Cycling season kicks off with regional
campaign, ride with the mayor and more

or most of us, growing up our bicycle was our way of life. In Fol-
som, such remains the case for all ages as our area is bustling with
cyclists, cycling resources, community rides and a trail system that
is second to none.
Once again, the month of May is officially Bike Month in the Sacramento
area. The area campaign encourages everyone to leave the four-wheeled form
of transportation home and hop aboard a bike for as much travel as possible.
It doesnt matter if its a joy ride with the family or one of our fabulous trails,
an organized group ride or a commute to work. The fact is Folsom just has
more opportunities to celebrate the season than most cities.

Taking it to the streets
When it comes to road cycling in the area, the City of Folsom offers
hundreds of miles of options. In the city alone, over 30 miles of trail
are designated Class I Bike Paths are all very well maintained and con-
tinue to grow. In addition to the Class I routes, more than 67 miles of
local riding territory consists of quality Class II Bike Paths that share the
road with rider and motorists to share the space throughout the city.
When you add in another 30 miles or more of paved trails, known as
the American River Bike Trail, that connects with our trails, it becomes
pretty obvious that Folsom offers more road cycling real estate than any
one person can accomplish in a day. There is plenty of scenery along
the routes from the streams and scenes of the Willow Humbug Creek,
to those that parallel the American River, such as the popular Natomas
Loop. And there are others that go through the areas Historic District
and can connect a rider to downtown Sacramento. Regardless of the
route, the surroundings are beautiful this time of year.
If you are avid road cyclist and want to take your riding and
conditioning to the next level, Folsom is home to The Lab. This indoor
training facility specializes in cycling training as well as off the bike
fitness programs. Learn about them at strongerbetterme.com.

Do it with friends and neighbors


Folsom has many different cycling groups that meet on several different days and evenings depending on the time of year. Folsom
Bikes Road Racing Team can be seen traveling the likes of Auburn Folsom Road, Barton Road and into Loomis on Wednesday eve-
nings. The popular Ride Like A Girl series for female riders has a variety of dates and rides of different skill levels.
For the up-and-coming rider, a very popular Junior Mountain Bike Program populates the trails on Thursday evenings in the spring
and summer months. This unique program allows youngsters to learn the skills of trail riding in a group atmosphere under the
leadership of various coaches. The program meets 4:30 p.m. every Thursday at Granite Beach and is organized by Erin and Wilson
Gorrell, of Folsom Bike. The Gorrells and their staff, and many volunteers put countless hours into making sure Folsom continues to
be one of the areas most bike friendly communities and that residents of all ages enjoy cycling.
We want everyone to enjoy cycling no matter what type of riding they do, Erin said. The Junior Mountain Bike Program helps
young riders learn the fundamentals that will help them out on the trails. It helps them with balance, knowing their surroundings
and different techniques. Ultimately, it helps them have fun out there.
To look into one of the many groups in the area, riders can visit folsombike.com where they will find plenty of area information
and opportunities. Erin encourages people to use the online application Meet Up as well to find the right ride or group to join.

designated paved trails, one can drop off to
enjoy miles of scenic, single tracks through
the areas of Willow Creek, down along the
American River and around Folsom Lake.

