The capital city history is mirrored in the traditional

neighborhoods and historic buildings that bid the
traveler to partake of its glorious past.

To get to know at least a sprig of the capitals his-

tory, you ought to venture back to pre-Hispanic
times, when Bogot was minute. These times are
eloquently evoked today with the beautiful ob-
jects still standing as heavenly gifts in churches,
museums and mansions, dainty symbols of the
nations past.

One of them is undoubtedly the Gold Museum,

This particular condition rests on the fact that na-

ture decided that small streams descending from
the hills get lost in the Sabana, forming wide-
spread wetlands or water reservoirs in the form of
lagoons, abounding in plant life. Those creeks not
trapped here make their way toward the Bogot
River; and the brooks that survived the voracious
sprawl and the cementing over of the Plains were
conducted into channels to serve today as rainwa-
ter collectors.

Despite this atypical setting, Bogot teems with

a wide assortment of trees in the midst of a
luscious, green Sabana . Recent city administra-
tions have made every effort to recover green
spaces so they can be accessible to all. Today,
amid the apparent chaos, it is gratifying to un-

sive recreation.

For starters, the true heart of the city is vast Simn

Next are the lovely North end parks: the Vir-

These places, far beyond their recreational ap-

by the magnificently tailored pathways.

The downtown parks are tinted in a myriad of

with the soul of a poet. Dishes, ingredients, their way
of cooking, preparing and presenting, work much bet-
ter in verse than in prose. Insomuch as only poets can
write poetry, lets get down to the basics and describe
in simple words how good it is to eat in Bogot.

Colombian Delicacies
Lets start with the typical Colombian bite-size
pastries, which are referred to in Bogot as gal-
gueras. According to the cachacos (as the capital
folk are called), these are center table at the after-
noon coffee time, which until very recently took
place in peoples homes.

Theres the Santaf hot cocoa: a steaming cup of de-

licious milk chocolate, which comes with pandebono,
almojbana, pan-dequeso, pandeyuca (an assort-
ment of corn and yucca shortbreads) and farmers
cheese. These culinary delights are only found in Co-
lombia, specifically in the capital.

Try a different main course every day. Start with

the lord of the table: Ajiaco, a thick chicken soup
made with five different kinds of potatoes, sea-
soned with local guasca herbs and served with
capers and cream. Have a go at a Tolima tamal
(rice mixed with spiced meat and peas, wrapped in
banana leaves and slow-cooked). Allow a Santaf
stew (made with meat and tubers typical of the
high Andean zone) blow you away.
La Fragata Fish Market

And since theres always room for the best desserts,

enjoy brevas con arequipe (figs with caramel spread),
baked milk dessert, skim dessert, rice pudding, sour-
sop meringue, or a curdled milk dessert... All are as
genuine as Bogots Monserrate Hill, which shelters
the Casa Santa Clara restaurant. This delightful rec-
ommendation for grilled dishes and the most typical
Bogot cuisine is nestled within the charming ambi-
ance of an old manor that was physically transferred
from Usaqun to these heights. The appetizing San-
taf buffet stays in tourists and locals memory, be-
cause of its pleasant environment up in the Andean
highlands and its stunning view of the city.

dalupe halls are ideal for conventions, given their
ample capabilities and state of the high technology.

Then there is Tramonti Restaurant, Bar & Conven-

tion Center on the road to La Calera. Its breath-
taking facilities bring to mind Northern Italy, fea-
turing ample rooms, green areas and an imposing
mountain from where activities such as experi-
ential learning take place. It is ideal for business
meetings such as large or small conferences, con-
ventions and business meetings, thanks in part to
the rooms layouts, excellent cuisine.

However, if your option is to carry out an extremely

private and elegant corporate event, the choice is As-

trict, and with a flair for modern, chic and cozy decor,
this restaurant showcases the best in Peruvian food.

Should you wish to host an event on the outskirts

of the city, nothing rivals the service offered by El Courtesy Tequendama Hotel

Prtico Restaurant, on kilometer 19 of the North

rooms, even feature a bullring. El Prtico wel-
comes a wide range of events.

To round off the tender of recommended events

centers, we come across Cafam Floresta Conven-
tion Center, bearing an auditorium for 500 peo-
ple, divisible into five rooms, a modular class-
room for small meetings seating up to 60 people,
five board rooms, a business center and a bar.
It comes with a dining room that can accommo-
date over 400 people, and the center is equipped
with a modern infrastructure and state of the art
technology, offering a flexible and comfortable
development of events.

Along those lines, we come across the Roberto

Arias Prez Colsubsidio Theater, a progressive
center seating 994. This theater is an optimal
setting for business events, as well as for per-
formances such as the opera and the symphony
orchestra seasons. It also presents musicals.
