inflouruntilapasteforms.Veryslowlydrizzleinmilk,
whiskingthewholetimetokeepthemixturesmooth.Add
nutmeg,saltandpepperandcook,stirring,untilmixturehas
simmeredforacoupleminutes.Itwillbethickandget
thickerasitcoolsthismakesforabetterspread.Scrape
intoabowlandstirinDijon.Adjustseasoningsifneeded.
Setaside.

Heatoven:To425degreesF.Lineyourlargestbakingsheet
withfoil.Cookthemushrooms:Wipeoutskilletandheat
overmediumhigh.Addaglugofoliveoiloramixofoliveoil
andbutter.Onceitisveryhot,add1/3to1/2ofmushrooms,
1/3to1/2ofherbsandletsearinpanuntilbrown
underneath,about2to3minutes,beforestirringand
continuingtocookuntiltenderandanyliquidinthepanhas
cookedoff,about5minutes.Seasonwellwithsaltand
pepper.Repeatwithremainingmushrooms.
