BREWING QUALITY
Used for its aromatic properties and moderate bittering. Storageability is fair to good. A very
distinctive hop from the USA. Proved to be a good fit for Lagers and American Ales.
ORIGIN / HISTORY
USA origin. An aroma-type cultivar bred by Yakima Chief Ranches. Its name is derived from the
area near Yakima where the first hop farm was established in 1869 by Charles Carpenter.

AMARILLO
BREWING QUALITY
Amarillo is a relatively new American hop variety that has been described as "super Cascade."
The bitterness is between 8 and 11%, making Amarillo a good hop for flavor and aroma
additions. The flavor profile is very citrusy, especially leaning toward a distinct orange flavor
and aroma. Amarillo is found as well to be somewhat sweet until it mellows out in a beer. It
should be used as aroma hop, but it could also be used as a bittering or a flavor hop. Proved to
be a good fit for Pale Ales and IPAs.
ORIGIN / HISTORY
USA origin. This hop was reportedly introduced by Virgil Gamache Farms Inc. and is a result of a
mutation of another hop variety.
AGRONOMICS
Demonstrated good resistance to downey and powdery mildew and is moderately tolerant to
strains of verticillium wilt found in the state of Washington's growing areas.

AMETHYST
Amethyst is an aroma hop from the Czech Republic and is a derivative of Saaz.
It features a notably low alpha acid percentage and notes of earthy, citrus and spice.

BREEDING PROPERTIES:
An alpha acid composition ranging from about 2% to 6% makes this hop most useful for adding aroma to your
beer. Described as woodsy, earthy, spicy, and even citrus, these characteristics lend both rich aroma and
flavor to any brew.
BREWING TIPS
Here is some guidance for your homebrewing hop additions:
- For bittering, add hops as desired no later than 15 minutes from end of the boil.
- For aroma, add hops 5-15 minutes from end of the boil.
- For flavor, add hops 2-5 minutes from the end of the boil.
- For dry-hop character, add directly to the primary or secondary fermenter.
STORAGE
Hops have three main enemies: heat, light and oxygen.
Heat accelerates the chemical breakdown of hops including both aromatic oils and the precious alpha acids
that provide most of the bitterness in beer. Always store them in the freezer at a temperature between -1 and
- C (30F to -5F).
Hops exposed to light will break down rapidly, leaving off flavors in your beer. When possible, store your hops
in a dark place and avoid exposure to sunlight.
In oxygen's presence hop oils and alpha acids will oxidize. Oxidized alpha acids lose their bitterness, and old
hops will take on a cheesy aroma. The best container is a vacuum sealed oxygen barrier such as a vacuum
packed foil pouch, typically made from a layer of food grade plastic and layer of mylar.
Note: whole hops degrade faster because of the larger surface area exposed to air. Pellets are highly
compressed, and therefore age more slowly than whole hops. They also take less space and are easier to
vacuum pack, which is why they are often used in home brewing and micro brewing.

ARCHER
A new English hop that's best used as a late aroma hop to get the most of its unique aroma.
Archer originates from the UK and has overtones that include apricot and peach with other floral hints that
round out into a nice bouquet of hoppiness.

CHARACTERISTICS
Archer is a new low trellis, wilt resistant hop variety from the Charles Faram Hop Development Program.
Tolerant to powdery mildew.

AURORA (SUPER STYRIAN)
BREWING QUALITY
Aurora has an intense and pleasant hoppy aroma. It contains 5.5 % - 9.5 % of -acids (22 26 %
of cohumulone). This variety has a very good storage stability. Beer prepared with this variety
has good organoleptical scores. The yield of -acids is very good when brewing with this
variety. Aurora is very suitable for extraction and for combination with other varieties in the
brewing process. Used in Pilsens, Lagers.
ORIGIN / HISTORY
Slovenian origin. Aurora is a cross between Northern Brewer and TG hops of unknown origin.
AGRONOMICS
It is an average early variety, reaching its optimal ripeness between 23rd and 30th August. The
average cones are 25 mm long and weight 15 g per 100 dry pieces. They are dense, of deep
green colour and do not get shattered when picked by a picking machine.

BREWING QUALITY
Apricot and delicate apple with a hint of almond. Beata needs to be treated as if the alpha acid
is nearer to 6-7%: because of the high levels of beta acids it contains, which give it more
bitterness than you'd expect from this aroma hop. Good for larger style beers, similar to
German-style hops, first impressions suggest a subtle citrus character.

Grown in 2008 as a trial to assess the benefits of using hop oils as an organic disinfectant.

1956. It was the first commercially bred hop to emerge from the USDA-ARS program when
released in 1972. It was bred from crossing an English Fuggle with a male selection believed
to have been a crossing of Fuggle with the Russian variety Serebrianka.