If youre looking for a really unique group ride, Bike Month kicks off with two very
special events in Folsom. The Great Scott Bike and Walk and another opportunity where
you can even join our mayor for a ride.
The Great Scott Bike and Walk event takes riders on 30 miles of country roads on the
south side of Folsom that will be closed to traffic from 8 a.m. until 3 p.m. May 7. The
road closure and a speed limit makes this event fun for the entire family. Cyclists can
choose the distance they want to ride within the 30 mile stretch of Scott Road. For entry
information on this event go to BikeGreatScott.com.
On Thursday, May 11, join Mayor Andy Morin on the 10th annual Folsom Ride with
the Mayor event. This longtime traditional ride starts in Historic Folsom and departs at
8:30 a.m. for a 30-mile route to Discovery Park in Sacramento. Once at their destination,
riders enjoy a complimentary lunch provided by the May is Bike Month organizers.
After being reelected as mayor this year, Morin is ready for the journey this year.
In recent years, even when I was mayor before, there were times my schedule
conflicted with this ride, said Morin. This year I am ready to go. This is a great event and
Im really looking forward to it.
Morin recently cut the ribbon at the new Lake Natoma Waterfront Trail in the citys
Historic District. While walking the trail, the Folsom resident and longtime City Council
member expressed how Folsoms cycling opportunities are a draw for new residents to
the city.
Weve always had great trails here and everyone truly enjoys them, Morin said. But
now we are seeing people wanting to move into Folsom so they can enjoy these trails.
Its really a great thing to see happening.

In addition to the local establishments that have great
trail resources on their websites and in their stores, there
are many online resources with local cycling information,
including the City of Folsom website or the Folsom Tour-
ism Bureau atvisitfolsom.com. For the off-road enthusi-
ast,mtbproject.comis a great resource of where to go and
not to go when traveling off the local bikeways.
To end your ride, there are plenty of bike friendly
eateries and tap houses in the Folsom area and within
proximity of the trails. Several of them are featured in this
edition of the Folsom Lake Entertainer. Some area bike
shops are now offering food and drink as well. Folsom
Grind, located in the same building as Folsom Bike, even
has added flatbread pizza, beer and wine to their menu
and is a hotspot for riders coming off the trail near Folsom
Dam.
Folsom has a great variety of cycling resources that
will assist you in getting geared up for cycling, whether
its tuning your current bike, investing in a new ride or
obtaining local trail information. Simply typing the words
Folsom and bicycle into your search bar will get you
to a long list of area retailers and resources. To learn more

invited some of my customers to my house
and I cook them my food from Iran.
Zaighami said he enjoys giving that kind
of hospitality and that is why he got into the
industry in the first place.

cyclists are not only a big part of his life, but
a big part of his business.
I ride with them and we are really friend-
ly, he said. Every Saturday and Sunday
when they finish their ride over here, they
eat. I sponsor them, so they all get 20 percent
off their meals.
Zaighami said his business is not perfect
and if there has ever been a mistake, he
wants to have to chance to make it right with
his customers for whatever reason.
I really care about the guest experience
and I always am looking to improve and cre-
ate an environment where people can come
and enjoy.
Recently, Zaighami purchased the business
next door to Petes, Coffee Republic. He said
he loves the place and is excited about his
new venture.

The long loved community bakery and cafe, Karens,


has been the hub for not only Folsoms cycling commu-
nity, but active community and residents for more than
15 years.
Owner Karen Holmes has always loved to bake and
cook and during a time when she was a stay-at-home
mom, it started to get out of hand.
I had offered a couple of friends who had corporate
jobs a catered lunch, she said. I was bringing them
lunches out of my house and that was fine until it

S
ince 1991,Coffee Republic has been built by family, crew and the
community and recently changed ownership.
Sunny Zaighami, owner of Petes Restaurant and Brewhouse next
door, was looking to open up another business in the Rocklin area. Upon
making this decision, an opportunity to purchase one of Folsoms long-time
favorites presented itself.
The previous owner was looking to sell and Zaighami said it was the right
opportunity at the right time.
I know the business. I see the traffic they get as a neighbor and they
have a good following, he said. Twenty-five years is a long time to be in
business.
The long-loved coffee house sells handmade coffee, tea, breakfast and
lunch sandwiches, salads, soups and more.
The coffee is a major part of the business. We have good coffee, Zaigha-
mi said. We also have great sandwich recipes that the previous owner
created and people really enjoy them.
Another aspect of Coffee Republic is the front patio.

