A. Opening
It goes without saying that caries is one of the most important issue in this world.
The increasing prevalence of caries is dietary habit. Irregular eating patterns and
carelessly can cause an increase in dental caries. These diseases cause cavities. If left
untreated, the disease can lead to pain, tooth loss, infection, and, in severe cases, even
death.

B. Introducing points
Firstly, let us take a look at the food we've eaten daily has included healthy food
for our bodies or even bad for our lives.
Seconly, I will tell you about one of the good food for healthy teeth and mouth.
Especially for the health of our teeth. For dental health, regulation of sugar is important
to be caring. The remaining sugar in the mouth to produce acids by bacteria. (Herawati,
2011).
Thirdly, eat of cheese in daily food can protect the teeth. Cheese is a food that is
widely consumed and added in a variety of foods to help improve the nutritional value
and taste. The food is easily available at a price of Indonesian people relatively
affordable. The composition of the nutritional value of cheese is almost the same as the
source its main raw material milk. High nutrient content in cheese causing the cheese into
a food that has a functional value. (Herawati, 2011).
Lastly, As functional foods, cheese are included in a source of protein. Other
nutrients such as calcium, phosphorus, and vitamin D. Calcium found in cheese proved to
have a positive effect against a variety of diseases such as dental caries prevention,
hypertension, osteoporosis, and obesity. (Murphy et al., 2012).

THEORY

According to the Academy of General Dentistry (AGD), one attempt precautions

that can protect the teeth against caries is to eating cheese and other dairy products (Telgi
et al., 2013). Cheese is a food products originating from clotting (coagulation) milk
protein. Type cheeses are produced and most popular in Indonesia is a type of cheese
cheddar. Cheddar cheese is a type of cheese with a relatively hard consistency, pale
yellow, and has a strong sense (Telgi et al., 2013).

DISCUSSION

a. Result and Reason:

Based on the reseach findings, it is stated that the habit of eating the cheese has
grown and become one dish favored by the people of Indonesia although the cheese does
not come from Indonesia. Based on the analysis of Nielsen, cheese is one of one product
that the level of consumption is increasing both from Indonesian society upper middle
class by 38% and the public middle to lower by 28% (Anonymous, 2012).

Demineralization and remineralization of teeth that occur in the oral cavity has a
close relationship with the composition of saliva. saliva contains inorganic components
such as calcium, phosphate, sodium, potassium, and bicarbonate (Kaur et al., 2013).
Increased components calcium and pH of saliva very influenced by the consumption of
food and beverages. Food and drink consumed can be a source of calcium intake.
Calcium is salivary components that can be modified by eating high calcium content
(Poureslami et al., 2013). One way to increase the intake of calcium is by eating cheese.
b. Contrasting

On the other hand, consumption of sweet foods (carbohydrates) will lead to a

reduction the pH of saliva that can occur when the tooth enamel demineralization in
progress constantly can lead to dental caries. demineralization of teeth occur in the mouth
when salivary pH drops below 5.5, so that the ion calcium and phosphate off of the
enamel surface (Jayarajan et al., 2011). Dental caries is caused by factors like tooth
(host), food, and microorganisms that are correlated in certain time (Jayarajan et al.,
2011).

Remineralization of early carious lesions such as white spot lesions is one the
principle of minimal invasive dentistry treatment, if treatment is not do it will form a
cavity in the tooth. Remineralization is a process that occurs naturally as the
concentration calcium in saliva (Gupta et al., 2012). Remineralization can occur when
calcium ions join the email crystals in space carious lesions (Widjijono, 2014).

c. Opinion
In my opinion, the presence of bacteria in the mouth is a normal thing. Bacteria
can change all the food we eat, especially sugars into acid. Bacteria, acid, food debris and
saliva to form a sticky layer attached to the tooth surface. Sticky layer is called plaque.

Plaque is formed 20 minutes after eating. The acid in the plaque will cause dental
hard tissues dissolve and pass caries. The bacteria were most responsible for caries is
Streptococcus mutans. Dental caries is a disease of dental hard tissues are the most
common. The disease is characterized by the damage or holes in the teeth.

And after I read an article about the benefits of the cheese in the prevention of
dental caries, so I think cheese is one of the foods to be consumed after a meal because
cheese is a dairy product that is rich in calcium. Cheese can strengthen teeth by
preventing tooth demineralization, accelerating the flow of saliva (saliva), and raises the
pH of saliva.

CONCLUSION
In conclusion, eating cheese after meals can be one solution to prevent dental
caries. The cheese is eaten after eating foods containing carbohydrates can form an
alkaline compound, so as to stop the acid environment that can lead to the destruction
process emails as the initial process of dental caries. In addition, the distinctive aroma of
cheese that can stimulate and accelerate the secretion of saliva, so that together with the
saliva content of the cheese will join the fight against the possibility of the occurrence of
dental caries.
