3.Makethebrine/marinade:Bringwatertoboilthenlowerheatandsimmerforatleast10minutes.Thiswill

4.Turnoheat.Setasidebrinesoluonunlitcools.

twine(string)tokeepitsrouladeinshape.

9.Brushthesurfacewithmixtureofmilkandwater.Setasideforatleasthalftoanhourtoallowmilktosetin
theskin.Milkmakestheskincolorreddishbrownwhenroasted.

1.Setandpreheatyourturbobroilerat375degF(190degC).Maintainthistemperatureuptoendof
cooking.
2.Puttheporkrouladeontheturbobroilerbutcoverwithaluminumfoil.

moistinsideandtoshieldfromdirecthotairfromthebroilerfanotherwisetheouterpartoftheporkwill

minutestoevenlycooktheskin.

1.Setandpreheatyourovenat375degF(190degC).Maintainthistemperatureuptoendofcooking.
2.Placeyourporkrouladeoveragrillpanwithwiremesh.Coverwithaluminumfoil.

Note:Coverthebellyfortherst2hoursofcookingtokeepthebellymoistinsideandtoshieldfromdirect
heatfromtheovenotherwisetheouterpartoftheporkwillbecookedquicklyyettheinnerpartissllhalf
cooked.

3.Placeporkbellyinsidetheoven.Removethealuminumwrapaer2hours.Rotatetheporkonceinawhile
tocooktheskinevenly.
