Valuable experience can study in japan because it is one of my dream. learning and sharing both of cultures we can communicate and understanding by each other. Gaining knowledge about their high technology for research. Learning Positive things such as discipline, hardworking and willing to learn in there and reapplying it in my country so that Indonesia becomes better and more developed. And my favorite thing is I can learn more about their language in japan because I like japanesse language. With those explanations above, I am sure that I am suitable to be candidate for PARE Program. I hope for the admission committee can cosider my application. Thesis title (tentative) :Antioxidant activity effect of bioactive peptide from enzimatic hydrolysate of Thunnus sp. by-product
Brief Explanation about your thesis:
Human body needs oxygen to stay alive. However, oxygen is also potentially damage body cells due to the oxidation process. The oxidation process will release free radicals that have damage effects on cells. According to the Umayyad and Amron (2007) free radicals are molecules with one or more unpaired electrons that cause free radicals become very reactive to find a partner by binding electrons in a molecule that is around. Antioxidants are substance that interact with and neutralize free radicals, thus preventing them from causing damage. Synthetic antioxidants such as Butylated Hydroxyanisole (BHA) and Butylated Hydroxy toluena (BHT) have stronger antioxidant activity than natural antioxidant such as -tocopherol and ascorbic acid, but its use has begun to be restricted because of the chemical components in synthetic antioxidants capable of inducing DNA damage and cause toxicity (Ito et al. 1986). Therefore, there is a growing interest to identify antioxidative properties in many natural sources including some dietary protein compounds. Fish and its by- products represents as a rich source of nutrients of fundamental importance for health diets such as protein and micronutrients including vitamins, minerals and polyunsaturated fatty acid. Fish protein hydrolysates have been identified as the rich source of bioactive peptides with valuable pharmaceutical potentials. Recent years, studies on bioactive peptides have received much attention in worldwide because of their health benefits. According to Bougatef et al. (2010) peptides hydrolysate from Sardinella aurita can exhibit antioxidant activity. Thunnus sp. and its by-product is the potential raw material to be used as a peptide hydrolyzate that act as antioxidants because it has a high protein content and is thought to have natural antioxidant components. In addition, the availability of by-product of Thunnus sp. in Indonesia is relatively abundant and research that lead to the use of a protein hydrolyzate that are antioxidants is still rarely done. Based on the description above, it is necessary to study for observing antioxidant activity of protein hydrolysates Thunnus sp. by-product. The objectives of this thesis is obtaining and identifying hydrolyzate peptide Thunnus sp. are hydrolyzed enzymatically wich has antioxidant properties. This research was conducted in several stages, the characterization of raw materials, the production of Thunnus sp. by-product protein hydrolyzate, the determination of -amino nitrogen content of the free, the degree of hydrolysis, antioxidant activity test, and characterization of protein hydrolyzate containing the highest antioxidant activity.