When it gets warmer out during
the summer, the line will be out the
door. I have seen it all the way to the
front gate, he said. Its crazy. It gets
really busy.
The atmosphere in the shop is laid-
back and relaxing. It is the perfect
setting to hangout and chat with
friends and get to work.
When you come in here, there are
so many things to look at and check
out, Zaighami said. It has good
vibes, as well as the people who come
in. It has that warm feeling.
Mark Eister, manager, has worked
for Coffee Republic for four and a
half years and he said all the employ-
ees are really invested in the shop,
even though they dont own it.
I have been in the food and
beverage industry for 11 or 12 years
and I have noticed a lot of people
will just show up, get a pay check
and go home, he said. The group I
started with here, worked under, and
now manage, if something needs to
be cleaned or fixed, we take it upon
ourselves to do it. I have stories of
long nights on the roof changing the
A/C system because it broke. I have
a pride of ownership.
Eister said it really is the local
clientele and regular customers who
make the business what it is.
Zaighami said his favorite aspect of
Coffee Republic is the staff.

the journey ahead of him.
I am a big dreamer. I dream at
night time, during the day time,
all the time, he said. I am taking
baby steps toward my goals and
I am going to keep going for it.
I have a good momentum right
now that I think is on the route I
have been dreaming of.
Zaighami said he hopes to be
the best coffee shop in Folsom.

Tacos have become a staple in my household so much more often than
just taco Tuesday. If I am really craving that fajita flavor, tacos will appear
on the dinner menu at least a couple times a week. However, that being
said, I do like to switch up what meats I use in my taco. Beef is pretty
typical. I enjoy ground beef and slow-roasted. This time I tried steak. It
was intensely flavorful and wonderfully tender. I may have to make these
more often.

2 key limes juiced
2 tablespoons olive oil
yellow onion
1 red bell pepper
1 bunch of fresh kale
4 tortillas (I use grain-free almond tortillas)
Preheat oven to 425 degrees
Slice yellow onion, red bell pepper, and kale and arrange on a baking sheet. Driz-
zle with olive oil and salt and pepper to taste. Place in oven for 20 minutes.*Watch
the kale as it tends to burn quickly.
Slice steak into fajita strips. Coat with salt, pepper and cumin.
Heat olive oil on skillet until hot but not smoking. Place the strips on the skillet
and brown on the sides. Cover with lime juice and toss until cooked through (ap-
proximately 10 minutes).
Warm tortillas in oven with veggies.
Remove veggies and meat from heat.
Put it all together and top with any additional toppings you desire.

Asian-Inspired Kabobs
Serves 2
Despite what the last two recipes may indicate, I really hate eating foods with my
hands. Personal pet-peeve of mine is when my fingers smell like food. A way I avoid my
irrational irritation is in the glamour of a kabob. Nothing is more effortless than eating
off of a stick. Plus you save having to wash additional dishes. Everything you wish to eat
is nicely arranged on a skewer. Turns out you dont need a barbecue to enjoy this has-
sle-free way of eating since these are broiled in the oven. I might just have to see how
many meals I can transform into kabobs.
1 pound beef of choice Slice beef into bite-sized squares and set in a
1 yellow onion bowl. Cover beef with coconut aminos and let
1 green bell pepper marinate for 30 minutes.
5 tablespoons coconut aminos Drain excess fluid and place back in bowl.
2 tablespoons ginger powder Coat with spices and arrowroot starch and toss.
1 teaspoon garlic powder Slice veggies *add pineapple for added flavor.
1 teaspoon arrowroot starch Alternate veggies with meat until skewer is full.
Pink Himalayan salt and pepper to taste Sprinkle with sesame seeds, salt and pepper.
1 tablespoon sesame seeds Arrange on a baking sheet and broil each side
2 tablespoon olive oil for 10 minutes. Do less time for a more rare meat.
Remove from oven (be careful) and allow to cool
to desired temperature.
Set oven to broil on high and prepare skewers.
Enjoy a hassle-free easy meal.

