Carys Hawaiian Five Mushroom Alfredo Sauce

Ingredients:

1/2 cup sweet butter

cup very good olive oil

1 cup shitake mushrooms, 1 cup cremini mushrooms, 1 cup coastal


mushrooms, 1 cup giant oyster mushrooms, 1 cup enoki mushrooms (any
combination of edible mushrooms will work)

2 -3 garlic cloves, minced

1 small white onion

4 cups heavy cream

1/4 teaspoon white pepper (or black pepper or 3 peppercorn mix)

1/2 cup grated parmesan cheese

1 cup mozzarella cheese

2 cups small blanched broccoli florets

Directions:

1. Melt half the butter in medium saucepan over medium/low heat.

2. Add the garlic, onion, and mushroom and saut until the liquid is
released. 5-7 minutes.

3. Add the remaining butter, cream, and white pepper and bring mixture
to a simmer.

4. Stir often.

5. Begin your noodles or tortellini at this point so everything will be


done at the same time.
6. Add the Mozzarella cheese and simmer sauce for 8-10 minutes or
until sauce has thickened and is smooth, stirring constantly.

7. When sauce has thickened, add the Parmesan cheese and stir
frequently until smooth. Remove from heat when sauce has reached desired
consistency.

NOTE: Add any hot, hot, hot Hawaiian scorpion peppers (and/or sauce) to make
