__________St. Marys Foodservice Employees- _Cleaning Kitchen Floors_____________

I. Goals and Rationale

floors and will hopefully remind the employees to complete
this work at the end of their shifts and throughout the day
when necessary.

Reminding the employees of why it is important to clean
the floors properly will make them more likely to complete
the task.

II. Objectives

2. 100% of participants will be able to correctly identify the procedure frequency by the end of the
session on the post-test.
3. 100% of participants will be able to correctly identify why it is important to properly clean kitchen
floors by the end of the session on the post-test.
4. 100% of participants will be able to correctly identify at which point the wet floor sign should be put
out when cleaning a spill by the end of the session on the post-test.

III. Teaching/Learning Procedures

Motivation/Introduction The session will start by a simple introduction and a brief statement that I
will be teaching the foodservice employees how to properly clean a
kitchen floor. I will explain that I am in my production rotation and am
learning how the kitchen runs at St. Marys.

I will start the conversation by asking the employees how often they are
in charge of cleaning the floors. Following that, I will ask how often they
see a floor that needs cleaning, that has not been cleaned yet. Lastly, I will
ask the employees if and why they think cleaning the floors is an
important part of their job. The questions will hopefully get the
employees thinking about how often they clean floors and why they think
it is important.

Once they have answered the questions, I will delve into why it is
important to properly clean floors, which is to prevent injuries. Greasy
and slippery floors can cause an employee to fall and get hurt. It is
important to prevent injuries in the work place, not only for hospital
standards, but also for individual employees. I will explain that it is
important to keep your co-workers and yourself safe to decrease costs
associated with medical expenses, as well as prevent employees from
calling out after an injury. I will also mention that safety awards are given
at the end of the year if there are no work related injuries by the end of the
year. These statements will hopefully motivate the employees to listen to
the information and to properly clean the floors.

Teaching/Learning Activities After the introduction/motivation, the lesson will begin. Since the meeting
will be conducted in the staff break room, there will be limited materials
used for the presentation.

The lesson will begin with the procedure frequency. I will explain to the
employees that cleaning the kitchen floors is a daily activity. I will also
state that this should be done at the end of the day, but it is also important
to clean the floors when a spill occurs.

I will then explain the tools needed to complete the job which includes a
dust pan, broom, deck brush, floor squeegee, mop bucket, grease release
mop, rubber gloves, goggles and a wet floor sign. I will explain that it is
important to wear proper safety equipment while cleaning the floor to
prevent the spill from splashing onto the body or onto others. I will also
explain the importance of the wet floor sign to prevent others from
slipping after a mess has been cleaned.

After explaining the equipment needed, I will describe the correct


procedure, created by Ecolab, to properly clean the floors. The steps are
as follows:
1. Clear floor of movable equipment. Wipe up spills and sweep to
remove loose soil and debris. Put out a wet floor sign.
2. Fill the mop bucket to desired level with solution and water.
3. Apply solution to floor with a mop. Leave on floor until solution
penetrates grease and soil.
4. Scrub the solution into the floor with a stiff-bristled deck brush.
5. Mop up or squeegee the solution towards the drain. Allow to air
dry.

At this point in the presentation, I will ask if the employees have any
questions regarding the correct floor cleaning procedure. After answering
any questions, I will give the participants the post-test. After the
employees have completed the test I will collect them and go over the
answers.

Closure The presentation will be ended with a summary of key points and
encouraging the participants to use the correct procedure when cleaning
the floors. I will then answer any last questions and thank the participants
for their involvement and for coming.

Informal Assessment Informal assessment will take place throughout the presentation. This will
take place through questions on why the employees think it is important
to wash floors, how often they have to wash floors and how often they see
unclean floors that need to be washed.
Formal Assessment Formal assessment will take place in the form of a small post-quiz
following the presentation on the correct floor cleaning procedure.

VI. Outcome of Lesson

Overall, the lesson went well and there ended up being 17 participants. Cleaning the floors is a

fairly simple topic, but it needed to be reviewed as it is an issue in the department. The lesson did end up

having to be a rushed; I was only given about seven minutes to complete the entire session during the

daily morning huddle. However, I think that was enough time to cover the topic thoroughly enough for

the participants to fully understand the topic.

In terms of motivation, I think bringing up the safety awards helped to engage the participants in

the discussion more. Additionally, discussing the prevention of injuries and employees calling out of

work helped to improve their attention to the lesson.

The quiz had to be taken very quickly at the end, so many employees ended up working together

and talking through the quiz aloud. However, every participant scored a 100%; meaning they should be

able to effectively clean the floors now. Every goal and objective was met from the inservice training.

The staff asked a few questions at the end about proper mopping posture and about having to

move objects to sweep which I was able to answer correctly. I think the lesson on the proper procedure for

cleaning floors was a good refresher for the staff, and the department head was happy that we went over it

in a friendly and positive manner.