On the other side of the locker rooms, guests will find LifeSwim, which
includes an indoor leisure pool with a graduated entry that goes as deep as

Just outside beyond the indoor pool, there is an oversized leisure pool
with graduated entry, a lap pool and two water slides. In addition there are
dozens of lounge chairs under large umbrellas as well as out in the sun.
Around the pool patio guests will have the opportunity to snag a bed-side
lounge chair with pillows and some shading.
Also outside, there is another LifeCafe that has a modified menu. In the
near future, the outdoor LifeCaf will serve beer and wine for those who
want to further their relaxation.
We have beer and wine secured in our Roseville location and it is still
pending approval for Folsom, Thunstrom said. It is always going to be a
staple moving forward. The guests have been asking for it.
Downstairs there are more amenities such as Life Time Tennis, with
eight courts, programs and an equipment shop; a medical center, which
will be up and running in the coming months; and the Kids Academy.
Thunstrom said the Kids Academy is a newer model and has been
around for the last five years.

you the inside scoop on Bella Grace and why this should be a

First and foremost, Bella Grace Vineyards is a sustainable
vineyard. When you visit the vineyard onsite with an appoint-
ment, visitors are able to go on a cave tour and even experience
a weekend tasting line-up. The tastings at the vineyard and wine
cave provide a panoramic view of the estate with a backdrop of
the High Sierras. Visitors also have the option to enjoy a picnic
outside of the wine caves. This is completely a special experience
with an exceptional showcase of wines. What do wine-tasting
aficionados and non-wine experts need to expect at either of
these locations? The answer here is quite simple and this goes for
both genres alike.
Wine-tasters can expect bold reds in the Zinfandel variety,
as well as Barberas, and unique blends such as a Montagnaro.
For the white wine lovers, Bella Grace offers an estate blend of
their Grenache blanc, Vermentino and Roussanne. Patrons have
described this bold, crisp white as the ultimate palate pleaser. In
addition, the winery offers a reserve Chardonnay, a Roussanne
with hints of vanilla, honey and pear on the palate, and even a

Living in Amador County, a stones throw from some ex-
ceptional wineries of great quality. One of our favorites and a
brand that we sell a lot of in our store is Jeff Runquist Wines.
Runquist has a long history in the wine industry starting
back in 1977 when he interned with Seagrams at their Paul
Masson Sherry Cellars in Madera while studying enology at
U.C. Davis. Upon graduating in 1980, he worked in the cellar
at Montevina in Amador Countys Shenandoah Valley and
was promoted to winemaker in 1982. After a three-year stint
at the Napa Valley Cooperative Winery from 1987 through
1990, Runquist became the winemaker for the J. Lohr winery.
Runquists first vintage under his own label was 1997,
when he released 700 cases of Zinfandel. In 2006, he pur-
chased a small five-acre walnut orchard on Shenandoah
Road. In the spring of 2008, he and wife Margie opened their
tasting room. Production facilities followed and Runquist was
able to crush the majority of the production in Amador in
2011.
Runquist travels throughout California to find just the right
grapes for his vineyard designated wines. The winery produces
22 different red varietals from nine appellations.
He produces balanced wines that can be enjoyed in their
youth, but will also age and become more complex with time.
Besides the numerous awards Runquist receives each year for
his exceptional wines, in 2009 he was named Winemaker of
the Year by the San Francisco International Wine Competi-
tion.