Delta (Hopsteiner 04188) is a new aroma variety that was developed by the Hopsteiner
Breeding Program and released in 2009. It is a cross between Fuggle and a male variety derived
from Cascade.

UK origin. The Goldings are the traditional Old English hop. Develops by clonal selection from
1790 on starting from Canterbury Whitebine. Traded as East-Kent Goldings, if grown in East
Kent, Kent Goldings if grown in mid-Kent, and Goldings if grown elsewhere.
AGRONOMICS
Sensitive to downy mildew. As a group the Goldings are unique in their high level of sensitivity
to Hop Mosaic Virus.

Type Leaf Hops
Formerly known as Equinox, Ekuanot is a multifaceted finishing hop combining high oil
content with strong impressions of citrus, fruit, and herbs. Ekuanot features pronounced
aroma characteristics and extremely high oil content. This variety bursts out of the spring soil in
vibrant yellow and gradually matures to a deep green color by fall harvest. Aroma and flavor in
IPAs, Pales, sours, wheat beers, and other styles requiring strong flavor contribution from hops.
Ekuanot has been featured in many single-hop beers. Its high oil content (favoring myrcene
and humulene in particular) makes it a good candidate for late, whirlpool, or dry hop additions.

US origin. Ekuanot was developed by the Hop Breeding Company and first released in 2014.

CHARACTERISTICS
It results from a cross made in 2002 between a high alpha-acid female breeding line and a low trellis-type
male hop. Its bittering characteristics can be best described as spicy, citrus, liquorice and resinous.
AROMA
A citrus hop with aromas of stoned fruits, liquorice, treacle-toffee and caramel with slight burnt notes.

British Flyer hops are the result of a high alpha acid female breeding line and a low trellis-type male hop that
was licensed and released by Wye University in 2009. Though this hop can serve as a dual purpose brewing
ingredient, it is most widely used as the bittering addition in beer styles like IPAs and ESBs.

FUGGLE UK
BREWING QUALITY
A hop long associated with typical English Ale brewing. Fuggle has typical English flavour,
frequently blended with Goldings to improve "drinkability" of the beer, and adding roundness
and fullness to the palate. This robust hop contributes all the essential characteristics of
flavour, aroma and balanced bitterness to ales, particularly as its relatively low alpha acid
content requires a high hopping rate to achieve desired bitterness levels. Sometimes used as a
distinctive dry hop. Typical usage: All English style Ales, ESB, Bitter, Lager, and
Lambic.

UK origin. A chance seedling raised in England at about the turn of the 20th century.

ORIGIN / HISTORY
German origin. A daughter of Cascade released in 2012 and bred specifically to answer the
needs of American craft beer styles. The aroma variety was bred in Huell at the request of the
beer industry in light of its demand for bold tastes and new aromas. Hallertau Blanc is the
daughter of the cultivar Cascade with a fruity-floral white wine bouquet.

German Hallertau Blanc is resistant to Downy mildew and Powdery mildew. Also it is tolerant to
Wilt diseases and Aphid.

German origin. Hallertauer Mittelfrh is an aroma hops variety, produced largely in the Bavarian
region of southern Germany.
AGRONOMICS
Hallertauer Mittelfrh is susceptible to diseases like: German Wilt, Downy Mildew, Powdery Mildew
and Verticillium Wilt. The susceptibility is the main the reason for its decline in popularity over the past
50 years.

CHARACTERISTICS
It is s characterized by a high share of beta fraction but oppose to Sldek it has higher content of alpha bitter
acids. The first brewing trials and testing in Czech breweries showed at very good quality especially for
intensity and quality of beer aroma.

BREWING TIPS
Here is some guidance for your homebrewing hop additions:
- For bittering, add hops as desired no later than 15 minutes from end of the boil.
- For aroma, add hops 5-15 minutes from end of the boil.

- For dry-hop character, add directly to the primary or secondary fermenter.
STORAGE
Hops have three main enemies: heat, light and oxygen.
Heat accelerates the chemical breakdown of hops including both aromatic oils and the precious alpha acids
that provide most of the bitterness in beer. Always store them in the freezer at a temperature between - an
- C (30F to -5F).
Hops exposed to light will break down rapidly, leaving off flavors in your beer. When possible, store your hops
in a dark place and avoid exposure to sunlight.
In oxygen's presence hop oils and alpha acids will oxidize. Oxidized alpha acids lose their bitterness, and old
hops will take on a cheesy aroma. The best container is a vacuum seale oxygen barrier such as a vacuum
packed foil pouch, typically made from a layer of food grade plastic and layer of mylar.
Note: whole hops degrade faster because of the larger surface area exposed to air. Pellets are highly
compressed, and therefore age more slowly than whole hops. They also take less space and are easier to
vacuum pack, which is why they are often used in home brewing and micro brewing.

