Ingredients:
6 slice bacon
3 tsp. salt
1 c. sour cream
lb. butter
4 scallions
Directions:
1. In a medium skillet, cook the bacon until crisp.
2. Peel, rinse, and slice the potatoes into thirds, and then place them in enough
water to cover them completely. Add 2 tsp. of salt at this point, saving the
rest for later.
3. Bring to a boil, and then let simmer until soft, or about 45 minutes. Drain the
potatoes, discarding the water, then mash them into chunks. Melt the sour
cream and butter into the potatoes.
4. Add the milk, remaining salt, and pepper into the mix, and bring the soup
back to a simmer. Simmer until desired thickness.
5. Pour into bowls, and garnish with cheese, scallions, and bacon.
Chefs Thoughts:
This was one of my favorite recipes to make, mainly because it tasted
amazing! The garnish was a nice touch, and there was just the right amount
of everything.