Genre-bending Art Magazines Anniversary

This June, the Crocker Art Museum will bring to
Sacramento Turn the Page: The First Ten Years of
Hi-Fructose, a one-of-a-kind exhibition of works by
artists who have been prominently featured in the
best-selling contemporary art magazine Hi-Fruc-
tose. This exhibition marks the 10th anniversary of
the influential magazine by bringing together some
of the most remarkable artists to grace its pages
artists whose works may not otherwise be exhibited
together.
In 2005, husband-and-wife artists Daniel Atta-
boy Seifert and Annie Owens set out to increase
the publics access to the works of many emerging,
underground, and lowbrow artists they enjoyed,
and founded the pioneering magazine Hi-Fructose.
Through their print and digital publications and
platforms, Hi-Fructose has become an important
and divergent voice for contemporary artists who
work in a variety of mediums, highlighting works
that demonstrate a mastery of technical skill in ways
that are unique, meaningful. Through their inclusive
approach, the editors have consistently employed a
democratic outlook that allows pop surrealist, street,
figurative, narrative, and many other styles to seam-
lessly converge.
The Crocker Art Museum will show works by 51
of the foremost new contemporary artists to be fea-
tured in Hi-Fructose. With pieces ranging from oil
paintings and drawings, to porcelain, bronze sculp-
tures, video works, and installations, Turn the Page
forms a remarkable assembly of artists who have
challenged traditional notions of art to inform and
break new ground. According to the Museums As-
sistant Curator Christie Hajela, the artists featured
in the exhibition have acquired followers and become
successful through non-traditional means, such as
the magazine and social media platforms, rather
than through traditional channels like museums and
galleries.
Bringing these works to a museum setting rein-
forces the artists contributions, and the contributions
of Hi-Fructose magazine, to the broader dialogue of
contemporary art, Hajela said. The exhibition pres-
ents these artists not just as products of an alternative
or underground scene, but as considerably underrep-
resented yet equally relevant.

Why is Cyrano still so iconic?
The nose. Its gotta be that famous nose. I believe nearly everyone
relates to that feeling of being ugly because of some physical flaw.
Cyranos determination to rise above his own vanity is endlessly
relatable. The exaggerated nose itself is famous inasmuch as we all
exaggerate our perceived flaws.

How did you prepare for this?


I read the play over and over again. Each time I read it, I strive to
visualize the world in my imagination. When the collaborators, such
as Ian Wallace and Cameron Hoyt our amazing theatrical design and
technology team, join me, then our imaginations begin to become one
whole thing. And as each subsequent artist joins us, the world continues
to be refined. Its a beautiful thing to manifest.
what was your approach in directing Andrew Suther-
lands performance?
In the way that a musician finds favor and comfort in a particular in-
strument, a theater artist can find an artistic kinship with another artist.
A designer and a director, for example, may share a common vision
in theater that is gratifying to create. In this case, Andrew is an actor
that I have virtually unlimited trust in. We have discussed story of the
character in detail, the circumstances of his life and situation, and the
acting style that would best tell the story. For a gifted actor, I trust them
to make choices that will define the character. Those choices inspire me
to craft the overall story in a particular direction. They also inspire me to
guide the actor into refining their own inspiration.

Cyrano has two English translations, Brian Hooker and


Anthony Burgess, which version are you producing and
why?
Actually, we are using an even newer version. This version is translat-
ed and adapted by Michael Hollinger and Aaron Posner. It was created
and performed around 2010 for the Folger Theatre in Washington, D.C.
We like the lighter emphasis on verse and the leaner, more theatrical
text. Contemporary audiences are unaccustomed to hearing lengthy
verse speech, even despite the popularity of Shakespeare. We found
that this version keeps the romantic and poetic feeling of the original,
while finding a new language to speak to modern audiences.

As a director, what is your approach to this classic story?


Will it be modern Or the traditional verse pattern?
This version of Cyrano begins with the actors in the play introducing
themselves to the audience as the storytellers of the play. Then they
put on the dress of the character they are portraying and we begin the
play. It is a kind of so-called chamber theater. Therefore, we are not
attempting to create a realistic location with scenery. We are influenced
by the great design artist Adolphe Appia to bring a performance place
that allows the focus to be on the words and the actors. The story is
told in a mostly realistic fashion, allowing and encouraging audience
members to see the world using their imaginations. It will be lovely to
look at and enjoy.