CALLISTA
BREWING QUALITY
With low total alpha acids (2-5%) and a low cohumulone (15-21), Callista will appeal to brewers
who prefer classic noble hop variety characteristics with traditionally smooth hoppy notes, but
who have been craving a fruity profile to take advantage of current trends. Callista has apricot,
blackberry and raspberry notes when in its raw hop form. In brewing trials, some of the flavors
it imparts are passion fruit, peach, grapefruit and gooseberry depending upon usage and the
type of beer brewed. This breeding line is extremely versatile in various beer types.

Huell Melon is Huells new cultivated variety, newly licensed in 2012 and known as
Flavour Hop due to its characteristic aroma and taste.
Depending on the beer type and dosage this hop can impart various aroma notes such
as honeydew melon, strawberry, fruit, mandarin, apricot to beer. This breeding line is
very suitable for use in dry hopping, when it imparts its most intense fruity flavors.
Usage: Aroma. Hll Melons unique but mellow fruit character makes it a good choice for
styles where overpowering hop flavor may not be warranted. It melds well with the yeast
character of Hefeweizen and Belgian ales, but can also work as as standalone hop as a
feature of a summer seasonal or Brett fermentation.
Huell Melon is suitable for use in both top-fermented and bottom-fermented beers.
Its distinctively mild yet fruity character can be individually tailored to a beers own
aroma and flavour profile. Beers previously brewed with Huell Melon have already made
a great impression thanks to the quality of the bitterness and in particular their
enhanced aroma profile. The distinctive fruity character of these hops is best released
by dosing it at the cold stage (dry hopping).
Huell Melon recommended dosage: adding raw hops or hops pellets at the cold
stage.

Styrian WOLF is a flavour variety developed on the Institute of Hop Research and Brewing in
Slovenia. The variety was developed from European and American germplasm.

Summer is an aroma variety with characteristic aromas of sweet fruits. Developed and grown in
Australia, Summer is notably lower in Alpha than other varieties so can be used flexibly in the
Copper and thereafter. Medium-sized pale green cones bring lemon, soft melon and apricot
fruit character with a fresh, pinesap finish. A flexible hop suitable for use across a wide range of
styles including Light & Helles Lagers, modern Pale Ales, Light Mild and IPA's, British and Belgian
style Blonde Ales as well as Triples.

Topaz is a triploid high alpha acid type cultivar bred by Hop Products Australia at their
Rostrevor Breeding Garden Victoria. This variety was bred in 1985 by crossing a female
Tetraploid J78 with a male 29/70/54. Topaz was selected for commercial production due to its
high alpha acid content.

In 2008 new variety Vital was registered in the Czech Republic. Vital originated from hybrid
progenies with majority proportion of Agnus cultivar. Genetically it belongs to the group of

A fairly new hop, Simcoe is a dual purpose hop with high bittering potential. Known for its
aromatic qualities, it can be described as both a fruity and herbal, piney, earthy fragrance.
Great choice for both bittering and flavor/aroma additions for pale ales, IPAs, double IPAs, or
any American-style beer where a piney resinous character is desired.
ORIGIN / HISTORY
Simcoe was created by Charles E. Zimmermann, developed by Select Botanicals Group, and
released through Yakima Chief Ranches in 2000. Little has been released about its parentage,
but it has been compared to Cascade.
AROMA
Simcoe is often compared to Cascade, sometimes called Cascade on steroids. It is described
as being both fruity and earthy. It can carry notes of berry, apricot, passion fruit, and citrus, but
also has pronounced aromas of pine and woodsy earth. Flavor and aroma is quite complex and
unique with strong pine characteristics and subtle notes of citrus.
USAGE
Simcoe is a dual-purpose hop. It is most often used in bittering additions and creates a clean,
smooth bitterness along the same lines as what you would expect from magnum hops. But,
unlike Magnum it holds more potential when it comes to flavor and aroma. It can impart some
spicy, fruity, and earthy notes through aroma and dry hopping additions. This variety can do
great things in a number of other beer styles, and is often used in conjunction with the Cascade,
Centennial, Chinook, and Citra hop varieties.
OIL COMPONENTS
There seems to be little consensus when it comes to substitutes for Simcoe. It is comparable
to Cascade, but not close enough to make the variety a substitution. Actually the closest
substitution might be some combination of Cascade, Centennial, and Amarillo or Columbus.
Some brewers seem to think there is no substitution for it.
ORGANIC SMARAGD
BREWING QUALITY
With a distinct fruity nose balanced with flowery hoppy notes, Smaragd is the European
response to varieties like Simcoe and Amarillo. It has a more prominent nose than most
European varieties, but the fruitiness is more subdued and the overall impression is balanced
and refined with a slight nuance of spice. The bitterness is of medium intensity allowing
generous (but not excessive) use in the boil kettle. A good choice for dry hopping. The hints of
lemon and orange marmalade work well with organic Belgian Pale Ales or organic Imperial
Pilsner.

