Kediri, I passed the Tjoe Hwie Kiong

while the manager to find the temple I do not have any time because need to Juanda
Surabaya Airport for return to Jakarta.

Nuances of the dragon were really felt, the red colour dominated, stable-tracks of the
artistic exercise and the performance aroma.

According to Mubarok apparently the resurgence in the temple currently begins apparently

The puppet show is held at 15:30 o'clock to 17:00 and 19:00 to 21:00. Act that was delivered

Testament), and at night play Ngoho See Peng (Five tiger Sakti).

Ja Loen (60), one of the descendants of the faithful watching the puppet show that China is
happy. For the year 1967 ever since he can see this puppet back in 2006.

Although not many that watched and only several people, but at least the performance of
this Po Te Hi puppet became interesting scenery in Klenteng available in Street. Yos Sudarso
the Kediri City.

"By chance was showed then was made use of by me to see this performance." The reason
is that wanted nanggap personally I did not have money. This performance was performed
by the good office blessing of one of the Directors PT Gudang Garam, said Ja Loen to the
Surabaya RADAR. However Ja Loen as the old generation claimed frightened if this Po Te Hi
puppet will eventually be destroyed. Because in Kediri not any the person that inherited
could play this puppet.

"The only person I can be certain, as the main temple in this. He is Kwato people
Tulungagung and if this can not be saved immediately, Chinese culture in Indonesia will be
destroyed," Ja kuatirnya worries Loen is evident, especially in China which provide hybrid
appreciation art of puppet show China is still very minimal so far.
