Makes 30 Truffles
INGREDIENTS:
1/3 cup heavy whipping cream
6 tablespoons unsalted butter, cut into small pieces
1 cups chocolate chips
Unsweetened cocoa, cut nuts, and coconut flakes
DIRECTIONS:
In a small saucepan, bring the cream to a simmer.
Add the butter and stir until melted.
Add the chocolate chips. Stir until completely melted and smooth.
Remove from the heat and pour into a shallow bowl.
Cool, cover, and refrigerate the mixture until firm, at least 2 hours.
Using a small spoon, roll the mixture into small balls.
Roll the balls in the cocoa, nuts, and coconut.
Chocolate-Banana Muffins
Makes 12-14 muffins
INGREDIENTS:
1 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
teaspoon salt
3 large bananas, mashed
cup white sugar
1 egg
1/3 cup butter, melted; OR 3 tablespoons olive oil
cup chocolate chips
1 teaspoon vanilla extract (optional)
cup cut walnuts (optional)
A little bit of cinnamon (optional)
DIRECTIONS:
1. Preheat the oven to 175C. Put muffin papers in a muffin pan.
2. Sift together the flour, baking powder, baking soda, and salt (and
cinnamon, if using); set aside.
3. Combine bananas, sugar, egg, and melted butter (or olive oil) in a large
bowl (and walnuts and vanilla extract, if using).
4. Add flour mixture and mix until smooth but DO NOT OVERMIX!
5. Put mixture into muffin pan.
6. Bake in preheated oven between 20-25 minutes.
7. Cool in pan on a wire rack for about 5 minutes then take out the muffins
and cool completely on a wire rack.