Atlas is a diploid hybrid between Brewers Gold and 3/3 Slovenian wild hop.
AGRONOMICS
Atlas is susceptible to powdery mildew, but it is not excessively sensitive to aphids. Atlas has
resistance to verticillium wilt. The expected yield is about 2000 kg/ha. The variety has strong
skeleton roots, so it can be grown also on shallow sandy soil. It cant stand poorly drained or
poorly aerated soil. It is grown in Slovenia and Austria. Large planting distance is required.

US origin. Columbus, Tomahawk and Zeus, the three hop varieties with very high alpha
properties, were all produced at the same time and sold to different grower groups. Since then
it has been proven that Columbus and Tomahawk are the same variety (by gas chromatograph)
and Zeus is so similar that it is indistinguishable from the other two in the finished product!
These hops have taken the USA by storm and the acreage of all other US varieties seems to be
suffering because of it. They are all labeled as Super High Alpha.

The Australian hop variety Pride of Ringwood is a high alpha cultivar with intensely woody,
earthy and herbal aroma. Pride of Ringwood is a very well regarded high alpha Australian bred

bittering hop. Pride of Ringwood imparts a unique Australian flavour to beers like Australian

CHARACTERISTICS
It is a dual use hops with a moderate alpha acid rating of 6.5%-8.5%. It was released in 1968 was intended to
provide high alpha acids, good aroma as well as disease resistance.
AROMA
Specific aroma descriptors include cedar, green tea and sweet fruit.

BREEDING PROPERTIES:
Jester hops were bred with the intention of replicating some of the aroma of the US Big C hops. Used as an
aroma hop the predominant flavours are grapefruit and tropical fruits such as lychees.
BREWING TIPS
Here is some guidance for your homebrewing hop additions:
- For bittering, add hops as desired no later than 15 minutes from end of the boil.
- For aroma, add hops 5-15 minutes from end of the boil.
- For flavor, add hops 2-5 minutes from the end of the boil.
- For dry-hop character, add directly to the primary or secondary fermenter.
STORAGE
Hops have three main enemies: heat, light and oxygen.
Heat accelerates the chemical breakdown of hops including both aromatic oils and the precious alpha acids
that provide most of the bi erness in beer. lways store them in the free er at a temperature between - and
- C (30F to -5F).
Hops exposed to light will break down rapidly, leaving off flavors in your beer. When possible, store your hops
in a dark place and avoid exposure to sunlight.
In oxygen's presence hop oils and alpha acids will oxidize. Oxidized alpha acids lose their bitterness, and old
hops will take on a cheesy aroma. The best container is a vacuum sealed oxygen barrier such as a vacuum
packed foil pouch, typically made from a layer of food grade plastic and layer of mylar.
Note: whole hops degrade faster because of the larger surface area exposed to air. Pellets are highly
compressed, and therefore age more slowly than whole hops. They also take less space and are easier to
vacuum pack, which is why they are often used in home brewing and micro brewing.

BREWING QUALITY
A hop that requires judicious application in the brew house, this truly unique dual-purpose
variety can be used to produce big punchy Ales as well as subtle yet bitter Lagers. The fruitiness
may be a little overpowering for the un-initiated, however those with a penchant for bold hop
character will find several applications for this true brewer's hop. This hop is considered by
some as extreme and certainly makes it presence felt in speciality craft and seasonal beers
gaining an international reputation.

This variety was registered in 1994. The origin of Sladek is in Saaz aroma hops and therefore the
content of beta acids is high, which makes the character of bitterness very fine. This variety was

New Zealand origin. A triploid variety bred from New Zealand variety Smoothcone and a
selected New Zealand male. Developed at New Zealand HortResearch and released in 2000.

ORIGIN / HISTORY
This variety was registered in 1994. The origin of Sladek is in Saaz aroma hops and therefore the
content of beta acids is high, which makes the character of bitterness very fine. This variety was
a part of a long trial and was tested together with many aroma varieties (Hal. Tradition,
Cascade) and always won.

BREWING QUALITY
This Hallertau Triploid typically has a very restrained floral character which selectors say is atop
an aroma of freshly-zested lime. These excellent brewing qualities carry right through from
selection to the finished beer and it is due, in part to this ability that this hop is selected by
several major brewers internationally. True dual purpose organic hop with enviable alpha:beta
ratio. Measures up on flavor scores as well as flavor stability trials. Often used in International
Premium Lagers.
ORIGIN / HISTORY
New Zealand origin. Developed as an Aroma variety by New Zealands HortResearch Hop
Breeding Programme. This triploid was bred from parentage of two-third Hallertau Miitlefrh
open pollinated by one third New Zealand-derived male. As a small plot trial it showed great
potential as a dual-purpose variety and was released commercially from Horts Riwaka
Research Centre in 1988.
