This salad can be made ahead of time to make your
dinner preparations easier. salt/pepper

PROCEDURE:
1. Preheat oven to 425F. Meanwhile, wash the kale then
tear the spines of the kale out..

2. Next, coat the walnuts in a minimal amount (dash) of olive oil


then add salt and mix together until combined. Toast in oven
for about 4 minutes or until the walnuts are brown.

You made need to move the walnuts around while toasting


to create even browning across each walnut.

3. Finally, whisk together the lemon juice, olive oil, Parmesan cheese,
salt and pepper. Once these are combined, mix the kale with the
dressing in a large bowl and allow it to marinate for as long as
possible, at least two hours. This tenderizes the tough leaves.
Then combine with the walnuts and cranberries before serving.
