RESUMEN.
Se observ el poder cataltico que poseen las enzimas al ser utilizadas como agentes
aceleradores de una reaccin, para lo cual se emple la bromelina, una enzima presente
principalmente en la pia. Para la prueba se hizo necesaria la extraccin de un poco del jugo
de una pia, el cual contena la enzima a utilizar. Una vez se extrajo el jugo, se prepar la
gelatina, y se deposit en cinco tubos de ensayo una muestra de igual volumen (1 m) de esta
sustancia, posterior a esto se le agrego a cada tubo reactivos diferentes, como lo fueron el
HCl, NaOH, NaCl y HgCl2; luego se les agrego 1 mL del jugo a cada tubo y finalmente se
llev en conjunto todas las muestras y se sometieron a una baja temperatura, con el cual se
observ como en los tubo 4 y 6, el grado de gelacin o coagulacin de la gelatina fue
relativamente alto, ya que el tiempo en el que ocurri este feno9meno fue de 1 y 2 min,
respectivamente.
ABSTRACT.
It was noted the catalytic power that possess the enzymes to be used as accelerators agents of
a reaction, which used the Bromelain, an enzyme primarily present in pineapple. To test the
extraction of some of the juice from a pineapple, which contained the enzyme to use was
necessary. Once the juice was extracted, prepared gelatin, and a sample of equal volume (1
m) was deposited in five test tubes of this substance, this will add to each reagent tube
different, as they were the HCl, NaOH, NaCl, and HgCl 2; then added to 1 mL of the juice to
each tube and finally took all the samples together and they were subjected to a low
temperature, with which it was observed as in the tube 4 and 6, the degree of Gelation or
coagulation of the gelatin was relatively high, since the time that took place this feno9meno
was 1 and 2 min respectively.
