Apple Crumb Pie

Filling -
7 med - large tart apples (Granny Smith)
1 tbsp lemon juice
1/2 cup sugar
3 tbsp flour
1/2 tsp cinnamon
1/8 tsp nutmeg
Crumb Topping -
1/2 cup plus 2 tbsp flour
1/2 cup packed light brown sugar
1/3 cup sugar
1 tsp cinnamon
1 stick butter, cut into small pieces

Peel and core apples; cut into 1/8" thick slices; toss with lemon juice.
Mix sugar, flour, cinnamon, and nutmeg; sprinkle over apples; toss to coat.
Layer apples in pie crust. Mix crumb topping ingredients together, cutting in butter to form coarse crumbs. Top pie.
Bake pie on cookie sheet for 15 min., then reduce heat to 350 and bake 45 min. longer. Cool completely.
